Overview

EN ISO 8442-9:2018 - Materials and articles in contact with foodstuffs: Cutlery and table holloware - Part 9: Requirements for ceramic knives (ISO 8442-9:2018) defines material, construction and performance requirements and associated test methods for ceramic blades intended for food preparation. The standard is part of the ISO 8442 series and is endorsed by CEN for use across Europe.

Key topics and technical requirements

  • Scope: Applies to ceramic blades of knives for food preparation; covers materials, construction, performance and safety instructions.
  • Materials & construction: Blades must enable compliance with performance requirements; handle strength and attachment follow ISO 8442-1.
  • Porosity: Maximum porosity ≤ 1.5 %; largest projected pore diameter ≤ 25 µm; no observable inclusion/structure defects (see Annex A metallography).
  • Surface integrity: No cracks, pores or visible defects after penetrant testing (ISO 3452-1).
  • Cutting edge geometry: Included angle ≤ 40°; edge thickness ≤ 0.46 mm measured 1 mm from the edge (with measurement position specified).
  • Hardness: Vickers hardness ≥ 1 100 HV3; measurements at specified trisection points on the blade (ISO 14705).
  • Sharpness & edge retention: Sharpness parameter z ≥ 60 mm; edge retention z ≥ 300 mm (test per ISO 8442-5).
  • Impact resistance: Visual no-chipping requirement after impact testing using a Leeb-type impact device (ISO 16859-1); test points and procedure specified.
  • Coating/print bonding strength: Abrasion test using P180 abrasive pad; coating/printing must not expose substrate or delaminate.
  • Durability tests: Dishwasher safety (EN 12875-1) and thermal shock resistance (EN 1183) requirements and methods are included.
  • Safety: Requirements to avoid defects that could cause injury (e.g., burrs, deep scratches, deformation).

Applications and who uses it

  • Manufacturers & designers: Specify materials, blade geometry and manufacturing tolerances to meet compliance and performance claims.
  • Quality control & testing laboratories: Implement the defined test methods (hardness, sharpness, impact, bonding) for product validation, incoming inspection and batch release.
  • Regulatory and procurement teams: Use the standard as a reference for conformity, food-contact safety and purchase specifications for ceramic kitchen knives.
  • Retailers & importers: Verify product claims and ensure consumer safety and durability.
  • R&D: Guide materials selection and process development for advanced ceramic blades.

Related standards

  • ISO 8442-1 (cutlery requirements)
  • ISO 8442-5 (sharpness and edge retention test)
  • ISO 14705 (hardness test for monolithic ceramics)
  • ISO 3452-1 (penetrant testing)
  • EN 12875-1 (dishwashing resistance)

Foreword
ISO (the International Organization for Standardization) is a worldwide federation of national standards
bodies (ISO member bodies). The work of preparing International Standards is normally carried out
through ISO technical committees. Each member body interested in a subject for which a technical
committee has been established has the right to be represented on that committee. International
organizations, governmental and non-governmental, in liaison with ISO, also take part in the work.
ISO collaborates closely with the International Electrotechnical Commission (IEC) on all matters of
electrotechnical standardization.
The procedures used to develop this document and those intended for its further maintenance are
described in the ISO/IEC Directives, Part 1. In particular the different approval criteria needed for the
different types of ISO documents should be noted. This document was drafted in acco
