Overview
EN 203-2-10:2007 is a European Standard developed by CEN that specifies specific safety and energy efficiency requirements for gas heated chargrills used in catering. This standard complements the general safety rules outlined in EN 203-1:2005 by detailing construction, operational, and testing criteria unique to chargrills operated with gaseous fuels. Its primary goal is to ensure safe operation, protection against fire hazards, and energy-conscious use within professional gas-powered chargrilling equipment. The standard applies across many European countries where compliance with EU Directive 90/396/EEC is mandatory.
Key Topics
Scope and Application
Defines essential requirements for the design, operation, and testing of gas-fired chargrills, emphasizing safety and energy use. It covers appliances mainly used to roast food by radiant heat and convection, often employing a bed of lava stones or other refractory materials beneath a cooking grid.Safety Requirements
- Protection against fire hazards including a receptacle for cooking liquids and fats with a temperature limit below 200 °C to prevent ignition.
- Burners and radiant materials must be shielded from food spillage with easy access for cleaning.
- Control knobs, handles, and vertical panels are designed to minimize risk and are considered as working surfaces in safety considerations.
Construction and Testing Protocols
- Appliances must facilitate safe drainage or removal of cooking residues to reduce fire risks.
- Testing includes combustion product sampling near the cooking grid and burner, and temperature measurement of liquid fat receptacles using prescribed methods.
- Chargrills employing lava stones or similar materials require specific cleaning and maintenance instructions to prevent blockages or poor combustion.
Energy Rationalization
Although specific clauses relating to energy efficiency are limited due to the unique cooking mode of chargrills, the standard encourages the rational use of energy consistent with safe and effective operation.Documentation and Instructions
Manufacturers must provide clear usage and maintenance instructions emphasizing the importance of cleaning grease buildup, proper loading of refractory materials, and regular burner inspection to maintain safety and efficiency.
Applications
EN 203-2-10:2007 is relevant for manufacturers, suppliers, and users of gas-powered chargrills in commercial kitchens, catering services, and large-scale food preparation environments. It guides:
- Design engineers and appliance manufacturers to ensure their chargrills meet European safety and operational standards.
- Catering establishments and commercial kitchens to select equipment that complies with legal safety mandates and supports reliable daily use.
- Testing and certification bodies utilizing the testing methodologies described to verify that chargrills meet performance and safety criteria.
- Maintenance teams to follow recommended cleaning and operation procedures to avoid fire hazards and maintain appliance longevity.
