Household and similar electrical appliances - Safety - Part 2-37: Particular requirements for commercial electric doughnut fryers and deep fat fryers

IEC 60335-2-37:2017 deals with the safety of electrically operated commercial deep fat fryers and doughnut fryers including pressurized types with a pressure not exceeding 50 kPa and a pressure volume litres product of 200. These appliances are not intended for household and similar use, their rated voltage being not more than 250 V for single-phase appliances connected between one phase and neutral and 480 V for other appliances.
These appliances are used for the commercial processing of food, for example in kitchens of restaurants, canteens, hospitals and in commercial enterprises such as bakeries, butcheries, etc.
The electrical part of appliances making use of other forms of energy is also within the scope of this standard.
As far as is practicable, this standard deals with the common hazards presented by these types of appliances.
This standard does not apply to:
- appliances designed exclusively for industrial purposes;
- appliances intended to be used in locations where special conditions prevail, such as the presence of a corrosive or explosive atmosphere (dust, vapour or gas); or
- appliances for continuous mass production of food.
This sixth edition cancels and replaces the fifth edition published in 2002 including its Amendment 1 (2008) and its Amendment 2 (2011). This edition constitutes a technical revision.
This edition includes the following significant technical changes with respect to the previous edition:
- stating some wording in the scope more precisely;
- addition of a measurement method for pans in the definition for normal operation;
- new definitions on the topic surface temperature;
- deletion of the paragraph with the warning for dangerous voltages (already covered by Part 1);
- addition of hot surface symbol IEC 60417-5041;
- addition of instructions and markings on hot surfaces and other topics;
- addition of requirements, measuring methods and thresholds for different materials on hot surfaces;
- modification on leakage current defining the value for appliances with a power consumption less than 1 kW;
- modification on the criteria for the stability test;
- addition of a requirement for the construction of stationary appliances with rollers or castors;
- modification on some points concerning permanent connection to fixed wiring;
- addition of specific requirements concerning types of screws to be used for electrical connections and connections for earth continuity;
- addition of a figure showing the surfaces to be measured;
- addition of a figure showing the probe for measuring surface temperatures and the addition of informative Annex P dealing with leakage currents for appliances used in tropical climates.
This part 2 is to be used in conjunction with the latest edition of IEC 60335-1 and its amendments. It was established on the basis of the fifth edition (2010) of that standard.
The attention of National Committees is drawn to the fact that equipment manufacturers and testing organizations may need a transitional period following publication of a new, amended or revised IEC publication in which to make products in accordance with the new requirements and to equip themselves for conducting new or revised tests.
It is the recommendation of the committee that the content of this publication be adopted for implementation nationally not earlier than 12 months or later than 36 months from the date of its publication.
This publication is to be read in conjunction with IEC 60335-1:2010.

L'IEC 60335-2-37:2017 traite de la sécurité des friteuses et des friteuses à beignets électriques à usage collectif, y compris celles du type à pression dont la pression ne dépasse pas 50 kPa et dont le produit de la pression par le volume en litres ne dépasse pas 200. Ces appareils ne sont pas destinés à un usage domestique et analogue et leur tension assignée n'est pas supérieure à 250 V pour les appareils monophasés alimentés entre phase et neutre, et à 480 V pour les autres appareils.
Ces appareils sont utilisés pour la préparation d’aliments à des fins commerciales, par exemple dans les cuisines de restaurants, cantines, hôpitaux ou dans des entreprises artisanales comme les boulangeries, les boucheries, etc.
La partie électrique des appareils utilisant d’autres formes d’énergie relève également du domaine d’application de la présente norme.
Dans la mesure du possible, la présente norme traite des dangers ordinaires présentés par ces types d'appareils.
L’attention est attirée sur le fait que:
- pour les appareils destinés à être utilisés dans des véhicules ou à bord de navires ou d'avions, des exigences supplémentaires peuvent être nécessaires;
- dans de nombreux pays, des exigences supplémentaires sont spécifiées par les organismes nationaux de la santé, par les organismes nationaux responsables de la protection des travailleurs, par les organismes nationaux responsables de l'alimentation en eau et par des organismes similaires;
- dans de nombreux pays, des exigences complémentaires sont spécifiées pour les appareils à pression.
La présente norme ne s’applique pas:
- aux appareils prévus exclusivement pour des usages industriels;
- aux appareils destinés à être utilisés dans des locaux présentant des conditions particulières, telles que la présence d'une atmosphère corrosive ou explosive (poussière, vapeur ou gaz);
- aux appareils pour la préparation en masse et continue d'aliments.
Cette sixième édition annule et remplace la cinquième édition parue en 2002, y compris son Amendement 1 (2008) et son Amendement 2 (2011). Cette édition constitue une révision technique.
Les principales modifications de la présente édition par rapport à la cinquième édition de l'IEC 60335 2 37 sont les suivantes (les modifications mineures ne sont pas mentionnées):
- formulations plus précises dans le domaine d’application;
- ajout d’une méthode de mesure pour les casseroles dans la définition des conditions de fonctionnement normal;
- ajout de nouvelles définitions relatives à la température de surface;
- suppression de l’alinéa comportant la mise en garde pour les tensions dangereuses (déjà traitées dans la Partie 1);
- ajout du symbole IEC 60417-5041 relatif à la surface chaude;
- ajout d’instructions et de marquages sur les surfaces chaudes et sur d’autres éléments;
- ajout d’exigences, de méthodes et seuils de mesure pour les différents matériaux sur les surfaces chaudes;
- modification du courant de fuite définissant la valeur associée aux appareils consommant moins de 1 kW;
- modification des critères relatifs à l’essai de stabilité;
- ajout d’une exigence relative à la construction des appareils fixes équipés de roulettes ou de galets;
- modification de certains points concernant la connexion permanente à des canalisations fixes;
- ajout d’exigences spécifiques concernant les types de vis à utiliser pour les connexions électriques et les connexions pour la continuité de terre;
- ajout d’une figure représentant les surfaces à mesurer;
- ajout d’une figure représentant la sonde de mesure des températures de surface;
- ajout de l’Annexe informative P traitant des courants de fuite pour les appareils utilisés sous des climats tropicaux.
La présente partie 2 doit être utilisée conjointement avec la dernière édition de l’IEC 60335-1 et ses amendements. Elle a été établie sur la base de la cinquième édition (2010) de cette norme.

1) The International Electrotechnical Commission (IEC) is a worldwide organization for standardization comprising

international co-operation on all questions concerning standardization in the electrical and electronic fields. To
