1.1 General
This European standard specifies requirements relating to the design and construction of mainly not moveable slicing machines and auxiliary components.
The slicing machines covered by this standard are used for the cutting and portioning of meat and sausage products, cheese or other sliceable food products that can be cut using one or more blades. Slicing machines are designed to cut pieces or slices.
A sickle blade or an eccentrically moving blade is used for cutting. As a rule, the product only moves along one axis during the cutting process.
The auxiliary components covered by this standard are used for conveying products from the cutting zone, for weighing or for sorting the cut portions.
The specific hazards associated with separate auxiliary components which are used for automatically supplying the meat product and for forming and preparing the portions are not covered in this standard. These auxiliary components shall comply with the requirements in accordance with EN ISO 12100:2010 where relevant.
This European standard covers all the significant hazards, hazardous situations and hazardous events identified by means of risk assessment associated with automatic slicing machines and auxiliary components if they are used in accordance with regulations and under the conditions of foreseeable misuse defined by the manufacturer (see Clause 4).
This standard covers hazards which may arise during the commissioning, operation, cleaning, servicing and decommissioning of the machine.
This standard only applies to automatic slicing machines and auxiliary components that were manufactured after the date of publication of this standard.
This standard applies to automatic slicing machines and auxiliary components designed for industrial use. These are machines which are usually used in food processing facilities. The machines are normally permanently installed in one place.
This standard does not apply to cutting machines with moving infeed slides, slicing machines that are used in for example shops, restaurants, supermarkets, canteens etc. and are already covered in EN 1974.
This standard does not apply to portion cutting machines which are manufactured and put on the market in accordance with the requirements specified in EN 13870.
1.2 Machine description
This standard covers the following designs (see Figures 1 to 7):
Design variations in the feed area:
- Slicing machine with manual feed
- Slicing machine with automatic feed
- Slicing machine with continuous feed
Design variations in the outfeed area:
- Slicing machine with outfeed belt, without depositing unit and without subsequent auxiliary components
- Slicing machine with depositing unit and if necessary with subsequent auxiliary components.

1.3 Machine design
Automatic slicing machines mainly consist of machine bases, product support with automatic or manually operated grippers, holder, blade housing, blade, outfeed device, associated drives and electrical, hydraulic or pneumatic components. Furthermore optional features can be added.
Automatic slicing machines in the scope of this standard may be equipped with the following auxiliary components:
- feeder;
- interleaver;
- outfeed belt;
- depositing unit;
- check weigher;
- auxiliary sorting components (e.g. rocker);
- positioning devices (e.g. wheels)
1.4 Intended use
The intended use of automatic slicing machines and auxiliary components, in accordance with this document, in accordance with regulations (as defined in EN ISO 12100:2010, 3.23) is described in Clause 1.1.
The product is manually placed on the product base or automatically fed to the product base with a loading device. The product is supplied to the blade by automatic or manually operated grippers or conveyor slide or belt and the cutting process begins. The

Automatische Schneidemaschinen werden so ausgelegt, dass sie das Nahrungsmittel in Portionen schneiden können.
Ein Sichelmesser oder ein sich exzentrisch bewegendes Messer wird zum Schneiden verwendet. In der Regel bewegt sich das Schneidgut während des Schneidvorgangs nur entlang einer Achse.
Die in dieser Norm behandelten Zusatzeinrichtungen werden zur Beförderung der Scheiben aus dem Schneidbereich heraus verwendet, um sie zu wägen oder zu sortieren.
Diese Europäische Norm behandelt alle signifikanten Gefährdungen, Gefährdungssituationen und Gefähr-dungsereignisse, soweit sie durch eine Risikobeurteilung als signifikant für automatische Schneidemaschinen und Zusatzeinrichtungen festgestellt wurden, wenn sie gemäß den Verordnungen und unter Bedingungen von durch den Hersteller vernünftigerweise vorhersehbaren Fehlanwendungen verwendet werden (siehe Abschnitt 4).
Diese Norm behandelt die Gefährdungen, die im Zusammenhang mit Inbetriebnahme, Betrieb, Reinigung, Wartung und Zerlegung der Maschine auftreten können.

1.1   Généralités
La présente norme européenne spécifie les prescriptions relatives à la conception et à la construction de trancheurs principalement fixes et de composants auxiliaires.
Les trancheurs traités dans la présente norme sont utilisés pour la coupe et le portionnement de viandes et de produits de charcuterie, de fromages ou autres produits alimentaires pouvant être tranchés au moyen d'une ou de plusieurs lames. Les trancheurs sont conçus pour couper en morceaux ou en tranches.
Une lame de couteau ou une table à mouvement excentrique est utilisé pour la coupe. En règle générale, le produit bouge uniquement le long de l'axe pendant le processus de coupe.
Les composants auxiliaires traités dans la présente norme sont utilisés pour le transfert des produits depuis la zone de coupe, pour le pesage ou le tri des portions découpées.
Les phénomènes dangereux spécifiques associés aux composants auxiliaires séparés qui sont utilisés pour l'alimentation automatique de produit à base de viande et pour le formage et la préparation des portions ne sont pas couverts dans la présente norme. Ces composants auxiliaires doivent satisfaire aux prescriptions de l'EN ISO 12100:2010, lorsque cela est pertinent.
La présente norme européenne traite de tous les phénomènes dangereux, situations et événements dangereux identifiés par les moyens d'appréciation du risque associés aux trancheurs automatiques et composants auxiliaires s'ils sont utilisés conformément à la réglementation et dans des conditions de mauvaise utilisation raisonnablement prévisibles par le fabricant (voir Article 4).
La présente norme traite des phénomènes dangereux pouvant survenir pendant la mise en service, le fonctionnement, le nettoyage, l'entretien et la mise hors service de la machine.
La présente norme ne s'applique qu'aux trancheurs et composants auxiliaires fabriqués après sa date de publication.
La présente norme s'applique aux trancheurs automatiques et aux composants auxiliaires conçus pour un usage industriel. Ce sont des machines qui sont généralement utilisés dans des entreprises de transformation alimentaire. Normalement, ces machines sont installées à un endroit de façon permanente.
La présente norme ne s'applique pas aux machines à couper dotées de coulisses d'alimentation, aux trancheurs utilisés par exemple dans les magasins, supermarchés, cantines, etc. et qui sont déjà traités dans l'EN 1974.
La présente norme ne s'applique pas aux portionneuses et trancheuses fabriquées et mises sur le marché conformément aux prescriptions spécifiées dans l'EN 13870.
1.2   Description de la machine
La présente norme traite des conceptions suivantes (voir Figures 1 à 7) :
Variations de conception dans la zone d'alimentation :
-   Trancheur à avance manuelle
-   Trancheur à avance automatique
-   Trancheur à avance continue
Variations de conception dans la zone d'évacuation :
-   Trancheur avec courroie d'évacuation, sans dispositif de déversement, et sans autres composants auxiliaires
-   Trancheur avec un dispositif de déversement et, si nécessaire, d'autres composants auxiliaires.
1.3   Conception de la machine
Les trancheurs automatiques sont principalement composés de châssis, de support de produit avec outils de préhension manuels ou automatiques, un support, un compartiment à lame, un dispositif d'évacuation, dispositifs d'entraînement associés et composants électriques, hydrauliques et pneumatiques. D'autres éléments optionnels peuvent être ajoutés.
Les trancheurs automatiques entrant dans le domaine d’application de la présente norme peuvent être équipées des composants auxiliaires suivants :
-   dispositif d’amenée ;
-   accessoire pour intercalaires ;
-   courroie d'évacuation ;
-   dispositif de déversement ;
-   balance de contrôle ;

1.1 Splošno
Ta evropski standard podaja zahteve, povezane z načrtovanjem in gradnjo predvsem nepremičnih strojev za rezanje na rezine ter pomožnih sestavnih delov.
Stroji za rezanje na rezine, ki jih zajema ta standard, se uporabljajo za rezanje in razdeljevanje mesnih izdelkov in klobas, sira ter drugih prehrambnih izdelkov, ki jih je mogoče rezati na rezine z enim ali več rezili. Stroji za rezanje na rezine so zasnovani za rezanje kosov ali rezin.
Za rezanje se uporablja srpasto rezilo ali ekscentrično premikajoče se rezilo. Praviloma se med postopkom rezanja izdelek premika samo po eni osi.
Pomožni sestavni deli, ki jih zajema ta standard, se uporabljajo za odvajanje izdelkov z območja rezanja, tehtanje ali razvrščanje rezin.
Posebne nevarnosti, povezane z ločenimi pomožnimi sestavnimi deli, ki se uporabljajo za samodejno dovajanje mesnega izdelka ter za oblikovanje in pripravo porcij, niso zajete v tem standardu. Ti pomožni sestavni deli morajo ustrezati zahtevam standarda EN ISO 12100:2010, če je to ustrezno.
Ta evropski standard zajema vse bistvene nevarnosti, nevarne okoliščine in nevarne dogodke, identificirane z oceno tveganj, povezanih z avtomatskimi stroji za rezanje na rezine ter pomožnimi sestavnimi deli, če se ti uporabljajo, v skladu s predpisi in pogoji predvidljive napačne uporabe, ki jo je opredelil proizvajalec (glej točko 4).

EN 16743:2016 (E) 14 1.4 Intended use The intended use of automatic industrial slicing machines and auxiliary components, in accordance with this document, in accordance with regulations (as defined in EN ISO 12100:2010, 3.23) is described in 1.1. The product is manually placed on the product base or automatically fed to the product base with a loading device. The product is supplied to the blade by automatic or manually operated grippers or conveyor slide or belt and the cutting process begins.
