Sensory analysis - General guidance for the design of test rooms (ISO 8589:2007/Amd 1:2014)

This International Standard provides general guidance for the design of test rooms intended for the sensory analysis of products. It describes the requirements to set up a test room comprising a testing area, a preparation area, and an office, specifying those that are essential or those that are merely desirable. This International Standard is not specific for any product or test type. NOTE The test space can be similar for food and non-food products that are evaluated using sensory methods. However, the test rooms might need to be adapted for each specialized use. Modifications to the design are often needed for specific products and for specific types of testing. This is particularly true if the test rooms are to be used for the evaluation of non-food products. Although many of the general principles are similar, this International Standard does not address test facilities for the specialized examination of products in inspection or in-plant quality-control applications.

Overview

SIST EN ISO 8589:2010/A1:2014 is an amendment to the international standard ISO 8589:2007, providing general guidance for the design of sensory analysis test rooms. Published by CEN and approved in June 2014, this standard addresses key considerations to ensure that sensory evaluation environments support accurate, unbiased assessments of products. It is primarily relevant to the field of sensory analysis within food products but can be applied to various sectors requiring controlled conditions for sensory testing.

Sensory analysis is critical for product development, quality control, and consumer research, making the design of test rooms a foundational element. This amendment enhances the original 2010 standard by incorporating updated directives on room interior colours and other environmental factors to minimize external influences on sensory evaluation outcomes.

Key Topics

  • Design of Test Rooms
The standard provides guidelines on the architectural and interior design to optimize sensory test environments, focusing on controlled lighting, ventilation, and seating arrangements.

  • Neutral Colour Usage
Amendment A1 introduces a recommendation for the interior of sensory booths to have matte, neutral colours such as white, light grey, or off-white. This reduces visual bias and prevents influence on the sensory evaluation of test samples.

  • Standardization and Compliance
SIST EN ISO 8589:2010/A1:2014 aligns with ISO/IEC directives and obliges CEN members across multiple European countries to implement the amendment by December 2014, ensuring consistent application and harmonization of sensory testing environments.

  • Sensory Analysis Quality Assurance
The standard supports the integrity of sensory data by specifying environmental parameters that reduce distractions and stimuli that could affect panelist perceptions.

Applications

  • Food Industry Sensory Testing
Manufacturers and research labs use this standard to design sensory evaluation rooms that facilitate objective testing of flavor, aroma, texture, and appearance.

  • Product Development and Innovation
Consistent test room conditions allow accurate sensory profiling to guide formulation changes and new product launches.

  • Quality Control Labs
Implementing EN ISO 8589 ensures that sensory evaluations for batch consistency and defect detection are reliable and reproducible.

  • Consumer Research Facilities
Market research teams conducting sensory panels or hedonic testing benefit from the controlled environment specifications to gather valid consumer feedback.

  • Multinational Companies
Harmonized test room requirements across countries enable standardized global sensory testing protocols.

Related Standards

  • ISO 5492:2008 – Sensory Analysis Vocabulary
Provides terminology fundamental to understanding sensory testing procedures aligned with ISO 8589.

  • ISO 13299:2016 – Sensory Analysis Methodology
Details sensory testing methods and data analysis complementing test room design considerations.

  • ISO/IEC Directives Part 1 & Part 2
Governs the development and drafting processes for ISO standards, under which EN ISO 8589 amendments are created and maintained.

  • EN ISO 11136 – Sensory Analysis-Methodology for Hedonic Tests
Relates to consumer preference tests conducted within sensory evaluation spaces designed per ISO 8589 guidelines.

SIST EN ISO 8589:2010/A1:2014 plays a crucial role in advancing the quality and reliability of sensory analysis by defining environmental parameters for test rooms. By standardizing these conditions, it helps professionals across food technology, consumer research, and product development achieve more accurate sensory evaluations and informed decisions.
