3 Definitions
For the purposes of this International Standard, the following definitions apply.
3.1 whole quills: Scraped epiderm of the internal bark of cassia shoots that have reached
maturity, rolled into a single or double quill. The quills are washed and dried.
3.2 scraped bark: Bark obtained from the young shoots of cultivated shrubs, and which is
scraped with a curved knife before being removed from the wood.
3.3 unscraped bark: Bark obtained from the young shoots of cultivated shrubs, but unscraped.
3.4 pieces: Product resulting from the trimming, sorting, handling and packing of quills, and
which may be of various sizes, scraped or unscraped.
3.5 ground cassia: Powder obtained by grinding cassia of the types considered in this
International Standard, excluding all additives.
4 Types and classification
4.1 Types
4.1.1 Chinese type cassia (cassia lignea)
This is the bark of branches of Cinnamomum cassia (Nees) ex Blume of the Lauraceae family. It
consists of bark in tubular form, or in simple single quills or in compound double quills.
4.1.2 Indonesian type cassia, Java cassia, Korintje cassia, cassia vera
This is the bark of trunks of Cinnamomum burmanii (C.G. Nees) of the Lauraceae family. It
consists of thin or thick scraped single and double quills of reddish-brown colour.
4.1.3 Vietnamese type cassia
This is the bark, principally of the smaller branches of Cinnamomum loureirii Nees of the
Lauraceae family. It consists of single or double quills.
4.2 Commercial grades
4.2.1 Chinese type cassia
Chinese type cassia occurs in pieces of varying lengths from about 250 mm to 380 mm, and of
diameter about 20 mm. It may be scraped or unscraped and the thickness is usually about 3 mm,

3 Définitions
Pour les besoins de la présente Norme internationale, les définitions suivantes s'appliquent.
3.1  tuyaux entiers
Épiderme gratté de l'écorce interne des pousses de cannelier arrivées à maturité, s'enroulant en un tuyau simple ou
double. Les tuyaux sont lavés et séchés.
3.2  écorce grattée
Écorce obtenue à partir des jeunes pousses des canneliers cultivés, grattée avec un couteau courbe avant de
détacher l'écorce du bois.
3.3  écorce non grattée
Écorce obtenue à partir des jeunes pousses des canneliers cultivés, mais non grattée.
3.4  morceaux
Produit résultant de la taille, du triage, de la manipulation et de l'emballage des tuyaux, qui peut être de dimensions
diverses, gratté ou non gratté.
3.5  cannelle en poudre
Poudre obtenue par broyage de tous les types de cannelles considérés dans la présente Norme Internationale, à
l'exclusion de tout additif.
4 Types et classification
4.1 Types
4.1.1 Cannelle type Chine (Cassia lignea)
Il s’agit de l’écorce des branches de Cinnamomum cassia (Nees) ex Blume de la famille des Lauraceae. Elle
consiste en écorce enroulée en tuyaux simples ou doubles imbriqués.
4.1.2 Cannelle type Indonésie (Java cassia, Korintje cassia, cassia vera)
Il s’agit de l’écorce des troncs de Cinnamomum burmanii (C.G. Nees) de la famille des Lauraceae. Elle consiste en
tuyaux grattés simples ou doubles, plus ou moins fins et de couleur brun rougeâtre.
4.1.3 Cannelle type Viêt-nam
Il s’agit de l’écorce, principalement des petites branches de Cinnamomum loureirii Nees de la famille des
Lauraceae. Elle consiste en tuyaux simples ou doubles.
4.2 Catégories commerciales
4.2.1 Cannelle type Chine
La cannelle type Chine se présente en morceaux de différentes longueurs variant d'environ 250 mm à 380 mm, leur
diamètre étant d'environ 20 mm. Elle peut être grattée ou non grattée, a généralement une épaisseur d’environ
3 mm, mais celle-ci peut aller jusqu'à 6 mm. Elle a une flaveur douce et aromatique, quelquefois astringente.
La cannelle type Chine est classée selon trois catégories (voir le tableau 1).
