3 Description
3.1 Large cardamom capsules
Large cardamom capsules are the dried, nearly ripe to ripe fruits of Amomum subulatum Roxb. The
capsules have a colour ranging from brown to pink and are ovoid and more or less triangular shaped
with a ribbed appearance. The capsules may be clipped and their pedicles removed. The capsules shall
be well formed with sound seeds inside.
3.2 Large cardamom seeds
These are seeds obtained by decortication of capsules of large cardamoms.

3 Description
3.1 Large cardamom capsules

4 Requirements
4.1 Odour and taste
The odour of large cardamom capsules and seeds shall be characteristic and fresh. They shall be free
from foreign odour and taste, including rancidity and mustiness.
4.2 Freedom from insects and moulds, etc.
Large cardamom capsules and seeds shall be free from live insects and moulds, and shall be practically
free from dead insects, insect fragments and rodent contamination visible to the naked eye (corrected, if

3 Description
3.1 Grande cardamorne en capsules
Les capsules de grande cardamorne sont les fruits séchés, mûrs ou presque mûrs, de Amomum subulatum Roxb.
Les capsules ont une couleur allant du brun au rose, leur forme est oblongue, plus ou moins triangulaire, avec des
côtes. Les capsules peuvent être rognées et avoir leurs pédicelles enlevés. Les capsules doivent être bien formées
et contenir des graines saines.

3.2 Graines de grande cardamorne
Les graines sont obtenues en décortiquant les capsules de grande cardamorne.
4 Exigences
4.1 Odeur et flaveur
L’odeur des capsules ou des graines de grande cardamorne doit être caractéristique et fraîche. Elle doit être
exempte d’odeur et de flaveur étrangères, y compris de rance et de moisi.
4.2 Absence d’insectes, de moisissures, etc.
La grande cardamome en capsules et en graines doit être exempte d’insectes vivants et de moisissures, et être
pratiquement exempte d’insectes morts, de fragments d’insectes et de contamination par les rongeurs visibles à
l’oeil nu (corrigé, si nécessaire, dans le cas d’une vision anormale) ou avec le grossissement pouvant s’avérer
nécessaire dans certains cas particuliers. Si le grossissement est supérieur à x 10, mention doit en être faite dans
