This document applies to tenderizing machines that are designed as table-top machines and are manually fed (hereinafter referred to as machine).
Usually these machines are used for unfrozen foodstuffs (hereinafter referred to as product), e.g. boneless meat, meat products, fish, cheese or vegetables.
These machines are not intended to be used with deep frozen foodstuffs.
This document is not applicable to:
-   machines intended for domestic use;
-   machines with automatic loading.
This document deals with all significant hazards, hazardous situations or hazardous events on tenderizing machines, when it is used as intended and under conditions of misuse which are reasonably foreseeable by the manufacturer.
This document deals with the hazards which can arise during all the lifetime of the machine, including the phases of transport, assembly, commissioning, operation, cleaning, use, maintenance, decommissioning, dismantling, disabling and scrapping of the machine.
This document is not applicable to machines which are manufactured before its date of publication as EN.

Introduction
This document is a type-C standard as stated in EN ISO 12100:2010.

The machinery concerned and the extent to which hazards, hazardous situations and hazardous events

are covered are indicated in the scope of this document.

When provisions of this type-C-standard are different from those which are stated in type-A- or -B-

standards, the provisions of this type-C-standard take precedence over the provisions of the other

standards, for machines that have been designed and built according to the provisions of this type-C-

1 Scope

This document applies to tenderizing machines that are designed as table-top machines and are manually

3 Terms and definitions
3.1 Terms

For the purposes of this document, the terms and definitions given in EN ISO 12100:2010 and the

following apply.

3.2 Description

The machines described in this standard consist mainly of a machine frame and rollers, depending on the

different functions. An example of a machine is shown in Figure 1.

4 Safety requirements and/or measures
4.1 General

Machines shall comply with the safety requirements and/or protective measures of this clause.

In addition, the machine shall be designed according to the principles of EN ISO 12100:2010 for the

hazards relevant but not significant, which are not covered in this document.

Where the means of reducing the risk is by the physical arrangement or positioning of the installed

machines the manufacturer shall include in the Information for use a reference to the reduction means

to be provided, and to any limiting value of the requirement, and, if appropriate, to the means of

verification.

The safety related parts of the control system shall present at least a performance level “c” in accordance

with EN ISO 13849-1:2015.
Figure 2 shows the significant danger zones of a machine.

4.2 Mechanical hazards
4.2.1 General

Machines shall be designed and constructed in accordance with the requirements mentioned below.

The sensor part of interlocking devices shall comply with EN ISO 14119:2013 and be integrated into the

machine housing in order to:
— fulfil hygiene requirements;
— be protected against mechanical damages;
— be protected against the effects of cleaning and disinfection materials;
— be protected against the effects of cleaning liquids (water);
— be protected against evading or tampering by simple methods.

In the information for use the manufacturer shall give information on the verification of the interlocking

device.
4.2.2 Infeed area – Zone 1

The infeed chute shall be removable and interlocked. When the infeed chute is not in place an interlocking

device shall prevent the machine to start or the transmission elements between the drive unit and the

rollers shall be disconnected.

After the interlocking device has been activated, the stopping time of the rollers (without product

loading) shall be ≤ 4 s.

The infeed hood shall meet the following dimensions (see Figure 3):

— the breadth of the infeed opening shall be B ≤ 30 mm, and the design of the infeed chute shall be stiff

to avoid the enlargement of the breadth of ∆B ≤ 2 mm during normal operation;

— the distance from the point of smallest width B to the trapping point between the roller shall be

L ≥ 200 mm.

During manual feeding, a pusher (see Figure 4) may be provided to assist in pushing the product against

the roller.
The pusher shall meet the following dimensions (see Figure 4):
— the breadth shall be B > 32 mm;
— the length shall be L < L ;

4.2.3 Processing area – Zone 2
During operation access to the rollers shall be restricted.
The rollers shall be mounted:
— directly in the machine housing or

— in a roller set which is inserted into the machine housing, whereby the rollers shall be enclosed by a

guard casing except for the infeed and outlet opening (see Figure 5).

On the infeed opening, a product guide (see Figure 3) shall be provided to close the gap between the

rollers and the infeed chute except for the infeed opening.

On the outlet opening, a discharge comb (see Figure 3) shall be provided to close the gap between the

rollers and the machine housing and/or guard casing except for the outlet opening.

With the exception of the infeed and outlet opening, the gaps around the product guide and the discharge

comb shall be in accordance with EN ISO 13857:2019.

With the exception of the infeed and outlet opening, all openings in the product guide, discharge comb,

roller set and/or machine housing shall be in accordance with EN ISO 13857:2019.

The weight of the roller or roller set shall be ≤ 15 kg. If the weight of a roller or roller set is > 15 kg an

additional handling aid shall be provided.

The instruction manual shall give advice on how to change the roller or roller set in a save manner (e.g.

gloves).

4.2.4 Outlet area – Zone 3

The distance from the point where the discharge comb reaches the roller to the outlet opening of the

machine shall be:
— L ≥ 40 mm for rollers with single direction of rotation, or;
— L ≥ 200 mm for rollers with reversible direction of rotation.
Between the discharge comps and the roller shall be an angle α ≥ 90°.

In the instruction handbook shall be included that the machine may only be operated with discharge

comps.
4.2.5 Drive system – Zone 4

Access to danger zones on the drive system shall be prevented. This may be achieved e.g. by the following

measures:

Guards (protective cover over casing) in accordance with EN ISO 14120:2015, shall be provided on the

drive mechanism. The protective covers may be fixed or movable and interlocked.

If protective covers are movable, e.g. for changing the operating process or for the purpose of cleaning,

they shall be interlocked.

4.3 Electrical hazards
4.3.1 General

The electrical equipment shall comply with EN 60204-1:2018. Additionally, the electrical equipment shall

meet the following requirements.
4.3.2 Emergency stop device

In general machines does not need an emergency stop device. In this case the usual OFF-switch shall be

easily reachable from the operator position.
4.3.3 Protection against water ingress
4.3.3.1 IP degrees of protection

Electrical operating components shall comply with the following degrees of protection in accordance with

EN 60529:1991 :
— IP X3 External electrical operating components:
— on the machine;
— on the control box on the machine;
— on the control box located in the process room;
— IP X3 Internal electrical operating components:

— in the machine with enclosed housing with the degree of protection IP X3 and open lower

surface. Protection against direct and indirect impact of a water jet shall be ensured;

— IP X2 Internal electrical operating components:

— in a machine with completely enclosed housing with the degree of protection IP X3. Protection

against condensate water shall be provided;
— in the control box enclosure;
— IP X0 Internal electrical operating components

in a machine with completely enclosed housing with the degree of protection IP X3. Protection against

condensate water shall be provided, and the safety of fingers and the back of hand be ensured.

4.3.4 ON- and OFF-switch

Machines shall be provided with ON- and OFF-switches. The switches should be located at the operator’s

side of the machine.

Unintended starting of the machine shall be prevented by the design of the switch.

4.3.5 Safety requirements related to electromagnetic phenomena

The machines shall have sufficient immunity to electromagnetic disturbances to enable them to operate

safely as intended and not fail to danger when exposed to the levels and types of disturbances intended

by the manufacturer.

The manufacturer of the machines shall design, install and wire the equipment and sub-assemblies taking

into account the recommendations of the suppliers of these sub-assemblies.
4.4 Hazards from loss of stability

Machines shall be designed not to roll, slip, or tip over under normal operating conditions, e.g. by the type

of the machine, the position of the point of gravity. The machines can be mobile.

The manufacturer shall give information on installation, e.g. relating to the use of the locking device and

the quality of the floor, in the instruction handbook.

Machines tested in accordance to Table 1 shall not roll, slip or start tilting at their location.

4.5 Noise hazard – noise reduction at the design stage

Noise reduction shall be an integral part of the design process thus taking into account measures at source

as given in EN ISO 11688-1:2009. The success of the applied noise reduction measures is assessed on the

basis of the actual noise emission values (see Annex A) in relation to other machines of the same family.

Normally these machines create an emission noise value L < 70 dB (A).
4.6 Ergonomic requirements

The instruction for use shall give appropriate information how these machines have to be placed in order

to prevent problems of misposture.
4.7 Hygiene and cleaning
4.7.1 General

The machines shall be designed according to EN 1672-2:2005+A1:2009, the conditions mentioned below.

4.7.2 Food area

At least the following components are defined according to EN 1672-2:2005+A1:2009 and regarded as

food area:
— roller and roller set;
— infeed chute (inner and outer surfaces);

— outside of the machine housing, where the outer dimensions are smaller than the container or tray

placed underneath;

— inside of the housing feet, which are above the upper rim of the container or tray;

— if cross contamination can occur operating components (e.g. ON-/OFF-switch, adjusting controls)

shall be considered as food area.
4.7.3 Splash area

At least the following components are defined according to EN 1672-2:2005+A1:2009 and regarded as

splash area:

— outside of the machine housing and housing feet, which are not above the container or tray;

— inside of the housing feet, which are lower than the upper rim of the container or tray.
