prEN IEC 60335-2-42:2026/prAA:2026 is a CENELEC draft amendment to the European standard for the safety of commercial electric forced convection ovens, steam cookers and steam-convection ovens. It adds European requirements for electrically operated commercial appliances used outside the household, including steam generators used only in this context, with typical use in restaurants, canteens, hospitals, bakeries and butcheries.

What does prEN IEC 60335-2-42:2026/prAA:2026 specify?

prEN IEC 60335-2-42:2026/prAA:2026 specifies additional safety provisions for commercial cooking appliances covered by prEN IEC 60335-2-42:2026. The scope covers electrically operated commercial forced convection ovens, steam cookers, steam-convection ovens and, exclusively for this use, steam generators, not intended for household use.

The scope gives the rated-voltage limits, the typical places of use, and the way the amendment fits into the base Part 2 document. It also points readers to the annexes that add requirements for powered moving parts, hygiene and EU legislation mapping.

AnnexWhat it covers
ZANormative references to international publications and their European publications
ZEAdditional requirements for appliances with power driven moving parts
ZAAHygiene
ZZARelationship with Directive 2014/35/EU
ZZBRelationship with Regulation (EU) 2023/1230
ZZCRelationship with Directive 2014/53/EU

What are the key requirements of prEN IEC 60335-2-42:2026/prAA:2026?

The amendment focuses on the information given to users, the construction of the appliance, hygiene, ergonomics and the extra risks created by power driven moving parts. In practice, it tells manufacturers what to design, what to declare, and what to check by inspection or test.

Safety information, intended use and instructions

Clause 1 replaces the hazard wording so that the document covers reasonably foreseeable hazards for people in and around the installation place or workplace. That matters because the appliance is judged against real use, not only against ideal conditions.

Clause 7.12 requires instructions for persons with reduced physical, sensory or mental capabilities, and it requires the intended use to be stated clearly if the appliance is limited to less than the full scope. The instructions also have to cover user maintenance, operator training if needed, safe adjustment and maintenance, stability during use and dismantling, accident or breakdown response, personal protective equipment for hot food, slippery floor warnings and the maximum weight of the empty appliance.

Clause 7.12.1 requires repairs to be carried out by competent persons, and table-top appliances need a support so that the working height is between 695 mm and 1800 mm. In practice, that means the manual is part of the safety case, not just a formality.

Construction, ergonomics and heating

Clause 22 adds a fluid category requirement from EN 61770:2009, with different categories depending on whether the appliance has a cleaning system. This matters for water-related safety and for how cleaning systems are treated in the design.

Clause 22.Z.101 sets ergonomic requirements: the working height must be between 200 mm and 1800 mm, the usable interior depth must not exceed 850 mm, and floor-standing controls must be at least 500 mm high, visible, reachable and protected against accidental actuation where this could create a hazard. Compliance is checked by inspection, so the layout has to be obvious on the finished product.

Clause 22.Z.102 requires the appliance to meet hygiene requirements, with compliance checked by inspection and by Annex ZAA. Clause 11 also updates the heating-related wording, including the instruction reference used for testing.

Power driven moving parts and special testing

Annex ZE adds requirements for appliances and machines with power driven moving parts. It links the intended use to the product information, including appliances for experts or trained users and those declared for commercial use by lay persons.

Annex ZE also requires a specific interlocking test on guards: the guard is opened to operate the interlocking device and then closed for 5 000 cycles at 5 cycles per minute. That gives a repeatable durability check for moving safety parts.

Clause 7.12.ZE.1 adds a noise statement in the instructions, using an A-weighted emission sound pressure level of 70 dB(A) or less. The document also states that noise is not treated as a relevant hazard in the scope.

Hygiene requirements

Annex ZAA adapts EN 1672-2:2020 for these appliances. It introduces the food area, splash area and non-food area, and Figure ZAA.1 shows the categorization.

The hygiene text focuses on cleanable surfaces, joints, overlaps, fasteners, ventilation openings and cable or pipe routing. It also sets practical exceptions when temperatures are high enough during normal operation, and it requires guidance on special cleaning utensils, unsuitable accessories, hygienic maintenance, inspection intervals, lubricants and cleaning or disinfection after maintenance.

What terms does prEN IEC 60335-2-42:2026/prAA:2026 define?

  • Appliance - The document uses appliance with the same meaning as equipment, and where relevant it also includes machine.
  • Machine - In this document, machine is included in the wider use of appliance where that wording applies.
  • Radio appliance - For this document, radio appliance has the same meaning as radio equipment.
  • Equipment - The scope uses equipment as a synonym for appliance.
  • Food area - The hygienically critical zone shown in Figure ZAA.1, including the cavity ceiling.
  • Splash area - The area around the food area that can be exposed to splashes and needs cleanable, disinfectable surfaces where required.
  • Non-food area - The parts of the appliance outside the food and splash areas, used for items such as ventilation openings.
  • A-weighted emission sound pressure level (LpA) - The noise quantity used in the instructions, with the document stating a level of 70 dB(A) or less.

Who uses prEN IEC 60335-2-42:2026/prAA:2026?

Manufacturers and design engineers use prEN IEC 60335-2-42:2026/prAA:2026 to design the appliance, choose materials, place controls, write instructions and decide how to test guards, hygiene features and moving parts. Test laboratories and conformity assessment teams use it to check safety, ergonomics, hygiene and the Annex ZE interlock test.

Quality managers, buyers and compliance specialists use it to compare products for commercial kitchens and food service settings. Installers, service technicians, trainers and operators use it for setup, maintenance, repair instructions and safe use in restaurants, canteens, hospitals, bakeries and butcheries.

What changed in prEN IEC 60335-2-42:2026/prAA:2026 from the previous edition?

The amendment modifies prEN IEC 60335-2-42:2026 and is read together with prEN IEC 60335-2-42:2026/prA1:2026. The text states that it introduces requirements and instructions for children, people with disabilities and domestic animals, plus requirements for power driven moving parts, mechanical test set-up clarifications, hygienic requirements and ergonomic requirements.

It also states that with European Amendment A11, EN 60335-2-42:2003+Cor1:2007+A1:2008+A11:2012+A2:2024+A12:2024 is superseded.
