1 Scope
This International Standard specifies requirements for whole or ground (powdered) cinnamon of
the Sri Lankan type, Madagascan type and Seychelles type, which is the bark of the tree or shrub
Cinnamomum zeylanicum Blume.
Recommendations relating to storage and transport conditions are given in annex A.

3 Definitions
For the purposes of this International Standard, the following definitions apply.
3.1 cinnamon quills (full tubes): Scraped peel of the inner bark of mature plantation cinnamon
shoots joined together by overlaps, the hollow of which has been filled with small pieces of the
same peel and thereafter dried in the sun after air curing.
3.2 cinnamon quillings (broken tubes): Broken pieces and splits of varying sizes of all grades
of cinnamon quills.
3.3 cinnamon featherings: Pieces of inner bark, obtained by peeling and/or scraping the bark
of small twigs and stalks of plantation cinnamon shoots, which may include a quantity of chips as
specified.
3.4 cinnamon chips: Dried unpeelable bark of plantation cinnamon, inclusive of the outer bark,
which has been obtained by beating or scraping the shoots.
3.5 ground cinnamon: Powder obtained by grinding cinnamon of the types considered in this
International Standard, excluding all additives.
3.6 whole cinnamon: All commercial forms of cinnamon except cinnamon powder.
3.7 foxing: The occurrence of reddish-brown patches on the surface of the quills, which may
become dark brown with time.
3.8 bale: A package of any one particular grade of quills wrapped in a suitable material for
export purposes.
4 Types and classification
4.1 Types
4.1.1 Sri Lankan type cinnamon
This is the dried bark of cultivated varieties of the species Cinnamomum zeylanicum Blume of the
Lauraceae family.
Sri Lankan type cinnamon is produced in four forms:
a) quills (see 3.1);
b) quillings (see 3.2);
c) featherings (see 3.3);
d) chips (see 3.4).
4.1.2 Seychelles type cinnamon
This is the bark of trunks or branches of Cinnamomum zeylanicum Blume, cultivated on the
Seychelles.
Seychelles type cinnamon is produced in three forms:
a) rough cinnamon bark, which consists of slightly curved, elongated, irregular, medium or
small pieces of the whole unscraped bark;

b) scraped cinnamon bark, which is obtained from younger shoots from bushes of the same
species; the shoots are scraped with a curved knife before the bark is detached from the wood;
c) quills and quillings, which are prepared from the young shoots, of bushes in a way similar to
that used for Sri Lankan type cinnamon.
4.1.3 Madagascan type cinnamon
Cinnamomum zeylanicum
This is the bark of trunks or branches of Blume, which grows wild on
Madagascar. It is produced either
a) in the form of simple, hollow tubes of unscraped or scraped bark, of rather coarse
appearance, about 30 cm long, cut from smaller branches with a knife; or more usually
b) in the form of unscraped or scraped pieces of bar

3.1  tuyaux entiers de cannelle
Épiderme gratté de l'écorce interne des pousses de cannelier arrivées à maturité, les couches s'emboîtant les unes
dans les autres et s'enroulant en un tuyau rempli de petits morceaux de la même écorce, et séché ensuite au soleil
et en plein air.
3.2  tuyaux brisés de cannelle
Morceaux brisés et débris de différentes tailles de toutes les catégories de tuyaux de cannelle.
3.3  morceaux de cannelle
Morceaux d'écorce interne obtenus par pelage et/ou grattage de l'écorce des petites branches et des tiges des
plantations de canneliers et pouvant comprendre une certaine quantité de copeaux.
3.4  copeaux de cannelle
Écorce séchée ne pouvant pas être pelée de cannelier, y compris l’écorce externe, et obtenue par grattage ou
battage des pousses.
3.5  cannelle en poudre
Poudre obtenue par broyage de tous les types de cannelle considérés dans la présente Norme Internationale, à
l'exclusion de tout additif.
3.6  cannelle entière
Toutes les formes commerciales de cannelle, à l'exception de la cannelle en poudre.
3.7  cannelle dite "foxée" ou tachetée
Cannelle ayant des taches brun rougeâtre sur la surface des tuyaux, celles-ci pouvant devenir brun foncé avec le
temps.
3.8  balle
Emballage de n'importe quelle catégorie de tuyaux emballés dans des matériaux appropriés pour l'exportation.
4 Types et classification
4.1 Types
4.1.1 Cannelle type Sri Lanka
Il s’agit de l’écorce séchée des variétés cultivées de l'espèce Cinnamomum zeylanicum Blume de la famille des
Lauraceae.
La cannelle type Sri Lanka est commercialisée sous quatre formes:
a) tuyaux entiers (voir 3.1);
b) tuyaux brisés (voir 3.2);
c) morceaux (voir 3.3);
d) copeaux (voir 3.4).
4.1.2 Cannelle type Seychelles
Il s’agit de l’écorce des troncs ou des branches de Cinnamomum zeylanicum Blume, ces arbres étant cultivés aux
Seychelles.
La cannelle type Seychelles est commercialisée sous trois formes:

a) écorce de cannelle brute, consistant en fragments petits ou moyens, irréguliers, allongés, légèrement
recourbés d'écorce brute entière non grattée;
b) écorce de cannelle grattée, obtenue à partir des jeunes pousses des arbustes des mêmes espèces; les
pousses sont grattées avec un couteau courbe avant de détacher l'écorce du bois;
c) tuyaux entiers et brisés, obtenus et préparés à partir des jeunes pousses des arbustes, et de la même façon
que celle utilisée pour la cannelle type Sri Lanka.
4.1.3 Cannelle type Madagascar
Il s’agit de l’écorce des troncs ou des branches de Cinnamomum zeylanicum Blume, ces arbres poussant
spontanément à Madagascar. Elle est produite soit:
a) sous la forme de tubes creux simples d'écorce grattée ou non grattée, d'apparence plutôt grossière, d'environ
30 cm de longueur, coupés à partir des plus petites branches avec un couteau; soit, le plus souvent
b) sous la forme de morceaux d'écorce grattée ou non grattée, provenant des branches les plus grosses et des
troncs, enlevés avec le plat d'une hachette.
