This European Standard specifies requirements for the design, construction and operation of installations designed for the treatment of cooking fumes in kitchens including technical safety, ergonomic and hygienic features.
This European Standard is applicable to ventilation systems in commercial kitchens, associated areas and other installations processing foodstuffs intended for commercial use. Kitchens and associated areas are special rooms in which meals are prepared, where tableware and equipment is washed, cleaned, food is stored and food waste areas.
It is not applicable to ventilation systems that are to be used in domestic kitchens.
Unless otherwise specified, the requirements of this standard shall be checked by way of inspection and/or measurement.
NOTE   Please note the possible existence of additional or alternative local national regulations converting installation, inspection, maintenance and operation.

Diese Europäische Norm gilt für Lüftungsanlagen in gewerblich genutzten Küchen, dazugehörige Bereiche und andere Installationen in der Lebensmittelverarbeitung, die für den gewerblichen Gebrauch bestimmt sind. La présente Norme européenne s'applique aux systèmes de ventilation installés dans les cuisines professionnelles, les zones associées et les autres installations de transformation des produits alimentaires destinées à un usage professionnel. Les cuisines et les zones associées sont des pièces spéciales dans lesquelles les repas sont préparés, la vaisselle et les ustensiles sont lavés et nettoyés, les produits alimentaires sont stockés et des zones de déchets alimentaires.
La présente Norme européenne s'applique aux systèmes de ventilation excepté ceux utilisés dans des cuisines domestiques.

EN 16282-8:2017 (E) 4 European foreword This document (EN 16282-8:2017) has been prepared by Technical Committee CEN/TC 156 “Ventilation for buildings”, the secretariat of which is held by BSI. This European Standard shall be given the status of a national standard, either by publication of an identical text or by endorsement, at the latest by January 2018, and conflicting national standards shall be withdrawn at the latest by January 2018. Attention is drawn to the possibility that some of the elements of this document may be the subject of patent rights. For technical safety reasons components in the air stream shall be designed to withstand a constant temperature of at least 60 °C. SIST EN 16282-8:2017

EN 16282-8:2017 (E) 9 6.2 Electrical equipment The type of protection of the electrical components shall be at least IP54, preferably IP65 in accordance with EN 60529. Electrical installations and equipment shall conform to the generally recognized electrical principles. These are deemed as observed if the following standards are fulfilled: — EN 60335-1, — EN 60204-1, — EN 61140. Openings for cleaning purposes as well as control cabinet doors are to be designed so that any risk emanating from electrical current in the high voltage field is excluded. This can be achieved, for example, by interlocking devices as per EN ISO 14119 and the utilization of controllers as per EN ISO 13849 category 2 or 3. 7 Hygienic requirements 7.1 General Unless otherwise specified, the requirements of this standard should be checked by way of inspection and/or measurement. 7.2 General hygienic requirements All materials coming into contact with foodstuff shall be free of contaminants. The cooking fume treatment installation shall be easy to access for the purposes of maintenance and cleaning work. The manual shall contain information on what cleaning procedures and detergents are suitable. Cleaning intervals shall be specified. The safety data sheet should be attached. 8 Instructions 8.1 Installation instructions Installation instructions shall be in the national language of the country of the place of use and shall be enclosed for assembly with each device. They shall be kept brief and contain all the necessary information for installation and maintenance in an easy-to-understand way. The installation instructions shall contain at least the following information: — instructions as to how the supplied mounting elements are to be used as far as applicable; — general instructions on the mounting elements to be used if these are not supplied already; — instructions on aerosol tight connection of the housing of external components for ventilation. 8.2 Operating instructions Operating instructions for the user in the national language shall be enclosed with each device. They shall be kept brief and contain all the important information for operation and cleaning in an easy-to-understand way. The operating instructions shall at least contain the following information: SIST EN 16282-8:2017

EN 16282-8:2017 (E) 10 — name of manufacturer; — type, design, commercial designation; — technical data: — area of use, — dimensions, — air flow rate, — power requirements; — instructions on the cleaning and maintenance and, if applicable, on the proper opening or removing individual parts; — instructions on access to carry out cleaning and maintenance; — instructions on the use of suitable cleaning agents. 9 Markings Every aerosol treatment installation shall be permanently marked on its exterior in an easily visible place. The device plate shall contain the following information: a) the name of the manufacturer, supplier or importer and/or the registered trademark; b) type designation/order number of the manufacturer; c) year of when it was manufactured (also in code); d) identifier of this standard. UV-Devices for the treatment of aerosol A.1 Scope This annex is applicable to UV devices for the treatment of aerosol in the extract air. These are components of the extract air devices of kitchens and other food-processing businesses that in type and configuration are intended for commercial use. NOTE The system is based on the effect of short-wave UV radiation (photolysis) and the chemical reaction of the ozone (O3) in the air oxygen (O2) with the organic particles (oxidation). Oxidation residue from photolysis and oxidation are mainly water, carbon dioxide and fat ash. A.2 Normative references As specified in Clause 2. A.3 Terms and definitions For the purposes of this annex, the following terms and definitions apply. A.3.9 UV installation for the treatment of aerosol device to reduce organic, fat-containing and odour-bearing particles in the extract air A.4 Designations As specified in Clause 4. A.5 Construction and function A.5.1 General The devices shall be according to Clause 5 with the additional requirements given in A.5. The installation shall be installed behind the separators of the discharge air unit. The UV device shall be installed in such a way that the entire extract air volume flows past the UV lights. If necessary, suitable measures shall be taken. Electrical lines running to the UV devices and the related components are to be preferably routed/installed outside of the hood body or the kitchen ventilation ceiling. If routing in the hood/ceiling body is necessary, they shall be either resistant to or appropriately protected from UV light and ozone. The UV device shall be supplied with a suitable protection so as to prevent damage, during cleaning work, or replacement process. An hour counter as well as a fault display for the failure of individual UV light parts shall be incorporated into the device controller. SIST EN 16282-8:2017

EN 16282-8:2017 (E) 12 A display which indicates the necessary change of UV lights shall also be incorporated into in the device controller. NOTE Among other things, the effectiveness of the UV lights is dependent on temperature. It is advised not to exceed the maximum temperature limits stated by the manufacturer. Suitable cooling measures for the extract air may be necessary. A.5.2 Materials All components that come into contact with the extract air shall be UV and ozone resistant. Materials of Table A.1 shall be used. A.6 Technical safety requirements A.6.1 General The devices shall be according to Clause 6 with the additional requirements given in A.6. For technical safety reasons the UV installation shall be designed to withstand a constant temperature of at least 60 °C. The installation, initial putting into operation, repair and maintenance of UV installations shall be performed by qualified technical staff trained by the manufacturer (e.g. electrical trade businesses). A.6.3 Protection against UV radiation A Safety device shall be provided so as to ensure that eyes and skin of kitchen staff are not dangerously exposed to UV radiation. Maximum value for permissible UV radiation outside of the separator, Eeff is the following: Eeff is the effective radiation strength that is evaluated by the spectral effectiveness of the UV A/B/C radiation.
