Overview

SIST EN 60335-2-39:2003/A2:2009 is a European standard under the CLC (European Committee for Electrotechnical Standardization) focusing on the safety of commercial electric multi-purpose cooking pans, also known as bratt pans. This standard forms part 2-39 of the broader EN 60335 series, which addresses safety requirements for household and similar electrical appliances. It specifically defines particular safety provisions for commercial-grade electric cooking pans used in professional and commercial catering environments.

This amendment (A2:2008) updates the original 2003 version to incorporate refined safety measures, implementing requirements related to construction, marking, classification, and thermal protection systems. It aligns with the International Electrotechnical Commission (IEC) standard IEC 60335-2-39:2002/A2:2008, ensuring harmonization across European member states.

Key Topics

  • Scope: Focuses on electric multi-purpose cooking pans intended for commercial use, covering safety concerns during normal and abnormal operation expected in practice.
  • Classification:
    • Appliances used on tables must achieve a minimum protection rating of IPX3.
    • Other appliances must meet at least IPX4, ensuring adequate protection against water ingress.
  • Thermal Cut-Outs:
    • Requires non-self-resetting, trip-free thermal cut-outs for circuits with heating elements and motors where unexpected starts could cause hazards.
    • For three-phase appliances, all-pole disconnection is mandatory; for single-phase, at least one-pole disconnection is required.
  • Markings and Instructions:
    • Emphasizes safety instructions tailored to the appliance, acknowledging that directions for persons with reduced capabilities are not applicable in this context.
  • Definitions:
    • Clarifies terminology such as “multi-purpose cooking pan” also being referred to as a “bratt pan.”
  • Construction Requirements:
    • Thermal protection devices must function reliably, even in the event of capillary tube rupture in thermal cut-outs.
  • Electromagnetic Compatibility:
    • Considers how electromagnetic phenomena could affect appliance safety.
  • Implementation Dates:
    • National adoption was recommended between 12 to 36 months post-publication, with conflicting standards required to be withdrawn by mid-2011.

Applications

SIST EN 60335-2-39:2003/A2:2009 is critical for manufacturers, testing labs, and regulatory bodies concerned with commercial kitchen equipment safety. Its practical applications include:

  • Design and manufacturing of commercial electric multi-purpose cooking pans ensuring electrical and operational safety.
  • Compliance testing to validate thermal cut-outs and ingress protection ratings as per commercial operating environments.
  • Informing appliance installation guidelines and user instructions for professional kitchens to prevent electrical and thermal hazards.
  • Supporting certification processes in European countries by harmonizing appliance safety criteria, which facilitates market access for compliant products.
  • Guiding maintenance procedures to ensure thermal protection devices operate as required, reducing risks of fire or electrical shock in commercial cooking appliances.

Related Standards

  • IEC 60335-2-39:2002/A2:2008: The international base standard for commercial electric multi-purpose cooking pans, which this European standard amends and adopts.
  • EN 60335-1: General safety requirements for household and similar electrical appliances that apply together with EN 60335-2-39 when no specific provisions exist.
  • ISO 13732-1: Ergonomics of the thermal environment-Methods for assessing human responses to hot surfaces, harmonized as EN ISO 13732-1:2006, referenced for surface temperature safety.
  • Other parts of the EN 60335 series addressing safety for different household and commercial electrical appliances.
