Wheat, rye and their flours, durum wheat and durum wheat semolina - Determination of the falling number according to Hagberg-Perten (ISO 3093:2009)

ISO 3092:2009 specifies the determination of the alpha-amylase activity of cereals by the falling number (FN) method according to Hagberg-Perten.
This method is applicable to cereal grains, in particular to wheat and rye and their flours, durum wheat and its semolina.
This method is not applicable to the determination of low levels of alpha-amylase activity.
By converting the FN into a liquefaction number (LN), it is possible to use this method to estimate the composition of mixtures of grain, flour or semolina with known FNs necessary to produce a sample of a required FN.

Weizen, Roggen und deren Mehle, Hartweizen und Hartweizengrieß - Bestimmung der Fallzahl nach Hagberg-Perten (ISO 3093:2009)

Diese Internationale Norm legt die Bestimmung der a-Amylaseaktivität von Getreide mit dem Fallzahl-(FN)-Verfahren nach Hagberg-Perten fest.
Dieses Verfahren ist auf Getreidesorten anwendbar, insbesondere auf Weizen und Roggen und deren Mehl, Hartweizen und Hartweizengrieß.
Das Verfahren ist nicht für die Bestimmung von geringen a-Amylaseaktivitäten anwendbar.
Durch Umwandlung der Fallzahl (FN) in eine Verflüssigungszahl (LN) ist es möglich, dieses Verfahren zum Abschätzen der Zusammensetzung von Gemischen aus Getreide, Mehl oder Grieß mit bekannten Fallzahl-werten anzuwenden, das zum Herstellen einer Probe mit der geforderten Fallzahl notwendig ist.

L'ISO 3093:2009 spécifie la détermination du niveau d'activité alpha-amylasique des céréales par la méthode dite de l'indice de chute (IC) selon Hagberg-Perten.
Cette méthode est applicable aux céréales en grains, en particulier au blé tendre et au seigle, et leurs farines, ainsi qu'au blé dur et ses semoules.
Cette méthode ne s'applique pas à la détermination des faibles niveaux d'activité alpha-amylasique.
Par conversion de l'IC en nombre de liquéfaction (NL), la méthode permet également d'estimer la composition de mélanges de grains, farines ou semoules d'IC connus nécessaire pour obtenir un produit d'IC déterminé.

Ta mednarodni standard določa ugotavljanje aktivnosti a-amilaze v žitu z metodo števila padanja (FN) po Hagberg-Pertenu. Ta metoda velja za žitna zrna, zlasti za pšenico, rž in njune moke, pšenico durum in njen zdrob. Ta metoda ne velja za ugotavljanje nizkih ravni aktivnosti a-amilaze. S pretvorbo FN v število utekočinjanja (LN) se ta metoda lahko uporabi za oceno sestave mešanic zrn, moke ali zdroba z znanimi števili padanja, ki je potrebna za pripravo vzorca z zahtevanim številom padanja.

in collaboration with Technical Committee CEN/TC 338 “Cereal and cereal products” the secretariat of which
is held by AFNOR.

text or by endorsement, at the latest by June 2010, and conflicting national standards shall be withdrawn at
the latest by June 2010.
