This document deals with all significant hazards, hazardous situations and events relevant to derinding , skinning- and membrane removal machines, when they are used as intended and under conditions of misuse which are reasonably foreseeable by the manufacturer (see Clause 4).
This document deals with the hazards which can arise during commissioning, operation, cleaning, use, maintenance and decommissioning of the machine.
The machines described in this standard are used for derinding-, skinning- and membrane removal of meat and fish by cutting at a straight blade and/or cutting with circular blades. Feeding could be done manually or automatically.
Using open derinding-, skinning- and membrane removal machines, the product is guided by hand towards the cutting device.
With automatic derinding-, skinning and membrane removal machines the product is transported by an infeed conveyor against the cutting device. Product with a weight > 25 kg has to be processed by an automatic machine.
Derinding-, skinning-, and membrane removal machines for domestic purposes, hand-guided machines and table-top machines are not covered by this standard.
This document only applies to machines which are manufactured after the date of issue of this document.
This document covers the following types of machines:
a) open derinding machines (see Figure 1 and Figure 2) with infeed table and a distance h between the standing position and the surface of the infeed table from 800 mm to 1 050 mm. The cutting thickness shall be t ≤ 5 mm;
b) open skinning- and membrane removal machines (see Figure 1 and Figure 3) with infeed table and a distance h between the standing position and the surface of the infeed table from 800 mm to 1 050 mm. The cutting thickness shall be t ≤ 0,5 mm.

c) Automatic machines (see Figure 4 and Figure 5), which are charged by an operator, with a distance between the standing position and the surface of the infeed conveyor between 800 mm and 1 050 mm.
Automatic machines which are charged automatically and are integrated in dismantling lines do not have to follow the requirements on the height of the surface of the infeed conveyor (800 mm to 1 050 mm) because the ergonomic matters need not be considered.
Automatic machines could be equipped with different rolls (see Figure 6).

d) Combining machines are designed to be used as automatic or open machines.
Derinding-, skinning- and membrane removal machines consist mainly of a machine frame, tooth roller with stripper comb, hold-down roller with stripper rake, transport roller with stripper roller, cutting

Dieses Dokument behandelt alle signifikanten Gefährdungen, Gefährdungssituationen und Gefährdungsereignisse, die auf Entschwartungs-, Enthäutungs- und Entvliesmaschinen zutreffen, wenn sie bestimmungsgemäß und unter Bedingungen von durch den Hersteller vernünftigerweise vorhersehbaren Fehlanwendungen verwendet werden (siehe Abschnitt 4).
Dieses Dokument behandelt die Gefährdungen, die während Inbetriebnahme, Betrieb, Reinigung, Nutzung, Wartung und Außerbetriebnahme der Maschine auftreten können.
Die von dieser Norm erfassten Maschinen werden für das Entschwarten, Enthäuten und Entvliesen von Fleisch und Fisch durch Trennen mit geraden und/oder kreisförmigen Messereinrichtungen verwendet. Die Zuführung kann manuell oder automatisch erfolgen.
Bei offenen Entschwartungs-, Enthäutungs-und Entvliesmaschinen wird das Produkt von Hand der Schneideinrichtung zugeführt.
Bei automatischen Entschwartungs-, Enthäutungs- und Entvliesmaschinen wird das Produkt über ein Zuführungsband der Schneideinrichtung zugeführt. Produkte mit einem Gewicht von > 25 kg müssen von einer automatischen Maschine verarbeitet werden.
Entschwartungs-, Enthäutungs- und Entvliesmaschinen für den Hausgebrauch sowie handgeführte und Tischmaschinen werden von dieser Norm nicht abgedeckt.
Dieses Dokument gilt nur für Maschinen, die nach dem Ausgabedatum dieses Dokuments hergestellt werden.
Dieses Dokument umfasst folgende Bauarten von Maschinen:
a) offene Entschwartungsmaschinen (siehe Bild 1 und Bild 2) mit Zuführtisch und einem Abstand h zwischen der Standposition und der Oberfläche des Zuführtischs zwischen 800 mm und 1 050 mm. Die Schneiddicke t muss ≤ 5 mm betragen;
b) offene Enthäutungs- und Entvliesmaschinen (siehe Bild 1 und Bild 3) mit Zuführtisch und einem Abstand h zwischen der Standposition und der Oberfläche des Zuführtischs zwischen 800 mm und 1 050 mm. Die Schneiddicke t muss ≤ 0,5 mm betragen.

c) Automatische Maschinen (siehe Bild 4 und Bild 5), die von einem Bediener beschickt werden, mit einem Abstand zwischen der Standposition und der Oberfläche des Zuführungsbands zwischen 800 mm und 1 050 mm.
Automatische Maschinen, die automatisch beschickt werden und in Zerlegestraßen integriert sind, müssen die Anforderungen an die Höhe der Oberfläche des Zuführungsbands (800 mm bis 1 050 mm) nicht erfüllen, weil ergonomische Aspekte nicht berücksichtigt werden müssen.
Automatische Maschinen könnten mit verschiedenen Walzen ausgestattet werden (siehe Bild 6).

d) Kombinierte Maschinen sind für die Verwendung als automatische oder offene Maschinen ausgelegt.
Entschwartungs-, Enthäutungs- und Entvliesmaschinen bestehen hauptsächlich aus Maschinenständer, Zahnwalze mit Abstreiferkamm, Andrückrolle mit Abstreiferrechen, Transportwalze mit Abstreiferwalze, Schneideinrichtung und elektrischen, elektronischen oder pneumatischen Komponenten, abhängig von der Maschinenart.
Entschwartungs-, Enthäutungs- und Entvliesmaschinen können ausgerüstet sein z. B. mit
- Zuführ- und/oder Abführtisch;
- Zuführ- und/oder Abführtransportband;
- Schneideinrichtung;
- Walzen (siehe beispielsweise Bild 6);
- Abstreiferkamm/Abstreiferwalze/Abstreiferrechen.

Le présent document traite de tous les phénomènes dangereux, situations dangereuses et événements dangereux spécifiques aux machines à découenner, éplucher et peler, lorsqu’elles sont utilisées normalement ou dans des conditions de mauvaise utilisation raisonnablement prévisible par le fabricant (voir Article 4).
Le présent document traite des phénomènes dangereux susceptibles de se produire lors de la mise en service, du fonctionnement, du nettoyage, de l’utilisation, de la maintenance et de la mise hors service de la machine.
Les machines décrites dans la présente norme sont utilisées pour découenner, éplucher et peler de la viande et du poisson à l'aide d'une lame droite et / ou de lames circulaires. L’alimentation peut être réalisée manuellement ou automatiquement.
Pour les machines à découenner, éplucher et peler ouvertes, le produit est guidé manuellement vers le dispositif de coupe.
Pour les machines à découenner, éplucher et peler automatiques, le produit est transporté par un tapis d’amenée vers le dispositif de coupe. Les produits d’un poids > 25 kg doivent être traités par une machine automatique.
Les machines à découenner, éplucher et peler à usage domestique, les machines guidées à main et les machines de table ne sont pas couvertes par la présente norme.
Le présent document ne s’applique qu’aux machines fabriquées après la date de publication.
La présente norme couvre les types de machines suivants :
a) machine à découenner ouverte (voir Figure 1 et Figure 2) avec plateau d'amenée et une distance h entre la position debout et la surface du plateau d'amenée comprise entre 800 mm et 1 050 mm. L’épaisseur de coupe doit être t ≤ 5 mm ;
b) machine à éplucher et peler ouvertes (voir Figure 1 et Figure 3) avec plateau d'amenée et une distance h entre la position debout et la surface du plateau d'amenée comprise entre 800 mm et 1 050 mm. L’épaisseur de coupe doit être t ≤ 0,5 mm.

c) les machines automatiques (voir Figure 4 et Figure 5), chargées par un opérateur, avec une distance entre la position debout et la surface du tapis d’amenée comprise entre 800 mm et 1 050 mm.
Les machines automatiques chargées automatiquement et intégrées dans des lignes de démontage ne sont pas soumises aux exigences relatives à la hauteur du tapis d’amenée (comprise entre 800 mm et 1 050 mm), dans la mesure où les questions d’ergonomie ne sont pas à prendre en compte.
Les machines automatiques peuvent être équipées de différents rouleaux (voir Figure 6).

d) les machines combinées sont conçues pour être utilisées en tant que machines automatiques ou ouvertes.
Les machines à découenner, éplucher et peler comprennent principalement un châssis, un rouleau denté avec peigne racleur, un rouleau d'appui avec un râteau racleur, un rouleau de transport avec rouleau racleur, un dispositif à lame, ainsi que des composants électriques, électroniques et / ou pneumatiques en fonction de chaque type de machine.
Les machines à découenner, éplucher et peler peuvent par exemple être équipées des éléments suivants :
- plateau d'amenée et / ou d'évacuation ;
- tapis d'amenée et / ou d'évacuation ;
- dispositif de coupe ;
- rouleaux (par exemple voir Figure 6) ;
- peigne racleur / rouleau racleur / râteau racleur.

Introduction
This document is a type-C-standard as stated in EN ISO 12100:2010.
This document is of relevance, in particular, for the following stakeholder groups representing the
market players with regard to machinery safety:— machine manufacturers (small, medium and large enterprises);
— health and safety bodies (regulators, accident prevention organizations, market surveillance etc.).
Others can be affected by the level of machinery safety achieved with the means of the document by the
above-mentioned stakeholder groups:— machine users/employers (small, medium and large enterprises);
— machine users/employees (e.g. trade unions, organizations for people with special needs);
— service providers, e.g. for maintenance (small, medium and large enterprises);— consumers (in the case of machinery intended for use by consumers).
The above-mentioned stakeholder groups have been given the possibility to participate at the drafting

d) Combining machines are designed to be used as automatic or open machines.
Derinding-, skinning- and membrane removal machines consist mainly of a machine frame, tooth roller
with stripper comb, hold-down roller with stripper rake, transport roller with stripper roller, cutting
device and electrical, electronic, or pneumatic components, depending on the machine type.
Derinding-, skinning- and membrane removal machines can e.g. be equipped with a:— infeed and / or outfeed table;
— infeed and / or outfeed conveyor;
— cutting device;
— rolls (e.g. see Figure 6);
— stripper comb/stripper roller/stripper rake.
