Add the following new paragraph before the sentence “This standard also deals with the hygiene aspects of
appliances”:
“Attention is drawn to the fact that:
— for appliances intended to be used in vehicles or on board ships or aircraft, additional requirements can
be necessary;
— in many countries, additional requirements for appliances incorporating pressure vessels are specified;
— in many countries, additional requirements are specified by the national health authorities, the national
authorities responsible for the protection of labour, the national water supply authorities and similar
authorities.
Replace the paragraph starting with “As far as is practicable …”, excluding NOTE 103 and NOTE 104, with

does not take into account the use of the appliances by young children.
It does not take into account also the use of the following appliances by young children without continues
supervision:
— bulk tea or coffee brewing machines;
— espresso coffee makers;

It does not take into account the use of the following appliances by young children and by older children:
— appliances of the professional type”;
Add as a new paragraph:
“This European standard does not deal with any specific requirements on noise emitted from these appliances
is
the generated noise is not considered to be a relevant hazard. Thus, the emission sound pressure level LpA
≤ 70 dB(A).”
considered to be LpA
3 Modifications to Clause 2, “Normative references”
Add the following references:
EN 16889:2016, Food hygiene - Production and dispense of hot beverages from hot beverage appliances -
Hygiene requirements, migration test
4 Modification to Clause 3, “Terms and definitions”
Add the following new terms and definitions:

3.Z101
food
any product, ingredient or material intended to be orally consumed by human or animal
Note Z101 to entry: The definition means food according to Article 2 of Regulation (EC) No. 178/2002 and feed.
3.Z102
food area
machine and machine components surfaces which are exposed to food or from which food or other materials
can drain, drip, diffuse or be drawn into the food
3.Z103
splash area
area composed of surfaces on which part of the food can splash or flow along under intended conditions of
use and does not return into the food
Note 1 to entry: Part of the food in the splash area is no more food in the sense of 3.Z101.
3.Z104
non-food area
any area other than food area or splash area in food processing appliances
3.Z105
cleanable
designed and constructed so that soils can be removed
3.Z106
corrosion resistant material
material resistant to normally occurring action of chemical or electrochemical nature
3.Z107
non-absorbent
material which, under intended conditions of use, does not retain substances with which it comes into contact
3.Z108
non-toxic material
material which does not produce or release substances in quantities injurious to health under intended
conditions of use
3.Z109
easily cleanable
designed and constructed to be cleanable by a simple cleaning method, where necessary after removing
easily dismountable parts
3.Z110
easily accessible
designed and constructed to permit removal, visual inspection and replacement, where necessary after
removing easily dismountable parts
3.Z111
recessed appliance
appliance designed to be installed in a cabinet, in a prepared recess, in a wall or similar location

5 Modification to Clause 7, “Marking and instructions”
7.12.101.1 Addition
Add the following sentence to the first paragraph:
“Cleaning instructions, methods and cleaning agents to be used as well as disinfection instructions shall be
given in the instruction manual.”
Secretary Note: NCs should consider if the above sentence is already covered by the sentence:
Recommended cleaning or disinfecting agents shall be specified, and they may be identified by their
chemical denomination.
6 Modification to Clause 22, “Construction”
Add the following new subclauses:
“22.Z101  Appliances operated in areas with low hygiene risks can deviate from the hygiene requirements
after risks assessments according EN ISO 12100:2010.
NOTE Z101 Low hygiene risks could be such as appliances operated in the counter area where soil is not expected.
Appliance is subjected to the tests from 22.Z102 to 22.Z.104, if applicable.”
22.Z102  Machines are provided either with feet or with a base. The minimum clearance underneath (H)
depends on the access distance (P) and is given in Table Z101. For the determination of the access distance
(P), Figure Z101 applies. These requirements are not applicable for recessed appliances, appliances with
casters which are designed to be moved for cleaning and portable appliances provided that accessibility for
cleaning and cleaning inspections is not impaired.
Table Z101 — Dimensions for clearance underneath (H) and access distance (P)
Access distance    (P) Clearance underneath (H)
P ≤ 120 mm H ≥ 50 mm
120 mm < P ≤ 500 mm H ≥ 75 mm
500 mm < P ≤ 650 mm H ≥ 100 mm
P > 650 mm H ≥ 150 mm
Depending on ergonomic aspects and the cleaning and disinfection procedure smaller clearances underneath
(H) are possible provided that accessibility for cleaning and cleaning inspection is not impaired.
Alternatively, the appliance shall be adequately sealed against the floor or the table. The instruction handbook
shall specify the sealing method. Sealing materials shall be durable. The sealing design shall prevent
penetration of soil, and the sealing shall be cleanable.
Compliance is checked by inspection and measurement.
22.Z103 Surface of the material shall be cleanable.
Appliance is subjected to the tests from 22.Z103.1 to 22.Z.103.2, if applicable.
22.Z103.1 The surfaces of materials shall be cleanable and where required capable of being disinfected,
without breaks, resistant to cracking, chipping, flaking and abrasion, and they shall prevent releasing of
unwanted matter under intended use.
Food area surfaces shall be readily accessible and easily cleanable or shall be designed for in-place cleaning
when a readily accessible design is not feasible.
Splash areas surfaces shall be accessible and easily cleanable.
Compliance is checked by inspection.
NOTE Z101 A surface of a material can be a coating.
22.Z103.2 Surfaces for the food area and surface finish shall be suitable for the intended use.
The design and finish of surfaces shall be such that splashed food is prevented from getting back into
processed food.
Compliance is checked by inspection.
NOTE Z101 EN 1672-2:2020 provides examples.
22.Z104 Material shall not create hazard to the user.
Appliance is subjected to the tests from 22.Z103.1 to 22.Z.103.4, if applicable.
22.Z104.1 Materials in the food area shall meet the requirements of EN 16889:2016.
Compliance is checked according EN 16889:2016.
22.Z104.2 Materials in the food area shall:
— fulfil the general requirements in 22.Z104.1 and in addition they shall be:
— corrosion-resistant;
— non-toxic;
— non-absorbent (except when technically or functionally unavoidable);
— not transfer undesirable odours, colours or taint to the food.
Compliance is checked by inspection and by following test:
NOTE Materials need to be in compliance with Regulation (EC) No 1935/2004. For migration testing, the test
procedure under EN 16889:2016 is considered to be sufficient.
22.Z104.3 Materials in the splash area shall fulfil the general requirements in 22.Z104.1 and in addition
they shall be:
— corrosion-resistant;
— non-toxic;
— non-absorbent (except when technically or functionally unavoidable)
Compliance is checked by inspection.
NOTE Z101 EN 10088-1:2014 provides examples of corrosion resistant materials.
22.Z104.4 Materials in the non-food area shall fulfil the general requirements, exposed surfaces used in
the non-food area shall be made of corrosion-resistant materia
