Overview
Standard Reference: EN 60335-2-38:2003/A11:2024
This CENELEC amendment specifies particular safety requirements for commercial electric griddles and griddle grills (appliances for professional kitchens). It supplements EN 60335-1 and earlier Part 2‑38 editions, and was approved by CLC/TC 61 on 2024‑08‑07. The amendment covers foreseeable hazards in and around installation sites and sets additional requirements for commercial use, hygiene and ergonomics. National implementation deadlines are indicated (dop 2025‑05‑15; dow 2027‑11‑15).
Key Topics and Requirements
Scope & Intended Users
- Applies to commercial electric griddles/griddle grills and machines with power‑driven parts intended for trained users or declared for commercial use.
- Clarifies that the standard does not generally address children’s use or extreme vulnerabilities.
Safety & Construction
- Modifications to protection against access to live parts (reference to test probe 18: only applicable when installed in areas open to the public).
- Stability and mechanical hazards: movement of lifting mechanisms must not cause injury; crushing/shearing safe limits referenced (surface pressure, force, energy).
- Construction additions: fluid category classification per EN 61770 - Fluid Category 2 for appliances without cleaning systems; Category 3 if a cleaning system is present.
Ergonomics & Controls
- Working height for griddle plates: 695–980 mm.
- Rear edge max distance: 850 mm from front edge.
- Operator controls: minimum height 350 mm, clearly visible, reachable, and protected against accidental actuation.
Marking, Instructions & Training
- Instructions must state intended use, maximum empty weight, maintenance/repair requirements, and stability conditions.
- Warning on noise: A‑weighted emission sound pressure level declared as LpA ≤ 70 dB(A).
- Manuals must include foreseeable misuse scenarios, PPE recommendations, and warnings (e.g., slippery floors).
Hygiene (Annex ZAA)
- Hygiene rules align with EN 1672‑2 with specific food/splash/non‑food area categorizations and temperature‑based exceptions (requirements may be waived when surfaces reach ≥82 °C or fasteners where temperatures exceed 100 °C, subject to manufacturer documentation).
Annex ZE (Commercial Use)
- Additional marking/instruction requirements for commercial operation, operator training, maintenance safety and noise declarations.
- Durability tests for guards/interlocks (e.g., 5 000 cycles at 5 cycles/min).
Applications and Who Uses It
- Manufacturers and designers of commercial electric griddles and griddle grills for restaurants, hotels, canteens, hospitals, bakeries and catering services.
- Product safety engineers, compliance officers, test laboratories, notified bodies and national standards committees ensuring CE/market compliance.
- Technical writers preparing manuals to meet marking, hygiene and ergonomic instructions required by the standard.
Related Standards
- EN 60335‑1 (general household appliance safety)
- EN 60335‑2‑38:2003 + previous amendments
- EN 61770 (fluid categorization)
- EN 1672‑2 (hygiene in food machinery)
- IEC/ISO references listed in Annex ZC (e.g., IEC 60584‑1, ISO 3506 series)
This amendment is essential for achieving regulatory compliance and safe, hygienic design of commercial griddles - integrate its ergonomic, hygiene and marking requirements early in product design and documentation.
