Food processing machinery - Mixing machines - Safety and hygiene requirements
1.1 This European Standard specifies safety and hygiene requirements to minimise the hazards which can arise during the commissioning, the use and the maintenance of mixing machines and their accessories intended to be used in sausage kitchens and industrial operations.
This European Standard deals with all significant hazards, hazardous situations and events relevant to mixing machines, when they are used !as intended and under conditions of misuse which are reasonably foreseeable by the manufacturer (see Clause 4)".
This European standard is not applicable to mixing machines which are manufactured before the date of publication of this European Standard by CEN.
1.2 This European Standard covers the following types of mixing machines:
- Mixing machines with a tilting container, one or several mixing shafts
- Mixing machines with a stationary mixing container, front face or bottom discharge opening
- Mixing machines with a container and loading device
- Mixing machines with a container, mixing shaft(s), screw conveyor and loading device
The mixing machines are constructed of a machine frame, a trough-shaped mixing container, one or several mixing shafts, an associated drive and electrical, hydraulic and pneumatic components, depending on machine type.
The mixing shaft can be equipped with wings, screws, rods, paddles or the like.
Mixing machines may be equipped e. g. with
- cover over the top of the mixing container,
- pipe connections for gases, steam, water or vacuum,
- protective hood over the front face discharge opening,
- lifting devices for mixing shaft,
- loading device,
- screw conveyor at the discharge opening.

1.3 Intended use
The fresh or frozen meat, meat product, meat pieces or fish, salt, spices and other additives are loaded into the mixing container by hand or by means of a loa

1.1 Diese Europäische Norm behandelt Sicherheits- und Hygieneanforderungen zur Minimierung von Gefährdungen, die auftreten können während der Aufstellung, des Gebrauchs und der Wartung von Mischmaschinen und deren Zubehör, wenn sie in Wurstküchen und Industriebetrieben benutzt werden.
Diese Europäische Norm behandelt alle signifikanten Gefährdungen, gefährlichen Situationen und Ereignisse bezüglich Mischmaschinen, !wenn sie bestimmungsgemäß und unter Bedingungen von durch den Hersteller vernünftigerweise vorhersehbaren Fehlanwendungen verwendet werden (siehe Abschnitt 4)".
Diese Europäische Norm ist nicht anwendbar auf Mischmaschinen, die vor dem Ausgabedatum dieses Dokuments durch CEN hergestellt wurden.
1.2 Diese Europäische Norm umfasst folgende Bauarten von Mischmaschinen:
- Mischmaschinen mit kippbarem Behälter, einer oder mehreren Mischwellen;
- Mischmaschinen mit feststehendem Behälter, Auslauföffnung in der Stirnseite oder im Boden;
- Mischmaschinen mit Behälter und Beschickungseinrichtung;
- Mischmaschinen mit Behälter, Mischwelle(n), Transportschnecke und Beschickungseinrichtung.
Die Mischmaschinen bestehen aus Maschinenständer, trogförmigem Mischbehälter, einer oder mehreren Mischwellen, zugehörigem Antrieb und elektrischen, hydraulischen und pneumatischen Komponenten, abhängig von der Maschinenart.
Die Mischwelle kann mit Flügeln, Schnecken, Stangen, Paddeln oder dergleichen ausgestattet sein.
Mischmaschinen dürfen ausgerüstet sein z. B. mit
- Deckel an der Mischbehälteröffnung,
- Anschlüssen für Gase, Dampf, Wasser oder Vakuum,
- Schutzhaube an der stirnseitigen Auslauföffnung,
- Hebeeinrichtung für Mischwelle,
- Beschickungseinrichtung,
- Schneckenförderer an der Auslauföffnung.

1.1 La présente Norme européenne spécifie les prescriptions relatives à la sécurité et l’hygiène pour minimiser les phénomènes dangereux qui peuvent survenir durant la mise en service, l’utilisation et la maintenance des malaxeurs et de leurs accessoires destinés à être utilisés dans les charcuteries et les entreprises industrielles.
La présente Norme européenne traite tous les phénomènes dangereux significatifs, les situations et les événements dangereux associés aux malaxeurs, !lorsqu’ils sont utilisés normalement et dans les conditions de mauvaise utilisation raisonnablement prévisibles par le fabricant (voir Article 4)".
La présente Norme européenne ne s’applique pas aux malaxeurs fabriqués avant la date de publication de la présente Norme européenne par le CEN.
1.2 La présente Norme européenne concerne les types de malaxeurs suivants :
- malaxeurs avec cuve basculante, un ou plusieurs arbres mélangeurs ;
- malaxeurs avec cuve mélangeuse fixe, orifice d’évacuation frontal ou inférieur ;
- malaxeurs avec cuve et système de chargement ;
- malaxeurs avec cuve, arbre(s) mélangeur(s), vis transporteuse et système de chargement.
Les malaxeurs sont composés d’un bâti, une cuve mélangeuse en forme d’auge, un ou plusieurs arbres mélangeurs, un système d’entraînement associé et des composants électriques, hydrauliques et pneumatiques en fonction du type de machine.
L’arbre mélangeur peut être équipé de pales, de vis, de tiges, d’aubes ou composants équivalents.
Les malaxeurs peuvent être équipés par exemple :
- d’un couvercle sur le haut de la cuve mélangeuse ;
- de raccords pour les gaz, la vapeur, l’eau ou le vide ;
- d’un capot de protection sur l’orifice d’évacuation frontal ;
- de dispositifs de levage pour l'arbre mélangeur ;
- d’un système de chargement ;
- d’un convoyeur à vis au niveau de l’orifice d’évacuation.

Ta evropski standard določa varnostne in higienske zahteve za zmanjševanje nevarnosti, ki lahko nastanejo med zagonom, uporabo in vzdrževanjem mešalnih strojev in njihovega pribora, ki so namenjeni za uporabo v kuhinjah za izdelavo klobas in industrijskih operacijah. Ta evropski standard obravnava velike nevarnosti, nevarne situacije in primere, ki se nanašajo na mešalne stroje, kadar se uporabljajo !kot predvideno in pod pogoji napačne uporabe, ki jih razumno predvidi proizvajalec. Ta evropski standard ne velja za mešalne stroje, ki so proizvedeni pred datumom, ko je CEN objavil ta evropski standard. Ta evropski standard zajema naslednje vrste mešalnih strojev: - mešalni stroji z nagibno posodo, eno ali več mešal; – mešalni stroji s stacionarno mešalno posodo, odprtina na sprednji strani ali na dnu; – mešalni stroji s posodo in napravo za polnjenje; – mešalni stroji s posodo, mešalom ali mešali, vijačnim transporterjem in napravo za polnjenje. Mešalni stroji so zgrajeni iz ogrodja stroja, mešalne posode v obliki korita, enega ali več mešal, pripadajočega pogona in električnih, hidravličnih in pnevmatskih sestavnih delov, glede na vrsto stroja. Mešalo ima lahko krilca, vijake, palice, pedala ali podobno. Mešalni stroji so lahko opremljeni npr. s/z – pokrovom čez vrh mešalne posode, - cevnimi priključki za pline, paro, vodo ali vakuum, varovalnim okrovom čez odprtino za odvajanje na sprednji strani, - napravami za dvigovanje mešala, - napravo za polnjenje, - vijačnim transporterjem na odprtini za odvajanje.

The discharge outlet may be located at the bottom or the front face and can either be a slide, a flap, a pipe, a pump or a screw. During the production of this standard the following assumptions were made: Mixing machines are installed at a sufficiently lighted place. They are used only by designated and skilled operators. Although it should be advised against, the standard, taking into account practice, deals with the hazards due to cleaning with pressurised water. 2 Normative references The following referenced documents are indispensable for the application of this document.
