Food processing machinery - Circular saw machines - Safety and hygiene requirements

This European standard specifies requirements for the design and manufacture of circular saw machines (see Figures 1 and 2). The machines covered by this standard are used to cut bone. The circular saw machines covered by this standard do not include circular saw machines for processing of wood or similar materials. This standard covers the following type of circular saw machine - with a fixed table; - with a hinged product pusher (see Figure 1).

Diese Europäische Norm spezifiziert Anforderungen an die Konstruktion und Herstellung von Kreissägemaschinen (siehe Bilder 1 und 2).
Die von dieser Europäischen Norm behandelten Maschinen werden zum Schneiden von Knochen und Fleisch verwendet.
Die in dieser Europäischen Norm behandelten Kreissägemaschinen sind keine Kreissägemaschinen zum Bearbeiten von Holz und ähnlichen Materialien und die in EN 1870-1:1999 beschriebenen Anforderungen gelten nicht.
Kreissägemaschinen für den Hausgebrauch werden von dieser Europäischen Norm nicht behandelt.
Diese Europäische Norm gilt nur für Maschinen, die nach dem Ausgabedatum dieser Europäischen Norm erstellt werden.
Diese Europäische Norm behandelt folgende Bauarten von Maschinen:
Kreissägemaschinen mit Zuführtisch und fest angebrachtem Materialdrücker:
   Der Abstand "A" zwischen Fußboden und Fläche des Zuführtisches zwischen 800 mm und 1 050 mm. Der Durchmesser des Sägeblattes liegt zwischen 350 mm und 400 mm (siehe Bild 1).
   Kreissägemaschinen, eingebaut in eine Zerlegeanlage (z. B. Transportband oder Rollenbahn), z. B. mit anhebbarem Schutzteil an der Zuführ- und Abführseite. Der Durchmesser des Sägeblattes liegt  zwischen 350 mm und 400 mm (siehe Bild 2).

La présente Norme européenne spécifie les prescriptions relatives a la conception et a la fabrication de scies circulaires (voir les Figures 1 et 2).
Les machines concernées par la présente Norme européenne sont utilisées pour couper des os et de la viande.
Les scies circulaires couvertes par la présente Norme européenne ne sont pas des scies circulaires destinées a scier du bois et d'autres matériaux et les prescriptions de l'EN 1870-1 ne s'appliquent pas.
Les scies circulaires a usage domestique ne sont pas incluses dans la présente Norme européenne.
La présente Norme européenne s'applique uniquement aux machines fabriquées apres sa date de publication.
La présente Norme européenne couvre les types de machines suivants :
Les scies circulaires ayant une table d'alimentation et un poussoir articulé fixe.
3 La distance A allant du sol a la face supérieure de la table d'alimentation est comprise entre 800 mm et 1050 mm. Le diametre de la lame de scie est compris entre 350 mm et 400 mm (voir Figure 1).
3 Les scies circulaires intégrées dans une ligne de découpe (par exemple convoyeur a bande ou a rouleaux) par exemple ayant un dispositif de protection qui peut etre relevé coté alimentation et coté évacuation. Le diametre de la lame de scie est compris entre 350 mm et 400 mm (voir Figure 2).
Les scies circulaires comprennent un bâti, une table d'alimentation fixe et rabattable, un poussoir, un capot de protection qui peut etre relevé, une lame de scie, un systeme d'entraînement et des composants électriques, selon le type de machine.
Les scies circulaires montées sur un bâti peuvent etre montées sur roulettes (voir Figure 1).
Les utilisations normales de la machine sont décrites a l'article 7.
Pour les scies circulaires posées sur le sol (voir Figure 3), la matiere a scier est posée manuellement sur la table d'alimentation, puis poussée avec le poussoir contre la zone de coupe de la lame de scie et coupée par cette derniere.

This document (EN 12267:2003) has been prepared by Technical Committee CEN TC 153 “Food processing
machinery – Safety and hygiene requirements”, the secretariat of which is held by DIN.
It has been prepared by Working Group 2 "Meat Processing Machinery" of CEN/TC 153.
This European Standard shall be given the status of a national standard, either by publication of an identical text or
by endorsement, at the latest by October 2003, and conflicting national standards shall be withdrawn at the latest
by October 2003.
This document has been prepared under a mandate given to CEN by the European Commission and the European
Free Trade Association, and supports essential requirements of EC Directive(s).
For relationship with EC Directives, see informative Annex ZA, which is an integral part of this document.
It is one of a series of standards which have been prepared for machines and equipment for meat processing in

This European Standard covers
Circular saw machines standing on the floor and
Circular saw machines installed in a cutting line.
The extent to which hazards are covered is indicated in this European Standard. For other hazards which are not
covered by this European Standard, machinery should comply with EN 292 where applicable.

1 Scope
This European Standard specifies requirements for the design and manufacturing of circular saw machines (see
Figures 1 and 2).
The machines covered by this European Standard are used to cut bone and meat.
The circular saw machines covered by this European Standard do not include circular saw machines for processing
of wood and similar materials and the requirements of EN 1870-1 do not apply.
Circular saw machines for domestic use are not included in this European Standard.
This European Standard applies only to machines which are manufactured after the date of issue of this European
Standard.
This European Standard covers the following types of machines:
Circular saw machines with a feed table and a fixed product pusher
The distance „A“ from the floor to the top surface of the feed table is from 800 mm to 1050 mm. The saw blade
diameter is between 350 mm and 400 mm (see Figure 1).
Circular saw machines installed in a cutting line (e.g. conveyor belt or roller conveyor), e.g. with a protective
component which can be lifted on the feed and discharge side. The saw blade diameter is between 350 mm
and 400 mm (see Figure 2).

Circular saw machines comprise a machine base, a fixed, foldable feed table, a product pusher, a protective hood
which can be lifted, a saw blade, a drive and electrical components, depending on machine type.
Circular saw machines with a machine base can be wheel-mounted (see Figure 1).
The intended uses of the machines are described in clause 7.
On floor-type circular saw machines (see Figure 3) the product to be cut is placed by hand onto the feed table and
pushed against the cutting zone of the saw blade by means of the product pusher and sawed.
On circular saw machines which are installed in a cutting line (see Figure 4) the product to be cut is pushed by
hand via the conveyor belt or roller conveyor against the cutting zone of the saw blade and sawed.

4 List of hazards
4.1 General
This clause and annex C (normative) contain the hazards and hazardous situations based upon EN 1050:1996 as
far as they are dealt with in this European Standard, identified by a risk assessment significant for circular saw
cutting machines, and actions to eliminate or reduce risk.
Before using this standard it is important to carry out a risk assessment of the cutting machine to check that it has
the hazards identified in this clause.

4.3.1 Direct or indirect contact with life parts

5 Safety requirements and/or measures
5.1 General
Circular saws for meat and bone shall comply with the safety requirements and/or protective measures of this
clause and annex C. In addition, they shall be designed according to the principles of EN 292 for hazards relevant
but not significant, which are not dealt with by this document (e.g. sharp edges).
NOTE For hazards which are to be reduced by the application of another standard such as EN 294, EN 953, EN 1672-2,
and EN 60204-1, the manufacturer should carry out a risk assessment to establish the requirements of that
standard which are to be applied. This specific risk assessment is part of the general risk assessment of the saw.
Where the means of reducing the risk is by the physical arrangement or positioning of the installed circular saw the
manufacturer shall include in the Information for use a reference to the reduction means to be provided, and to any
limiting value of the requirement, and, if appropriate, to the means of verification.
Where the means of reducing the risk is by a safe system of working the saw, the manufacturer shall include in the
information for use details of the system and of the elements of training required by the operating personnel.
5.2 Mechanical hazards
5.2.1 Circular saw machines with feed table and fixed product pusher
5.2.1.1 Protection of saw blade
Zone 1
Access to the cutting zone on the saw blade shall be prevented. This can be achieved e.g. by the following
measures:
A movable product pusher with a handle shall be permanently fixed to the protective hood of the saw blade. The
product pusher shall be designed so that it automatically falls back into its protective position by its own dead
weight. It shall not be possible for the pusher to make contact with the cutting-edge of the saw blade.

The distance „A1“ between product pusher in protective position and feed table shall be < 6 mm (see Figure 5).
Zone 2
Access to the teeth of the saw blade outside of the cutting zone and above the feed table shall be prevented. This
can be achieved e.g. by the following measures:
Except for the cutting zone of the saw blade, a guard (e.g. a fixed protective hood) shall be provided above the
feed table (see Figure 5). It shall be possible to replace the saw blade without removal of the protective hood and
the product pusher.
If the protective hood with the product pusher is removable it shall be interlocked.
The interlocking system of the protective hood shall conform to the requirements described in 5.2.1.2.
After actuation of the interlocking switch of the protective hood the blade should come to a standstill as soon as is
possible, but the time taken shall not exceed 4 s.

Access to the saw blade below the feed table shall be prevented. This can be achieved e.g. by the following
measures:
A fixed protection bar or a closed machine casing shall be provided on the circumference of the saw blade (see
Figure 6). The feed table may be foldable and interlocked. The chip pan or a chip removal flap shall be interlocked
on machines without protection bar. The saw blade shall come to a standstill within 4 s after actuation of the
interlocking switches.
For requirements relating to the interlocking system of the feed table, chip pan and chip removal flap, see 5.2.1.2.

5.2.1.2 Interlocking devices
The interlocking system shall comply with 4.2.1 of EN 1088:1995, and the safety-related components of the control
system shall comply with 6.2.2, category 1 of EN 954-1:1996.
The interlocking device shall be built inside of the machine housing in order to
fulfil hygienic requirements,
protect against mechanical damages,
protect against the effects of cleaning and disinfection materials,
protect against the effects of cleaning fluids (water),
protect against defeating by simple methods,
and comply with 5.7 of EN 1088:1995.
In the instruction handbook, the manufacturer shall indicate the need for regular verification of the interlocking
devices, and for the user to determine the frequency of verification depending upon the usage of the machine.
5.2.2 Circular saw machine in cutting line
Zones 1 and 2
Access to the saw blade at the cutting zone and discharge side above the feed plane (transport device) shall be
prevented. This can be achieved e.g. by the following measures:
A guard (e.g. a protective hood) shall be provided on the feed and discharge side above the feed plane (transport
device). When lifted, the protective hood may expose the cutting zone as well as the product discharge zone and
shall automatically revert to its protective position by its own dead weight (see Figure 7).
If the protective hood is removable, it shall be interlocked. The saw blade shall come to a standstill within 4 s after
actuation of the interlocking switch of the protective hood.
For requirements relating to the interlocking system of the removable protective hoods, see 5.2.1.2.

Zone 3
Access to the saw blade below the feed plane (transport device) shall be prevented. This can be achieved e.g. by
the following measures:
A system of guards (for example a closed machine casing) with a chip pan shall be provided. The chip pan shall be
interlocked. The saw blade shall come to a standstill within 4 s after actuation of the interlocking switch of the chip
pan (see Figure 1).
For requirements relating to the interlocking system of the chip pan, see 5.2.1.2.

Access to the danger points on the drive system shall be prevented. This can be achieved e.g. by the following
measures:
Guards (e.g. doors) in accordance with 3.2 of EN 953:1997 shall be provided on the drive mechanism, which may
be fixed or interlocked.
If guards are removable e.g. for changing the operating process or for cleaning purposes, they shall be interlocked.
For requirements relating to the interlocking system of guards, see 5.2.1.2
5.3 Electrical hazards
5.3.1 General
The electrical equipment shall comply with EN 60204-1 with the following qualifications.
5.3.1 Stopping function of switching devices
The stopping function of switching devices shall be in accordance with 9.2.2, category 0 of EN 60204-1:1997.
Circular saw machines intended for use in a cutting line shall be provided with a means to visually or audibly warn
of it ceasing to function under the operation of a safety device, or, shall be fitted with a means capable of
interrupting the electrical supply to other elements in the cutting line. Details shall be included in the Information for
use.
5.3.2 Emergency stop-device
The OFF switch shall be easily reachable from the operator position.
NOTE An emergency stop device need not be installed for circular saws conforming to this standard.
5.3.3 Protection against water ingress
5.3.3.1 IP degrees of protection
Electrical operating components shall comply with the following degrees of protection in accordance with
EN 60529:
IP X5 External electrical operating components
on the machine,
on the control box on the machine,

on the control box located in the process room.
IP X3 Internal electrical operating components
in the machine with enclosed housing with the degree of protection IP X5 and open lower surface.
Protection against direct and indirect impact of a water jet shall be assured.
IP X2 Internal electrical operating components
in a machine with completely enclosed housing with the degree of protection IP X5. Protection against
condensate water shall be provided.
in the control box enclosure.
IP X0 Internal electrical operating components
in a machine with completely enclosed housing with the degree of protection IP X5. Protection against
condensate water shall be provided, and the safety of fingers and the back of hand be assured.
5.3.3.2 Hoods
Ingress of water into the external electrical operating components shall be prevented. This can be achieved e.g. by
the following measures:
the electrical operating components shall be covered by hoods, and,
a statement shall be included in the instruction handbook.
NOTE It is not intended that circular saw machines are cleaned with pressurized water. However, it is difficult to guarantee that
this method will never be used in practice, and the requirements in this clause are included to reduce electrical risks.
Hoods covering the external operating components may be lifted for actuating ON and OFF switches. Hoods shall
not, when closed, restrict the use of the OFF switch (see Figure 9). When using membrane switches or similar
systems, no hoods are needed if the membrane switch or similar systems are suitable for cleaning with pressurized
water.

5.3.4 ON and OFF-switch
On circular saw machines, ON and OFF-switches shall be provided. The switches should be arranged on the
operator side of machines (see Figure 1). The ON-switch shall be protected against unintentional switch-on (e.g. by
protective collar).
5.3.5 Electromagnetic compatibility test (see 4.4.1 of EN 60204-1:1997)
If electrical/electronic components are used, the manufacturer shall ensure that the equipment does not produce
any electromagnetic disturbances above the levels specified in EN 61000-6-3 or EN 61000-6-4 as selected by the
manufacturer to be appropriate for the intended place of use. Moreover, it shall also have sufficient immunity to
electromagnetic disturbances to enable it to operate safely as intended and shall not fail to danger when exposed
to the levels and types of disturbance as specified in EN 61000-6-1 or EN 61000-6-2.
This requirement can be deemed to have been met if the manufacturer selects and uses only components that
have been marked as conforming to the EMC Directive and shall apply them in accordance to the supplie
