Overview

SIST EN ISO 5943:2007 specifies a reliable method for the determination of chloride content in cheese and processed cheese products using a potentiometric titration technique. Developed by the International Organization for Standardization (ISO) and adopted as a European and Slovenian standard, this method is applicable to all types of cheese and processed cheese that contain more than 0.2% chloride by mass.

Ensuring accurate measurement of chloride (salt) content is essential for evaluating product quality, legal compliance, and production consistency in the dairy industry. This standard provides a clear procedure that laboratories and food producers can follow to obtain trustworthy results.

Key Topics

  • Purpose and Scope
The standard defines a potentiometric titration method for determining the chloride content in cheese and processed cheese products. It applies to a wide range of cheese types and processed cheeses.

  • Testing Principle
A prepared cheese sample is suspended in water and acidified with nitric acid. The chloride ions in the sample are then titrated using a silver nitrate solution, with the endpoint determined by measuring changes in electric potential.

  • Applicability
The method is suitable for all cheese varieties and processed cheese products containing more than 0.2% chloride.

  • Precision and Repeatability
The standard includes guidance on test repeatability and reproducibility, ensuring results are consistent within and between laboratories.

  • Reporting Results
Results are to be expressed as a mass fraction (percentage) of chloride ion, sodium chloride, or another relevant chloride, reported to the second decimal place.

Applications

SIST EN ISO 5943:2007 is widely used by:

  • Dairy Laboratories
For routine chloride content analysis in cheese quality control and product development.
  • Cheese and Processed Cheese Manufacturers
To monitor and standardize salt levels, meeting food safety regulations and consumer preferences.
  • Regulatory Agencies
As an official reference when inspecting cheese products for compliance with legal and labeling requirements regarding salt content.
  • Research and Quality Assurance
By academic institutions and research organizations studying cheese composition and its impact on product attributes.

Accurate chloride content determination supports efforts to optimize processes, enhance flavor profiles, extend shelf-life, and adhere to health and labeling regulations.

Related Standards

  • ISO 707 | IDF 50
Milk and milk products - Guidance on sampling: Provides recommendations for representative sampling, which is critical before chloride content determination.

  • ISO 5725-1 & ISO 5725-2
Accuracy of measurement methods: General principles and procedures for determining repeatability and reproducibility of standard measurement methods, referenced for establishing the method's precision.

  • Other Cheese Analysis Standards (ICS 67.100.30)
A family of international standards addressing various methods for cheese and dairy product analysis, supporting comprehensive quality control in the sector.

Summary

SIST EN ISO 5943:2007 provides the dairy sector with a standardized, precise, and practical method for determining chloride content in cheese using potentiometric titration. This is crucial for quality control, regulatory compliance, and product consistency. Adhering to this international standard ensures accurate chloride measurement and contributes to the overall safety, quality, and marketability of cheese and processed cheese products.

Foreword
ISO (the International Organization for Standardization) is a worldwide federation of national standards
bodies (ISO member bodies). The work of preparing International Standards is normally carried out through
ISO technical committees. Each member body interested in a subject for which a technical committee has
been established has the right to be represented on that committee. International organizations, governmental
and non-governmental, in liaison with ISO, also take part in the work. ISO collaborates closely with the
International Electrotechnical Commission (IEC) on all matters of electrotechnical standardization.
International Standards are drafted in accordance with the rules given in the ISO/IEC Directives, Part 2.
The main task of technical committees is to prepare International Standards. Draft International Standards
adopted by the technical committees are circulated to the member bodies for voting. Publicat
