Food processing machinery - Band saw machines - Safety and hygiene requirements

This European Standard specifies requirements for the design and manufacturing of band saw machines. The machines covered by this European Standard are used to cut bone and meat. The band saw machines covered by this European Standard do not include band saw machines for processing wood and similar materials, and the requirements of EN 1807 do not apply.
Band saw machines for domestic use are not included in this European Standard.
This European Standard only applies to machines which are manufactured after the date of issue of this European Standard.
This European Standard covers the following types of machines:
- Band saw machines designed as table-top machines with and without base
- Band saw machines designed as floor-type machines
- Band saw machines integrated in a cutting line
Band saw machines which are placed on the floor can be wheel-mounted.

Diese Europäische Norm legt Anforderungen an die Konstruktion und Herstellung von Bandsägemaschinen fest (siehe Bilder 1 bis 5). Die in dieser Europäischen Norm behandelten Maschinen werden zum Schneiden von Folgendem verwendet:
- Knochen;  frischem oder tiefgefrorenem Fleisch mit oder ohne Knochen;
- frischem oder tiefgefrorenem Fisch, ganz oder filetiert;
- gefriergetrockneten Produkten;
- frischem oder tiefgefrorenem Gemüse;
- anderen Produkten, wie z. B. Schweinefett oder ähnliche Produkte. Die in dieser Europäischen Norm behandelten Bandsägemaschinen sind keine Bandsägemaschinen zum Bearbeiten von Holz und ähnlichen Materialien und die in EN 1807 beschriebenen Anforderungen gelten nicht. Das Material des Sägeblattes muss die Anforderungen an Materialien, die in Kontakt mit Lebensmittel kommen, erfüllen. Bandsägemaschinen für den Hausgebrauch werden von dieser Europäischen Norm nicht erfasst. Diese Europäische Norm gilt nur für Maschinen, die nach dem Ausgabedatum dieser Europäischen Norm erstellt werden. Diese Europäische Norm umfasst folgende Bauarten von Maschinen: Bandsägemaschinen, die auf dem Fußboden aufgestellt werden und verfahrbar ausgeführt sind (siehe Bild 6). Typ A Bandsägemaschine mit Zuführtisch und fest angebrachtem Materialdrücker Tatsächliche Schnitthöhe SH < 250 mm  Bandsägemaschinen, die als Tischaufsatzmaschinen mit und ohne Tisch gestaltet sind;
- Bandsägemaschinen, die als Bodenstandmaschinen gestaltet sind;
- Bandsägemaschinen, die in eine Schneidelinie eingefügt sind. Aufstellungsort: Tisch (siehe Bild 1) oder Untergestell (siehe Bild 2). Abstand A zwischen Fußboden und Oberfläche des Zuführtisches beträgt in der Regel zwischen 800 mm und 1 050 mm.
Typ B Bandsägemaschinen mit Zuführtisch, Schutzleiste und einer tatsächlichen Schnitthöhe von 250 mm ≤ SH < 420 mm. Abstand A zwischen Fußboden und Oberfläche des Zuführtisches beträgt zwischen 800 mm und 1 050 mm. Aufstellungsort: Fußboden (siehe Bild 3). Typ C Bandsägemaschine mit Schiebezuführtisch, Schutzleiste und einer tatsächlichen Schnitthöhe von 250 mm ≤ SH < 420 mm. Abstand A zwischen Fußboden und Oberfläche des Schiebezuführtisches beträgt zwischen 800 mm und 1 050 mm. Aufstellungsort: Fußboden (siehe Bild 4).
Typ D Bandsägemaschine mit Zu- und Abführeinrichtung (z. B. Rollenbahn, Transportband); eingebaut in eine Zerlegeanlage, tatsächliche Schnitthöhe SH < 550 mm. Abstand A zwischen Fußboden und Zuführfläche beträgt in der Regel zwischen 800 mm und 1 050 mm. Aufstellungsort: Fußboden (siehe Bild 5).
Bandsägemaschinen bestehen aus Maschinenständer, fest angebrachtem Zuführtisch oder Schiebezuführ-tisch, Rollenbahn oder Transportband, Materialdrücker, höhenverstellbarer Schutzleiste, Antriebs- und Umlenkscheibe, Sägeblatt, oberer und unterer Blattführung, Blattspanneinrichtung, Antrieb und elektrischen Komponenten, abhängig von der Maschinenart. Anforderungen an automatische Be-/Entladeeinrichtungen, Förderbänder usw. fallen nicht in den Anwendungsbereich dieser Europäischen Norm. Diese Europäische Norm behandelt alle signifikanten Gefährdungen, Gefährdungssituationen und Gefähr-dungsereignisse, die auf Bandsägemaschinen zutreffen, wenn sie bestimmungsgemäß und unter Bedingun-gen von durch den Hersteller vernünftigerweise vorhersehbaren Fehlanwendungen verwendet werden (siehe Abschnitt 4). Diese Europäische Norm behandelt die Gefährdungen, die während Installation, Betrieb, Reinigung, Nutzung, Wartung und Außerbetriebnahme der Maschine auftreten können. Bei Bodenbandsägemaschinen wird das Schneidgut von Hand auf den fest angebrachten Zuführtisch oder den Schiebezuführtisch aufgelegt und mit dem Materialdrücker oder der Tischrückwand des Schiebezuführ-tisches oder mit der Rollenbahn oder dem Transportband gegen die Schneidstelle des Sägeblattes gedrückt und durchgesägt.

Machines pour les produits alimentaires - Scies à ruban - Prescriptions relatives à la sécurité et à l'hygiéne

La présente Norme européenne spécifie les prescriptions relatives à la conception et à la fabrication des scies
à ruban (voir les Figures 1 à 5).
Les machines couvertes par la présente Norme européenne sont utilisées pour couper :
- des os ;
- de la viande fraîche ou surgelée avec ou sans os ;
- du poisson frais ou surgelé, naturel ou en filets ;
- des blocks de produits surgelés ;
- des légumes frais ou surgelés ;
- d’autres produits tels que lard ou autres produits similaires.
Les scies à ruban couvertes par la présente Norme européenne n’incluent pas les scies à ruban pour le
traitement du bois et autres matériels similaires, et les prescriptions de l’EN 1807 ne s'appliquent pas. Les
matériaux constitutifs des scies à ruban doivent répondre aux prescriptions des matériaux destinés au contact
alimentaire.
Les scies à ruban à usage domestique ne sont pas couvertes par la présente Norme européenne.
La présente Norme européenne s'applique uniquement aux machines fabriquées après sa date de publication.
La présente Norme européenne couvre les types de machines suivants :
Les scies à ruban qui sont posées au sol et qui peuvent être équipées de roulettes (voir Figure 6).
- Type A
Scie à ruban avec une table d'alimentation et un poussoir fixe.
Hauteur de coupe réelle SH < 250 mm
- Les scies à ruban conçues pour être posées sur une table, avec ou sans socle
- Les scies à ruban conçues pour être posées au sol
- Les scies à ruban intégrées dans une ligne de coupe
Emplacement : Sur une table (voir Figure 1) ou sur un socle (voir Figure 2). La distance A entre le sol et la
face supérieure de la table d'alimentation est comprise entre 800 mm et 1050 mm.
- Type B
Scie à ruban ayant une table d'alimentation, un rail protecteur et une hauteur réelle de coupe SH telle que 250
mm  SH < 420 mm.
La distance A entre le sol et la face supérieure de la table d'alimentation est comprise entre 800 mm et
1050 mm. Emplacement : sur le sol (voir Figure 3).
- Type C
Scie à ruban ayant une table d'alimentation coulissante, un rail protecteur et une hauteur réelle de coupe SH
telle que 250 mm  SH < 420 mm.
La distance A entre le sol et la face supérieure de la table d'alimentation coulissante est comprise entre
800 mm et 1050 mm. Emplacement : sur le sol (voir Figure 4)
Les scies à ruban sont constituées d’un bâti, d’une table d'alimentation fixe ou coulissante, d’un convoyeur à
rouleaux ou d’un convoyeur à bande, d’un poussoir, d’un rail protecteur ajustable en hauteur, d’un volant
supérieur et d’un volant inférieur, d’une lame de scie, d’un guide lame supérieur et inférieur, d’un système de
tension de la lame, d’un système d'entraînement et de composants électriques, selon le type de machine. Le
domaine d’application de la présente Norme européenne ne concerne pas les prescriptions relatives aux
systèmes de chargement/déchargement automatiques, aux convoyeurs, etc.
La présente Norme européenne traite de tous les phénomènes dangereux, situations et événements
dangereux significatifs spécifiques aux scies à ruban, lorsque celles-ci sont utilisées normalement et dans des
conditions de mauvaise utilisation raisonnablement prévisibles par le fabricant (voir Article 4).
La présente Norme européenne traite des phénomènes dangereux qui peuvent se produire pendant la mise
en service, le fonctionnement, le nettoyage, l’utilisation, la maintenance et la mise hors service de la machine.
Pour les scies à ruban posées sur le sol, le produit à scier est posé manuellement sur la table d'alimentation
fixe ou coulissante, puis poussé au moyen du poussoir ou du rebord de la table coulissante ou au moyen du
convoyeur à rouleaux ou du convoyeur à bande dans la zone de coupe de la lame de scie et coupé par cette
dernière.

Ta evropski standard določa zahteve za konstruiranje in proizvodnjo tračnih žag. Stroji, ki so obravnavani v tem evropskem standardu, se uporabljajo za rezanje kosti in mesa. Tračne žage iz tega evropskega standarda ne zajemajo tračnih žag za predelavo lesa in podobnih materialov, pri čemer se zahteve iz standarda EN 1807 ne uporabljajo.
Tračne žage za domačo uporabo niso obravnavane v tem evropskem standardu.
Ta evropski standard se uporablja samo za stroje, proizvedene po datumu objave tega evropskega standarda.
Ta evropski standard obravnava naslednje vrste strojev:
– tračne žage, zasnovane kot namizni stroji s podnožjem in brez njega,
– tračne žage, zasnovane kot talni stroji,
– tračne žage, vgrajene v rezalno linijo.
Tračne žage, ki so postavljene na tla, je mogoče namestiti na kolesa.

This European Standard shall be given the status of a national standard, either by publication of an identical text or by endorsement, at the latest by May 2015 and conflicting national standards shall be withdrawn at the latest by May 2015. EN 12268:2014 (E) 5 Introduction This document is a type C standard as stated in EN ISO 12100. The machinery concerned and the extent to which hazards, hazardous situations and hazardous events are covered are indicated in the scope of this document. When provisions of this type C standard are different from those which are stated in type A or B standards, the provisions of this type C standard take precedence over the provisions of the other standards, for machines that have been designed and built according to the provisions of this type C standard. EN 12268:2014 (E) 6 1 Scope 1.1 General This European Standard specifies requirements for the design and manufacturing of band saw machines as described in 1.2 (see Figures 1 to 5). The machines covered by this European Standard are used to cut: — bones; — fresh or deep frozen meat with or without bones; — fresh or deep frozen fish, natural or in fillets; — deep frozen block food products; — fresh or deep frozen vegetables; — other products such as pork fat or similar products. The band saw machines covered by this European Standard do not include band saw machines for processing wood and similar materials which are covered by the EN 1807 series. Band saw machines for domestic use are not included in this European Standard. This European Standard is not applicable to band saw machines which were manufactured before its date of publication as EN. This European Standard deals with all significant hazards, hazardous situations and events relevant to band saw machines, when they are used as intended and under conditions of misuse which are reasonably foreseeable by the manufacturer (see Clause 4). This European Standard deals with the hazards which can arise during all the lifetime of the machine, including the phases of transport, assembly, commissioning, operation, cleaning, use, maintenance, decommissioning, dismantling, disabling and scrapping of the machine. This European Standard covers the following types of machines: — band saw machines designed as table-top machines with and without base; — band saw machines designed as floor-type machines with and without castors. 1.2 Description of various machine types 1.2.1 General Band saw machines consist of a machine casing, a fixed feed table or a sliding feed table, a roller conveyor or conveyor belt, a product pusher, a height-adjustable protective rail, a top and a bottom wheel, a saw blade, an upper and lower blade guide, a blade tensioning device, a drive and electrical components, depending on machine type. This standard does not deal with machinery with automatic loading/unloading systems (e.g. automatic conveyors). SIST EN 12268:2015



EN 12268:2014 (E) 7 On floor-type band saw machines, the product to be cut is placed by hand onto the fixed feed table or sliding feed table and pushed against the cutting zone of the saw blade by means of the product pusher or the rear table wall on the sliding feed table or by means of the roller conveyor or conveyor belt and sawed. 1.2.2 Type A Band saw machine with a fixed feed table and a non-detachable, movable product pusher: Maximum cutting height SH ≤ 250 mm.

In addition, they shall be designed according to the principles of EN ISO 12100 for hazards relevant but not significant, which are not dealt with by this document. Where the means of reducing the risk is by the physical arrangement or positioning of the installed band-saw machine, the manufacturer shall include in the Information for use a reference to the reduction means to be provided, and to any limiting value of the requirement, and, if appropriate, to the means of verification. The safety related parts of the control system shall present at least a performance level “c” in accordance with EN ISO 13849-1:2008. For specific intended use and/or applications some examples for work aid tools with a protective function are given in Annex C. SIST EN 12268:2015



EN 12268:2014 (E) 13 5.2 Mechanical hazards 5.2.1 General Saw blades shall be removed periodically. Saw blades are sharp and special measures shall be taken. For such blades, designers shall provide means of attaching a tool to the blade to avoid hand contact and a box, or surround guard, to protect against the sharp edges of the blade during handling and transportation. Explanations on the use of these protective means shall be included in the instructions for use. The interlocking system for movable guards shall be built inside of the machine housing and shall comply with EN ISO 14119:2013, 4.2 and Clause 7. In general band saw machines do not require an emergency stop device. If no emergency stop device is fitted, the normal OFF-switch shall be easily reachable from the operator position (see Figure 1 and Figure 2) and shall be protected against unintentional switch-on (e.g. by a protective collar). Cutting tool handling: cutting tools shall be removed periodically. Cutting tools are sharp and special measures shall be taken. For such blades, designers shall provide means of attaching a tool to the blade to avoid hand contact and a box, or surround guard, to protect against the sharp edges of the blade during handling and transportation. Explanations on the use of these protective means shall be included in the instructions for use. Verification: Visual inspection of the machine and its documentation. 5.2.2 Saw blade protection outside of the cutting zone – Zone 1 Access to the saw blade outside the cutting zone shall be prevented. This can be achieved e.g. by the following measures: A closed machine casing shall be provided. The doors of the casing and the removable or tiltable feed table shall be interlocked. Fixing systems for fixed guards or for demountable parts of the machine casing (i.e. designed as fixed guards) shall remain attached to the guards or to the machine when the guards are removed. For requirements relating to the interlocking system of doors and the feeding table, see 5.2.1. After opening the door or the feed table more than 10 mm, the blade shall come to a standstill as soon as is possible, but the time taken shall not exceed 4 s. 5.2.3 Protection at the cutting zone – Zone 2 5.2.3.1 Type A Access to the cutting zone of the saw blade shall be prevented. This can be achieved e.g. by the following measures: A non-detachable, movable product pusher shall be provided. The product pusher shall be designed so as to automatically revert to its protective position by its own weight. Distance A1 between the product pusher and the non-detachable feed table shall be ≤ 6 mm. Design example, see section A – A, Figure 7. A horizontal adjustable portioning plate of a height > 60 mm shall be provided. The portioning plate may be designed to be tiltable and removable. It shall be possible to change the saw blade without removing the product pusher. SIST EN 12268:2015

This can be achieved e.g. by the following measures: A non-detachable blade guide and a height adjustable protective rail shall be provided (see Figures 3, 4 and 8). A maximum distance of 6 mm shall be installed, either between product pusher and table or between blade guide and table. It shall be self-blocking or capable of being blocked in position. When unblocking the height adjustable protective rail, an abrupt lowering to < 25 mm shall be avoided. The vertical force needed to move the guard shall not exceed 20 N ± 2 N. SIST EN 12268:2015
