This International Standard specifies a set of objective tests for familiarizing assessors with sensory analysis. The test methods specified can be useful to:
a) teach assessors to recognize tastes and to distinguish between them (see Clause 8);
b) teach assessors to know and to familiarize different types of threshold tests (see Clause 9);
c) make assessors aware of their own sensitivity of taste;
d) enable test supervisors to carry out a preliminary categorization of assessors.
The methods can also be used as a periodic monitor of the sensitivity of taste of assessors who are already members of sensory analysis panels.

Ta mednarodni standard določa niz objektivnih preskusov za seznanjanje preskuševalcev s senzorično analizo. Določene preskusne metode so lahko uporabne za:
a) usposabljanje preskuševalcev, da prepoznajo in razlikujejo okuse (glej točko 8);
b) usposabljanje preskuševalcev, da prepoznajo in se seznanijo z različnimi vrstami mejnih preskusov (glej točko 9);
c) ozaveščanje preskuševalcev o občutljivosti njihovega okusa;
d) omogočanje nadzornikom preskusa, da opravijo predhodno kategorizacijo preskuševalcev.
Metode se lahko uporabijo tudi za periodičen nadzor občutljivosti okusa preskuševalcev, ki so že člani panelov za senzorične analize.

1 Область применения
Настоящий международный стандарт устанавливает набор объективных испытаний для знакомства
дегустаторов с органолептическим или сенсорным анализом. Установленные методы испытания могут
быть полезными:
a) при обучении дегустаторов в распознавании вкусов и их различения между собой (см. Раздел 8);
b) при обучении дегустаторов в знании и освоении различных типов определений порога ощущений
(см. Раздел 9);
c) при осознании дегустаторами их собственной чувствительности вкуса;
d) при предоставлении возможности контролерам испытаний проводить предварительную
категоризацию дегустаторов.
Эти методы могут также использоваться в качестве периодического текущего контроля вкусовой
чувствительности дегустаторов, которые уже являются членами группа экспертов по сенсорному
анализу.

4 Принцип
4.1 Идентификация вкусовых ощущений
Эталонные вещества в известном порядке, соответствующие определенным вкусовым ощущениям, в
виде водных растворов заданной концентрации представляются каждому дегустатору. После каждой
дегустации дегустаторы определяют вкусовое ощущение, и их оценки регистрируются.
4.2 Ознакомление с различными типами порога
Для каждого вкусового ощущения каждому дегустатору представляется соответствующее эталонное
вещество в виде ряда разведений с повышающейся концентрацией. После каждой дегустации
результаты регистрируются дегустаторами.
5 Реактивы
ПРЕДУПРЕЖДЕНИЕ ─ Пользователи настоящего международного стандарта должны быть знакомы с
обычной лабораторной практикой. Настоящий международный стандарт не предназначен для решения
всех проблем безопасности (при возникновении), связанных с его применением. Пользователь отвечает
за установление соответствующих безопасных и охраняющих здоровье действий и обеспечение
соответствия с любым национальным регулирующим условием.
5.1 Вода, нейтральная, безвкусная, стоячая и без запаха, желательно известной жесткости.
Для распознавания металлического ощущения используют деминерализованную воду, чтобы избежать

окисления и получить металлическое ощущение. В деминерализованной воде и в воде с низкой
жесткостью (ключевая вода), горький и кислый вкус указывает на низкие пороги распознавания.
Вода, предлагаемая дегустаторам для споласкивания рта должна быть идентична воде, используемой
для приготовления разведений (5.3).
5.2 Основные растворы.
В мерных колбах (6.1) готовят растворы, перечисленные в Таблице 1, из эталонных веществ сортового
пищевого продукта.
5.3 Разведения
Из основных растворов, установленных в Таблице 1, готовят ряд растворов для каждого вкусового
ощущения в соответствии с Таблицей 2.
6 Аппаратура

6.1 Мерные колбы с одной меткой, ISO 1042 , чистые, сухие и соответствующей вместимости для
приготовления основных растворов.

3 Terms and definitions

4 Principle
4.1 Identification of tastes
Reference substances, in a known order, corresponding to certain tastes, in the form of aqueous solutions of
given concentration are presented to each assessor. After each tasting, the taste is identified by the assessors
and their assessments recorded.
4.2 Familiarization with the different types of threshold
For each taste, the appropriate reference substance is presented to each assessor, in the form of a series of
dilutions of increasing concentration. After each tasting, the results are recorded by the assessors.
5 Reagents
WARNING — Persons using this International Standard should be familiar with normal laboratory
practice. This International Standard does not purport to address all of the safety problems, if any,
associated with its use. It is the responsibility of the user to establish appropriate safety and health
practices and to ensure compliance with any national regulatory conditions.
5.1 Water, neutral, tasteless, still and odourless, preferably of known hardness.
For recognition of metallic sensation, demineralized water shall be used to avoid oxidation and to get a metallic
sensation. In demineralized water and water with a low hardness (spring water), a bitter and sour taste shows
lower recognition thresholds.
The water provided to the assessors for rinsing their mouths shall be identical with that used to prepare the
dilutions (5.3).
5.2 Stock solutions.
Prepare, in volumetric flasks (6.1), the solutions listed in Table 1 from food-grade reference substances.
5.3 Dilutions.
From the stock solutions specified in Table 1, prepare a series of solutions for each taste in accordance with
Table 2.
6 Apparatus

solutions.

6.2 Burettes, ISO 385 , preferably having automatic zeroing, for preparing the dilutions, or pipettes,

The requirements of national regulations concerning authorized products and particularly for food grade safety certification shall be
taken into account.
NOTE A quantity of 2 l of stock solution is sufficient for about 20 assessors.
The substances are in accordance with EU Food Law.

4 Principle
4.1 Identification of tastes
Reference substances, in a known order, corresponding to certain tastes, in the form of aqueous solutions of
given concentration are presented to each assessor. After each tasting, the taste is identified by the assessors
and their assessments recorded.
4.2 Familiarization with the different types of threshold
For each taste, the appropriate reference substance is presented to each assessor, in the form of a series of
dilutions of increasing concentration. After each tasting, the results are recorded by the assessors.
5 Reagents
WARNING — Persons using this International Standard should be familiar with normal laboratory
practice. This International Standard does not purport to address all of the safety problems, if any,
associated with its use. It is the responsibility of the user to establish appropriate safety and health
practices and to ensure compliance with any national regulatory conditions.
5.1 Water, neutral, tasteless, still and odourless, preferably of known hardness.
For recognition of metallic sensation, demineralized water shall be used to avoid oxidation and to get a metallic
sensation. In demineralized water and water with a low hardness (spring water), a bitter and sour taste shows
lower recognition thresholds.
The water provided to the assessors for rinsing their mouths shall be identical with that used to prepare the
dilutions (5.3).
5.2 Stock solutions.
Prepare, in volumetric flasks (6.1), the solutions listed in Table 1 from food-grade reference substances.
5.3 Dilutions.
From the stock solutions specified in Table 1, prepare a series of solutions for each taste in accordance with
Table 2.

1 Domaine d’application
La présente Norme internationale spécifie un ensemble d’essais objectifs permettant aux sujets de se
familiariser avec l’analyse sensorielle. Les méthodes d’essai spécifiées peuvent être utiles pour:
a) enseigner aux sujets à reconnaître des saveurs et à les distinguer les unes par rapport aux autres (voir
Article 8);
b) apprendre aux sujets à connaître et à se familiariser avec les différents types de seuils d’essais (voir
Article 9);
c) faire prendre conscience aux sujets de leur propre sensibilité gustative;
d) permettre aux superviseurs de l’essai de réaliser un premier tri des sujets.
Ces méthodes peuvent également être utilisées pour le contrôle périodique de la sensibilité gustative des
sujets qui font déjà partie de jurys d’analyse sensorielle.

4 Principe
4.1 Identification des saveurs
Des substances témoins correspondant à certaines saveurs sont présentées à chaque sujet sous forme de
solutions aqueuses de concentration donnée, dans un ordre connu. Après chaque dégustation, les sujets
identifient la saveur et enregistrent leurs évaluations.
4.2 Familiarisation avec les différents types de seuils
Pour chacune des saveurs, la substance témoin appropriée est présentée à chaque sujet sous forme d’une
série de dilutions dont la concentration est croissante. Après chaque dégustation, les sujets enregistrent les
résultats.
5 Réactifs
AVERTISSEMENT — Il convient que l’utilisateur de la présente Norme internationale connaisse bien
les pratiques courantes de laboratoire. La présente Norme internationale n’a pas pour but de traiter
tous les problèmes de sécurité qui sont, le cas échéant, liés à son utilisation. Il incombe à l’utilisateur
d’établir des pratiques appropriées en matière d’hygiène et de sécurité, et de s’assurer de la conformité
à la réglementation nationale en vigueur.
5.1 Eau, neutre, sans saveur, plate, inodore, et de préférence de dureté connue.
Pour la reconnaissance de la sensation métallique, de l’eau déminéralisée doit être utilisée pour éviter toute
oxydation et percevoir la sensation métallique. Dans l’eau déminéralisée et dans l’eau de faible dureté (eau de
source), une saveur amère et aigre présente des seuils de reconnaissance plus bas.
L’eau fournie aux sujets pour se rincer la bouche doit être la même que celle utilisée pour réaliser les dilutions
(5.3).

5.2 Solutions mères.
Dans des fioles jaugées (6.1), préparer les solutions indiquées dans le Tableau 1 à partir de substances
témoins de qualité alimentaire.
5.3 Dilutions.
À partir des solutions mères spécifiées dans le Tableau 1, préparer une série de dilutions pour chaque saveur,
conformément au Tableau 2.
6 Appareillage

Les exigences de la réglementation nationale concernant les produits autorisés et, en particulier, la certification relative
à la sécurité sanitaire des aliments doivent être prises en compte.

Les substances sont conformes à la réglementation européenne sur les denrées alimentaires.
