Food processing machinery - Tenderizing machines - Safety and hygiene requirements
This document applies to tenderizing machines that are designed as table-top machines and are manually fed (hereinafter referred to as machine).
Usually these machines are used for unfrozen foodstuffs (hereinafter referred to as product), e.g. boneless meat, meat products, fish, cheese or vegetables.
These machines are not intended to be used with deep frozen foodstuffs.
This document is not applicable to:
- machines intended for domestic use;
- machines with automatic loading.
This document deals with all significant hazards, hazardous situations or hazardous events on tenderizing machines, when it is used as intended and under conditions of misuse which are reasonably foreseeable by the manufacturer.
This document deals with the hazards which can arise during all the lifetime of the machine, including the phases of transport, assembly, commissioning, operation, cleaning, use, maintenance, decommissioning, dismantling, disabling and scrapping of the machine.
This document is not applicable to machines which are manufactured before its date of publication as EN.

Dieses Dokument gilt für Mürbeschneidemaschinen, die als Tischmaschinen konstruiert sind und manuell beschickt werden (im weiteren Verlauf als Maschine bezeichnet).
Diese Maschinen werden üblicherweise für nicht-gefrorene Lebensmittel (im weiteren Verlauf als Produkt bezeichnet) wie etwa Fleisch ohne Knochen, Fleischprodukte, Fisch, Käse oder Gemüse verwendet.

Dieses Dokument behandelt die Gefährdungen, die während der gesamten Lebensdauer der Maschinen einschließlich der Phasen des Transports, des Zusammenbaus, der Inbetriebnahme, des Betriebs, der Reinigung, der Nutzung, der Instandhaltung, der Außerbetriebnahme, der Demontage, der Deaktivierung und der Entsorgung der Maschine auftreten können.
Dieses Dokument gilt nicht für Maschinen, die vor dem Datum seiner Veröffentlichung als EN hergestellt wurden.

Le présent document s’applique aux machines à attendrir conçues comme machines de tables avec introduction manuelle (ci-après désignées comme machine).
Ces machines sont généralement utilisées pour des denrées alimentaires non congelées (ci-après désignées comme produits), par exemple, des viandes désossées, des produits carnés, du poisson, du fromage ou des légumes.
Ces machines ne sont pas destinées à être utilisées avec des denrées alimentaires surgelés.
Le présent document ne s'applique pas aux :
- machines à usage domestique ;
- machines à chargement automatique.
Le présent document traite tous les phénomènes dangereux, situations dangereuses ou événements dangereux significatifs pour les machines à attendrir lorsqu'elles sont utilisées normalement et dans les conditions de mauvais usage raisonnablement prévisible par le fabricant.
Le présent document traite de tous les phénomènes dangereux susceptibles de se produire pendant la durée de vie de la machine, incluant les étapes de transport, d’assemblage, de mise en service, de fonctionnement, de nettoyage, d’utilisation, de maintenance, de mise hors service, de démontage, de désassemblage et de mise au rebut de la machine.
Le présent document ne s'applique pas aux machines fabriquées avant sa date de publication sous forme de Norme européenne.

Introduction
This document is a type-C standard as stated in EN ISO 12100:2010.
The machinery concerned and the extent to which hazards, hazardous situations and hazardous events
are covered are indicated in the scope of this document.
When provisions of this type-C-standard are different from those which are stated in type-A- or -B-
standards, the provisions of this type-C-standard take precedence over the provisions of the other
standards, for machines that have been designed and built according to the provisions of this type-C-
standard.
