ISO 8589:2007 provides general guidance for the design of test rooms intended for the sensory analysis of products.
It describes the requirements to set up a test room comprising a testing area, a preparation area, and an office, specifying those that are essential or those that are merely desirable.
ISO 8589:2007 is not specific for any product or test type.
Although many of the general principles are similar, ISO 8589:2007 does not address test facilities for the specialized examination of products in inspection or in-plant quality-control applications.

Diese Internationale Norm enthält einen allgemeinen Leitfaden für die Gestaltung von Prüfräumen, die für die sensorische Analyse von Prüfmaterialien vorgesehen sind.
Sie beschreibt die Anforderungen an die Einrichtung eines Prüfraums, der einen Prüfbereich, einen Vor-bereitungsbereich und ein Büro umfasst, wobei festgelegt wird, welche Anforderungen grundlegend und welche lediglich wünschenswert sind.
Diese Internationale Norm ist nicht für ein Prüfmaterial oder eine Art der Prüfung spezifisch.
ANMERKUNG Der Prüfraum kann für Lebensmittel- und Nicht-Lebensmittel-(Non-Food-)Erzeugnisse, die unter Anwen¬dung sensorischer Verfahren bewertet werden, ähnlich sein. Die Prüfräume müssen jedoch möglicherweise für jede spezielle Nutzung angepasst werden. Veränderungen der Gestaltung sind oft nur bei speziellen Prüfmaterialien und für spezielle Arten der Prüfung notwendig. Das trifft besonders dann zu, wenn die Prüfräume für die Bewertung von Non-Food-Erzeugnissen genutzt werden sollen.
Obwohl sich viele der allgemeinen Prinzipien gleichen, behandelt diese Internationale Norm keine Prüfein-richtungen für die spezielle Untersuchung von Prüfmaterialen bei der Inspektion oder der werksinternen Qualitätskontrolle.

L'ISO 8589:2007 donne des directives générales pour la conception de locaux destinés à l'analyse sensorielle de produits.
Elle décrit les exigences à respecter pour l'implantation d'une installation composée d'un local d'essai, d'un local de préparation et d'un bureau, en précisant ce qui est essentiel ou bien ce qui est simplement souhaitable.
L'ISO 8589:2007 n'est pas propre à un produit ou à un type d'essai.
Bien que de nombreux principes d'essai soient identiques, la présente Norme internationale ne traite pas des installations d'essai destinées à un examen spécialisé de produits dans le cadre d'applications d'inspection ou de plans de contrôle de la qualité en usine.

Ta mednarodni standard zagotavlja splošna navodila za načrtovanje prostorov za preskušanje, namenjene za senzorično analizo proizvodov. Opisuje zahteve za postavitev preskusne sobe, ki sestoji iz preskusnega območje, območja za pripravo in pisarne ter opredeljuje tiste, ki so osnovne ali tiste, ki so samo zaželene. Ta mednarodni standard ni posebej namenjen za katero koli vrsto proizvoda ali preskusa. OPOMBA: Preskusni prostor je lahko podoben za prehrambene in neprehrambene proizvode, ki se ocenjujejo s senzorično metodo. The text of ISO 8589:2007 has been prepared by Technical Committee ISO/TC 34 “Food products” of the
International Organization for Standardization (ISO) and has been taken over as EN ISO 8589:2010.
This European Standard shall be given the status of a national standard, either by publication of an identical
text or by endorsement, at the latest by August 2010, and conflicting national standards shall be withdrawn at
the latest by August 2010.

Foreword
ISO (the International Organization for Standardization) is a worldwide federation of national standards bodies
(ISO member bodies). The work of preparing International Standards is normally carried out through ISO
technical committees. Each member body interested in a subject for which a technical committee has been
established has the right to be represented on that committee. International organizations, governmental and
non-governmental, in liaison with ISO, also take part in the work. ISO collaborates closely with the
International Electrotechnical Commission (IEC) on all matters of electrotechnical standardization.
International Standards are drafted in accordance with the rules given in the ISO/IEC Directives, Part 2.
The main task of technical committees is to prepare International Standards. Draft International Standards

Sensory analysis — General guidance for the design of test
rooms
1 Scope
This International Standard provides general guidance for the design of test rooms intended for the sensory
analysis of products.
It describes the requirements to set up a test room comprising a testing area, a preparation area, and an office,
specifying those that are essential or those that are merely desirable.
This International Standard is not specific for any product or test type.
NOTE The test space can be similar for food and non-food products that are evaluated using sensory methods.
However, the test rooms might need to be adapted for each specialized use. Modifications to the design are often needed
for specific products and for specific types of testing. This is particularly true if the test rooms are to be used for the
evaluation of non-food products.
Although many of the general principles are similar, this International Standard does not address test facilities
for the specialized examination of products in inspection or in-plant quality-control applications.

4 Principle
The test rooms are designed
⎯ to conduct sensory evaluations under known and controlled conditions with a minimum of distractions,
and
⎯ to reduce the effects that psychological factors and physical conditions can have on human judgement.

5 Creation of test rooms
The creation of test rooms intended for sensory analysis differs, depending on whether a new building or an
existing facility is used.
A typical test facility comprises the following:
⎯ a testing area in which work may be carried out individually in testing booths or in groups;
⎯ a preparation area;
⎯ an office;
⎯ a cloakroom and toilets;
⎯ a storage room for supplies;
⎯ a storage room for samples;
⎯ a waiting room for assessors.
The minimum requirements are
⎯ a testing area in which work may be carried out individually in testing booths or in groups, and
⎯ a preparation area.
The test room should be easily accessible to the assessors and should not be located in an area where there
is a heavy traffic flow (for example, near a cafeteria), unless arrangements have been made to reduce noise
and distraction. Reasonable arrangements should also be made for accessibility to the area by those with
physical disabilities.
An area for assessors to gather or wait prior to entering the panel room is desirable. The organization of the
areas should be easily accessible for cleaning and should allow for good conditions of hygiene.

6 Testing area
6.1 General requirements
6.1.1 Location
The testing area should be located near the preparation area. The areas should be close enough to each
other to facilitate sample presentation, but the areas should be separate to reduce interference, such as from
