Overview
EN ISO 660:2020 - "Animal and vegetable fats and oils - Determination of acid value and acidity" (CEN adoption of ISO 660:2020) specifies standardized laboratory procedures to measure the acid value and acidity of fats and oils. The document defines three analytical methods (two titrimetric and one potentiometric) for refined and crude vegetable and animal fats and oils, including soapstock and technical fatty acids. Waxes and milk/milk‑derived fats are excluded. Results are reported preferably as acid value (mg KOH/g) or alternatively as acidity (percent free fatty acids, conventionally as oleic acid).
Key topics and technical requirements
- Methods specified
- Two titrimetric methods (cold solvent with indicator; hot ethanol with indicator).
- One potentiometric titration (cold solvent) - potentiometric method included as a reference.
- Scope and limitations
- Applicable to refined and crude animal/vegetable fats and oils and soapstock; does not apply to waxes or milk fats.
- Methods are non‑specific: they measure total acidity and cannot distinguish free fatty acids from mineral or other organic acids (acid value therefore includes any mineral acid present).
- Reagents and solvents
- Solvent mixture typically ethanol (≈96%) and diethyl ether (peroxide‑free) or approved alternatives (e.g., tert‑butyl methyl ether, toluene); neutralization before titration is required.
- Standard NaOH or KOH solutions (ethanolic or methanolic) with known concentration are used as titrants.
- Indicators and safety
- Colour indicators: thymolphthalein or Alkali Blue 6B preferred; phenolphthalein may only be used if no alternative is available (phenolphthalein has CMR classification).
- Apparatus, sampling and precision
- References to ISO laboratory glassware standards (ISO 385, ISO 1042), sample preparation (ISO 661) and water quality (ISO 3696).

The EN ISO 660:2020 standard provides a comprehensive framework for the determination of acid value and acidity in animal and vegetable fats and oils. By specifying three distinct methods-two titrimetric and one potentiometric-this document caters to diverse analytical needs in the food industry. Its strengths lie in the robustness of the methodologies provided, ensuring reliable results for both refined and crude fats. One of the key advantages of this standard is its applicability to a wide range of substances, including not only vegetable and animal fats but also soap stock fatty acids and technical fatty acids. This broad scope enhances its relevance in various industrial applications, making it a crucial reference for professionals working with fats and oils. However, it is worth noting that the standard does not extend to waxes, which could limit its applicability in certain contexts. The standard emphasizes the measurement of acidity either as acid value or tacitly through conventional acidity calculations. This flexibility allows users to select the most appropriate method for their specific requirements. Moreover, the non-specific nature of the methods is highlighted, underscoring that the acid value determination does not differentiate among various types of acids, including mineral and organic acids. Consequently, this standard can effectively encompass all components contributing to acidity, which is particularly beneficial for thorough quality assessments. Nonetheless, the standard clearly delineates its exclusions, such as milk and milk-derived fats, which could be a limitation for sectors that require analysis in those areas. Overall, the EN ISO 660:2020 serves as a foundational document that enhances the integrity and accuracy of acidity determinations in the fats and oils industry, making it a critical tool for professionals dedicated to maintaining quality and compliance in their products.
