Die vorliegende Internationale Norm legt ein Verfahren zur Bestimmung des Festanteils von tierischen unf pflanzlichen Fetten und Ölen fest (nachfolgend als Fette bezeichnet), das gepulste magnetische Kernresonanz mit niedriger Auflösung anwendet. Verschiedene thermische Vorbehandlungen werden in Abhängigkeit von der Polymorphie des Fettes festgelegt. Anmerkung 1: Beispiele für Fett mit einer deutlichen Polymorphie sind Kakaobutter und Fette, die merkliche Mengen von 2-ungesättigtem, 1, 3-gesättigtem Triacylglycerol enthalten.
