Gas heated catering equipment - Part 1: General safety rules
This European Standard specifies the general requirements and the constructional and operating characteristics relating to safety and, rational use of energy, marking, withand the associated test methods for gas heated commercial catering and bakery appliances intended to be used indoor.
The specific requirements are given in Part 2.
Only appliances of types A1, A2, A3, B1 and B2, as defined in Clause 4, are considered in this European Standard.
This European Standard applies to all professional cooking and bakery appliances using gas for preparing food and drink.
Only the net calorific value (Hi) and net Wobbe number (Wi) are used.
Annex C, informative, lists the main types of equipment entering into the field of application of this European Standard.
NOTE: For appliances intended to be used in vehicles, in carriages or on board ships, additional requirements may be necessary

Dieses Dokument legt die Anforderungen und Prüfverfahren für die Bauweise und Bedienung bezüglich Sicherheit, sowie die rationelle Energienutzung für Großküchen- und Bäckereigeräte für gasförmige Brennstoffe fest, die für die Verwendung in Innenräumen bestimmt sind.
Dieses Dokument gilt für alle gewerblichen Koch- und Backgeräte, die Gas für die Zubereitung von Speisen und Getränken verwenden.
Nur Geräte der Arten A1, A2, A3, B1 und B2, wie in Abschnitt 4 definiert, werden in diesem Dokument berücksichtigt.
Es werden nur der Heizwert (Hi) und der untere Wobbeindex (Wi) verwendet.
Die Anforderungen an bestimmte Gerätetypen sind in dem entsprechenden Teil 2 aufgeführt.
Im informativen Anhang C sind die wesentlichen Gerätetypen des Anwendungsbereiches dieses Dokuments aufgelistet.
Geräte, die unter dieses Dokument fallen, sind nicht für die Verwendung von Gasen vorgesehen, die Kohlenmonoxid oder andere toxische Komponenten enthalten.
ANMERKUNG Geräte, die für die Nutzung in Fahrzeugen, in Anhängern oder an Bord von Schiffen gedacht sind, können zusätzliche Anforderungen notwendig sein.

Le présente document spécifie les exigences et les méthodes d'essai pour la construction et caractéristiques de fonctionnement relatives à la sécurité et à l'utilisation rationnelle de l'énergie des appareils de cuisson professionnelle et de boulangerie artisanale utilisant les combustibles gazeux destinés à être utilisés à l’intérieur.
Le présent document s’applique à tous les appareils de cuisson professionnelle et de boulangerie artisanale utilisant les combustibles gazeux destinés à la préparation et à la cuisson des aliments et des boissons.
Seuls les appareils des types A1, A2, A3, B1 et B2, comme définis à l’Article 4, sont étudiés dans le présent document.
Seuls le pouvoir calorifique inférieur (Hi) et l’indice de Wobbe inférieur (Wi) sont utilisés.
Les exigences spécifiques sont données dans la Partie 2.
L’Annexe C, informative, donne une liste des principaux types d’appareils entrant dans le champ d’application du présent document.
Les appareils couverts par cette norme ne sont pas destinés à utiliser des gaz contenant du monoxyde de carbone ou d'autres composants toxiques.
NOTE Pour les appareils destinés à être utilisés dans des véhicules, dans des wagons ou à bord de navires, des exigences supplémentaires peuvent être nécessaires.

Ta evropski standard določa splošne zahteve, konstrukcijske značilnosti in značilnosti delovanja v povezavi z varnostjo, racionalno rabo energije, označevanje in povezane preskusne metode za komercialne plinske naprave za gostinstvo in peko, namenjene za uporabo v zaprtih prostorih.
Posebne zahteve so obravnavane v 2. delu.
Ta evropski standard obravnava samo naprave tipov A1, A2, A3, B1 in B2 iz točke 4.
Ta evropski standard se uporablja za vse profesionalne aparate za gostinstvo in peko, ki za pripravo hrane in pijače uporabljajo plin.
Uporabljata se samo neto kalorična vrednost (Hi) in Wobbejev indeks (Wi).
V informativnem dodatku C so navedeni glavni tipi naprav, za katere se začne uporabljati ta evropski standard.

This document (EN 203-1:2021) has been prepared by Technical Committee CEN/TC 106 “Large kitchen
appliances using gaseous fuels”, the secretariat of which is held by AFNOR.
This European Standard shall be given the status of a national standard, either by publication of an
identical text or by endorsement, at the latest by June 2022, and conflicting national standards shall be
withdrawn at the latest by June 2022.
Attention is drawn to the possibility that some of the elements of this document may be the subject of
patent rights. CEN shall not be held responsible for identifying any or all such patent rights.
This document supersedes EN 203-1:2014.
This document has been prepared under a Standardization Request given to CEN by the European
Commission and the European Free Trade Association, and supports essential requirements of

This document constitutes Part 1 of EN 203, Gas heated catering equipment. Particular requirements are
given in the relevant Part 2: Specific requirements.
The main changes compared to the previous edition are the following:
— Update of the scope to further clarify that appliances are to be used indoors;
— Alignment with the Gas Appliances Regulation and the Vademecum on European standardization in
support of Union legislation and policies based on Standardization Request/Mandate (under
drafting);
— Introduction of reference to EN 1672-2:2005+A1:2009 for the verification of materials and parts in
contact with food and other hygiene aspects as consequence of the withdrawal of EN 203-3:2009;
— Revision of the text in Clause 5 for clarification of its contents and addition of specific compliance
criteria when missing;
— Addition of the adjustement of the sequential function control (7.6.2.1);
— Addition of the accuracy of measuring instruments (7.1.8).

1 Scope
This document specifies the requirements and test methods for the construction and operating
characteristics relating to safety and rational use of energy for gas heated commercial catering and
bakery appliances intended to be used indoor.
This document applies to all professional cooking and bakery appliances using gas for preparing food and
drink.
Only appliances of types A , A , A , B and B , as defined in Clause 4, are considered in this document.
