This document covers cube cutting machines and accessories.
This document specifies requirements for the design and manufacture of cubes cutting machines.
The machines covered by this document are used to size reduce fresh meat, meat products and products of the same kind by cutting in a cutting unit. This document deals with all significant hazards, hazardous situations and events relevant to machines, appliances and machinery, when they are used as intended and under conditions of misuse which are reasonably foreseeable by the manufacturer.
This document deals with the hazards which can arise during commissioning, operation, maintenance and de-commissioning of the machine. This document is not applicable to cubes cutting machines which are manufactured before the date of publication of this document by CEN.
This document covers the following types of cubes cutting machines:
- Cubes cutting machines with a forward feed plunger, a lattice and a sickle blade with loading by hand
- Cubes cutting machines with a forward feed plunger, a lattice, a sickle blade, a feed intake hopper and a loading device
- Cubes cutting machines with a rotating cutting tool, a multi-segment blade and a feed conveyor
- Cubes cutting machines with a rotating cutting tool and centrifugal force loading

1.1 Allgemeines
Dieses Dokument behandelt Würfelschneidemaschinen und Zubehör.
Dieses Dokument legt Anforderungen an die Konstruktion und Herstellung von Würfelschneidemaschinen fest (siehe Bilder 1 bis 6 und Bilder 12 bis 18).
Die von diesem Dokument behandelten Maschinen werden für die Zerkleinerung von frischem Fleisch, Fleischprodukten und gleichartigen Lebensmitteln durch Zerschneiden in einem Schneidwerk verwendet.
Dieses Dokument behandelt alle signifikanten Gefährdungen, Gefährdungssituationen und Gefährdungs-ereignisse, die auf die Maschinen, Geräte und Anlagen zutreffen, wenn sie bestimmungsgemäß und unter Bedingungen von durch den Hersteller vernünftigerweise vorhersehbaren Fehlanwendungen verwendet werden (siehe Abschnitt 4).
Dieses Dokument behandelt Gefährdungen, welche während der Inbetriebnahme, des Betriebs, der Wartung und der Außerbetriebnahme der Maschine auftreten können.
Dieses Dokument gilt nicht für Würfelschneidemaschinen, die hergestellt wurden, bevor CEN dieses Dokument veröffentlichte.
1.2 In dieser Norm behandelte Bauarten von Würfelschneidemaschinen
Diese Norm umfasst folgende Bauarten von Würfelschneidemaschinen:
- Würfelschneidemaschinen mit Vorschubstempel, Gatter und Sichelmesser mit Handbeschickung (siehe Bild 2);
- Würfelschneidemaschinen mit Vorschubstempel, Gatter, Sichelmesser, Einfülltrichter und Beschickungs-einrichtung (siehe Bild 1);
- Würfelschneidemaschinen mit umlaufendem Schneidwerkzeug, Mehrsegmentmesser und Zuführband (siehe Bilder 3 und 5);
- Würfelschneidemaschinen mit umlaufendem Schneidwerkzeug und Zuführung durch Zentrifugalkraft (siehe Bild 6).
1.3 Maschinenausführung
Würfelschneidemaschinen bestehen aus einem Maschinenrahmen, einer Einfüllkammer/einem Magazin, einem Vorschubstempel oder einer Andrückwalze, einem Gatter oder einem umlaufendem Schneidwerkzeug, einem Sichel- oder Mehrsegmentmesser, dem zugehörigem Antrieb und elektrischen, hydraulischen und pneumatischen Komponenten, je nach Maschinenart.
Würfelschneidemaschinen können ausgerüstet sein mit:
- einem Deckel über der Einfüllkammer/dem Magazin;
- einem Transportwagen für das Sichelmesser/Mehrsegmentmesser, Schneidmesser und Gatter;
- einer Beschickungseinrichtung;
- einem Zuführband.

1.1 Généralités
Le présent document couvre les machines à couper en cubes et les accessoires.
Le présent document spécifie les prescriptions relatives à la conception et à la fabrication des machines à couper en cubes (voir Figures 1 à 6 et 12 à 18).
Les machines couvertes par le présent document sont utilisées pour couper en morceaux dans une unité de coupe la viande fraîche, les produits carnés et les produits de même nature.
Le présent document traite tous les phénomènes dangereux significatifs, situations et événements dangereux significatifs associés aux machines, aux appareillages et aux mécanismes lorsque ceux-ci sont utilisés dans le cadre de l’utilisation normale et dans les conditions de mauvaise utilisation raisonablement prévisibles par le fabricant (voir Article 4).
Le présent document traite des phénomènes dangereux qui peuvent se produire pendant la mise en service, le fonctionnement, l’entretien et la mise hors service de la machine.
Le présent document ne s’applique pas aux machines à couper en cubes qui sont fabriquées avant la date de publication du présent document par le CEN.
1.2 Types de machines à couper en cubes couvertes par la présente norme
Le présent document couvre les machines à couper en cubes suivantes :
- machines à couper en cubes équipées d’un poussoir, d’une grille de coupe et d’un couteau faucille avec chargement manuel (voir Figure 2) ;
- machines à couper en cubes équipées d’un poussoir, d’une grille de coupe, d’un couteau faucille, d’une trémie d’alimentation et d’un dispositif de chargement (voir Figure 1) ;
- machines à couper en cubes équipées d’un outil de coupe rotatif, d’une lame multi-segments et d’un convoyeur d’alimentation (voir Figures 3 et 5) ;
- machines à couper en cubes équipées d’un outil de coupe rotatif et d’un chargement par force centrifuge (voir Figure 6).
1.3 Conception de la machine
Les machines à couper en cubes sont constituées d’un châssis, d’une chambre d’alimentation/ d’un magasin, d’un poussoir ou rouleau d’entraînement, d’une grille de coupe ou d’un outil de coupe rotatif, d’un couteau faucille ou d’une lame multi-segments, d’une commande associée et de composants électriques, hydrauliques et pneumatiques, selon le type de machine.
Les machines à couper en cubes couvertes par le domaine d’application du présent document peuvent être équipées :
- d’un couvercle placé au-dessus de la chambre d’alimentation/ du magasin ;
- d’une nacelle de transfert pour le couteau faucille / la lame multi-segments, la lame de coupe et la grille de coupe ;
- d’un dispositif de chargement ;
- d’un convoyeur d’alimentation.

The machinery concerned and the extent to which hazards, hazardous situations and events are covered are indicated in the scope of this document. When provisions of this type C standard are different from those which are stated in type A or B standards, the provisions of this type C standard take precedence over the provisions of the other standards, for machines that have been designed and built according to the provisions of this type C standard. EN 13871:2014 (E) 6 1 Scope 1.1 General This European Standard covers cube cutting machines (see Figure 1 to Figure 6 and Figure 12 to Figure 18) and specifies requirements for the design and manufacture. The machines covered by this European Standard are used to size reduce fresh meat, meat products and products of the same kind (e.g. fish, vegetables and cheese) by cutting in a cutting chamber. This European Standard deals with all significant hazards, hazardous situations and events relevant to machines, appliances and machinery, when they are used as intended and under conditions of misuse which are reasonably foreseeable by the manufacturer (see Clause 4). This European Standard deals with the hazards which can arise during all the lifetime of the machine, including the phases of transport, assembly, operation, maintenance, dismantling, disabling and scrapping of the machine. This European Standard is not applicable to cubes cutting machines which are manufactured before the date of publication of this document by CEN. 1.2 Types of cube cutting machines covered by this standard This European Standard covers the following types of cubes cutting machines: — cubes cutting machines with a forward feed plunger, a lattice and a sickle/multi-segment blade with loading by hand (see Figure 2); — cubes cutting machines with a forward feed plunger, a lattice, a sickle/multi-segment blade, a feed intake hopper and a loading device (see Figure 1); — cubes cutting machines with a rotating cutting tool, a sickle/multi-segment blade and a feed conveyor (see Figure 3 and Figure 5); — cubes cutting machines with a rotating cutting tool and centrifugal force loading (see Figure 6); — cubes cutting machines with or without integrated conveyor systems. 1.3 Machine construction Cubes cutting machines are constructed of a machine frame, a feed intake chamber/magazine, a forward feed plunger or nip roller, a lattice or a rotating cutting tool, a sickle/multi-segment blade, an associated drive and electrical, hydraulic and pneumatic components, depending on machine type. Cubes cutting machines in the scope of this European Standard may be equipped with: — a lid over the feed intake chamber/magazine; — a transfer car for the sickle /multi-segment blade, cutting blade and lattice; — a loading device; — a feed conveyor. Figure 11 — Danger zones on cubes cutting machine with multi-segment blade and loading by means of centrifugal force 5 Safety and hygiene requirements and/or protective measures 5.1 General Cubes cutting machines shall comply with the safety requirements and/or protective measures of this clause and Annex C of this document. In addition, they shall be designed according to the principles of EN ISO 12100 for hazards relevant but not significant, which are not dealt with by this document (e.g. sharp edges). The safety related parts of the control system shall present at least a performance level “c” in accordance with EN ISO 13849-1. 5.2 Mechanical hazards 5.2.1 General The interlocking devices shall be built inside the machine housing and shall comply with EN ISO 14119:2013, 4.2 and Clause 7. After activating an interlocking device the stopping time of the blade shall be ≤ 0,15 s. Hazardous after-run of tools shall be prevented by braking devices or other solutions with equivalent effect. Braking devices shall become automatically effective upon switching off the drive and in the event of a voltage failure and upon opening of the protective devices. SIST EN 13871:2015
EN 13871:2014 (E) 18 In the instruction handbook, the manufacturer shall indicate the daily verification of the interlocking device. Fixing systems for fixed guards or for demountable parts of the machine casing (i.e. designed as fixed guards) shall remain attached to the guards or to the machine when the guards are removed. 5.2.2 Measures on cubes cutting machines with a forward feed plunger, a lattice and sickle blade and loading by hand 5.2.2.1 Zone 1 – Feed intake chamber (magazine) with forward feed plunger, feed intake hopper with closure gate, feed conveyor, nip roller Access shall be prevented either by a movable guard (e.g. restrictor plate, lid), interlocked according to 5.2.1 or shall be secured by a non-detachable restrictor plate or adequate safety distances and design as described in 5.2.3.3.
