Rice — Specification

ISO 7301:2011 gives the minimum specifications for rice (Oryza sativa L.) which is subject to international trade. It is applicable to the following types: husked rice and milled rice, parboiled or not, intended for direct human consumption. It is neither applicable to other products derived from rice, nor to waxy rice (glutinous rice).

1 Область применения
В настоящем международном стандарте устанавливаются минимальные технические условия для
риса (Oryza sativa L.), который является предметом международной торговли. Стандарт
распространяется на следующие типы: обрушенный рис и шлифованный рис, пропаренный или
непропаренный, независимо от непосредственного потребления человеком. Он не относится к другим
продуктам, полученным из риса, а также к восковому рису (клейкий рис).

4 Технические условия
4.1 Общие, сенсорные и санитарно-гигиенические характеристики
Ядра риса, обрушенные или шлифованные, ломаные или цельные, должны быть доброкачественными,
чистыми и свободными от посторонних запахов, которые являются признаком порчи. Они также
должны быть свободны от токсических или других вредных веществ.
Уровень добавок, пестицидов и других загрязняющих примесей не должен превышать максимальных
пределов, допускаемых национальными регламентами страны назначения или, при их отсутствии,
[8] [9] [10]
CAC/MRL 1 и соответствующей базой данных, CAC/MRL 2 и CAC/MRL 3 (разработанными
FAO/WHO Codex Alimentarius).
Живые насекомые, различаемые невооруженным глазом, не должны присутствовать.
4.2 Физические и химические характеристики
4.2.1 Массовая доля влаги не должна превышать 15,0 %.
ПРИМЕЧАНИЕ Более низкое содержание влаги может потребоваться для некоторых мест назначения в

ISO 6322-2 и ISO 6322-3 .
4.2.2 Физические характеристики определяются согласно методу, установленному в Приложении A,
и не должны превышать пределов, указанных в Таблице 1.
4.3 Условия контракта
Во всех коммерческих контрактах должно быть четко заявлено:
a) общее процентное содержание допустимых ломаных ядер, классифицируемых по согласованным
категориям, и относительная доля каждой категории;
b) общее допустимое процентное содержание, не превышающее максимальных значений для
характеристик в Таблице 1, определенных согласно методу, описанному в Приложении A.
Если контракт имеет дело с конкретным видом риса или с конкретными разновидностями риса, то для
того, чтобы оценить однородность партии, в контракте может устанавливаться средняя длина ядра и
соответствующий коэффициент изменчивости, определенные согласно A.4.3.2 и A.4.3.3 соответственно.
Технические условия определяют согласно методу, описанному в Приложении A.

5 Методы испытания
Содержание влаги определяют согласно ISO 712.
Другие испытания проводят с использованием методов, установленных в Приложениях A и B.
6 Упаковка
Упаковочный материал не должен передавать никакой запах или привкус и не должен содержать
веществ, которые могут повредить продукт или представлять риск для здоровья. Если используются
мешки, они должны быть чистые, достаточно крепкие и хорошо зашиты или герметизированы.

Foreword
ISO (the International Organization for Standardization) is a worldwide federation of national standards bodies
(ISO member bodies). The work of preparing International Standards is normally carried out through ISO
technical committees. Each member body interested in a subject for which a technical committee has been

This International Standard gives the minimum specifications for rice (Oryza sativa L.) which is subject to

4 Specifications
4.1 General, sensory and health specifications
Kernels of rice, husked or milled, broken or not, shall be sound, clean and free from foreign odours or odour
which indicates deterioration. They shall also be free from toxic or any harmful matter.
The level of additives and pesticides and other contaminants shall not exceed the maximum limits permitted

by the national regulations of the country of destination or, in their absence, by CAC/MRL 1 and associated
[9] [10]
database, CAC/MRL 2 , and CAC/MRL 3 (developed by FAO/WHO Codex Alimentarius).
Living insects which are visible to the naked eye shall not be present.

4.2 Physical and chemical specifications
4.2.1 The mass fraction of moisture shall be not greater than 15,0 %.
NOTE Lower moisture contents can be required for certain destinations depending on the climate, duration of

transport and storage. For further details, see ISO 6322-1 , ISO 6322-2 , and ISO 6322-3 .
4.2.2 The physical specifications shall be determined in accordance with the method specified in Annex A
and shall not exceed the limits given in Table 1.
4.3 Contract specifications
All commercial contracts shall show clearly the:
a) total percentage of broken kernels permitted, classified according to the agreed categories, and the
relative proportion of each category;
b) total percentage permitted, not exceeding the maximum values for the specifications detailed in Table 1,
determined in accordance with the method described in Annex A.
If the contract deals with a specific kind of rice or a specific variety of rice, in order to evaluate the
homogeneity of the lot, the contract can specify both the average length and its related coefficient of variation,
determined according to A.4.3.2 and A.4.3.3, respectively.
Specifications shall be determined in accordance with the method described in Annex A.
5 Test methods
The moisture content shall be determined in accordance with ISO 712.
The other tests shall be carried out using the methods specified in Annexes A and B.
6 Packaging
The packaging material shall not transmit any smell or taste and shall not contain substances which may
damage the product or constitute a health risk. If bags are used, they shall be clean, sufficiently strong and
well stitched or sealed.

Foreword
ISO (the International Organization for Standardization) is a worldwide federation of national standards bodies
(ISO member bodies). The work of preparing International Standards is normally carried out through ISO
technical committees. Each member body interested in a subject for which a technical committee has been

Rice — Specification
1 Scope
This International Standard gives the minimum specifications for rice (Oryza sativa L.) which is subject to
international trade. It is applicable to the following types: husked rice and milled rice, parboiled or not,
intended for direct human consumption. It is neither applicable to other products derived from rice, nor to waxy
rice (glutinous rice).

Avant-propos
L'ISO (Organisation internationale de normalisation) est une fédération mondiale d'organismes nationaux de
normalisation (comités membres de l'ISO). L'élaboration des Normes internationales est en général confiée
aux comités techniques de l'ISO. Chaque comité membre intéressé par une étude a le droit de faire partie du
comité technique créé à cet effet. Les organisations internationales, gouvernementales et non
gouvernementales, en liaison avec l'ISO participent également aux travaux. L'ISO collabore étroitement avec

Riz — Spécifications
1 Domaine d'application
La présente Norme internationale fixe les spécifications minimales pour le riz (Oryza sativa L.) faisant l'objet
d'un commerce international. Elle est applicable aux types de riz suivants: riz décortiqué et riz usiné, étuvé ou
non, destiné à l'alimentation humaine. Elle n'est pas applicable à d'autres produits dérivés du riz, ni au riz
gluant.

4 Spécifications
4.1 Spécifications générales, sensorielles et sanitaires
Les grains de riz, décortiqués ou usinés, entiers ou brisés, doivent être sains, propres, exempts d'odeurs
étrangères ou révélant une détérioration. Ils doivent également être exempts de toute matière toxique ou
susceptible d'être nocive.

Les additifs, les résidus de pesticides et autres contaminants ne doivent pas excéder les limites maximales

admises par la réglementation nationale du pays de destination ou, à défaut, par la CAC/MRL 1 et les bases

de données associées CAC/MRL 2 et CAC/MRL 3 (développées par la Commission mixte FAO/OMS du
Codex Alimentarius).
Aucun insecte vivant visible à l'œil nu ne doit être présent.
4.2 Spécifications physiques et chimiques
4.2.1 La fraction massique d'humidité ne doit pas être supérieure à 15,0 %.
NOTE Des fractions massiques d'humidité plus faibles peuvent être exigées pour certaines destinations en fonction

du climat, de la durée du transport et du stockage. Pour des informations complémentaires, voir l'ISO 6322-1 ,

l'ISO 6322-2 et l'ISO 6322-3 .
4.2.2 Les spécifications physiques doivent être déterminées conformément à la méthode spécifiée dans
l'Annexe A et ne doivent pas dépasser les limites données dans le Tableau 1.
4.3 Spécifications contractuelles
Chaque contrat commercial doit indiquer de façon claire:
a) le pourcentage total autorisé de brisures, classées selon les catégories retenues, et les proportions
relatives de chacune de ces catégories;
b) le pourcentage total autorisé, n'excédant pas les valeurs maximales pour les spécifications décrites dans
le Tableau 1, déterminé conformément à la méthode spécifiée dans l'Annexe A.
Si le contrat traite d'un genre de riz spécifique ou d'une variété spécifique de riz, pour permettre d'évaluer
l'homogénéité du lot, le contrat peut spécifier la longueur moyenne et son coefficient de variation, déterminés
conformément à A.4.3.2 et A.4.3.3, respectivement.
Les spécifications doivent être déterminées conformément à la méthode décrite dans l'Annexe A.
5 Méthodes d'essai
La teneur en eau doit être déterminée conformément à l'ISO 712.
Les autres essais doivent être réalisés à l'aide des méthodes spécifiées dans les Annexes A et B.
6 Emballage
Les matériaux utilisés pour l'emballage ne doivent communiquer ni odeur ni goût à leur contenu et ne doivent
pas contenir de substances susceptibles d'endommager le produit ou de présenter un risque pour la santé. Si
des sacs sont utilisés, ils doivent être propres, suffisamment résistants et correctement cousus ou
hermétiques.

Méthodes d'analyse des spécifications du riz
A.1 Principe
Séparation manuelle et pesée des brisures et des catégories indiquées dans le Tableau 1.
A.2 Appareillage
A.2.1 Diviseur d'échantillons, échantillonneur conique ou échantillonneur à fentes multiples avec
système distributeur.

Il est important que le laboratoire reçoive un échantillon réellement représentatif, non endommagé ni modifié
lors du transport ou du stockage.
