oSIST prEN IEC 60335-2-38:2026/oprAA:2026 is a SIST draft amendment in the IEC 60335 safety series for household and similar electrical appliances. It applies to commercial electric griddles and griddle grills, including the electrical part of appliances that also use another form of energy, and it sets safety, instruction, ergonomic and hygiene-related requirements for equipment used in commercial food processing areas. The scope covers appliances up to 250 V for single-phase units connected between one phase and neutral, and up to 480 V for other appliances.

What does oSIST prEN IEC 60335-2-38:2026/oprAA:2026 specify?

oSIST prEN IEC 60335-2-38:2026/oprAA:2026 specifies particular safety requirements for electrically operated commercial griddles and griddle grills. It is aimed at equipment used in kitchens, canteens, hospitals, bakeries, butcheries and similar commercial premises, not household use.

The amendment changes the Introduction, Scope, Normative references, Term and definitions, Marking and instructions, Heating, Construction, Clearances, creepage distances and solid insulation, the annexes and the Bibliography. It is read together with prEN IEC 60335-2-38:2026 and prEN IEC 60335-2-38:2026/prA1:2026.

Annex ZA gives the normative references to international publications and their European equivalents.

What are the key requirements of oSIST prEN IEC 60335-2-38:2026/oprAA:2026?

oSIST prEN IEC 60335-2-38:2026/oprAA:2026 focuses on how the appliance is used, cleaned, installed and documented, because those are the main safety points for commercial kitchen equipment. The most important requirements are spread across Clauses 1, 7, 11, 22 and 29, plus Annexes ZE and ZAA.

Scope and foreseeable hazards

Clause 1 says the document deals with reasonably foreseeable hazards for people in and around the installation place or workplace. In practice, the assessment is not limited to the operator at the controls - it also covers others nearby in commercial kitchens and similar workplaces.

Clause 1 also states that the term “appliance” includes “machine” where applicable, and that the document contains requirements for appliances with radio function, remote communication and remote operation. That matters because manufacturers need to consider both the main heating appliance and any linked electrical or connected functions.

Marking and instructions

Clause 7 requires the instructions to cover use by persons with reduced physical, sensory or mental capabilities only under supervision or after instruction, unless the intended use is more limited and clearly stated. It also requires explanation of any IEC 60417-5021, ISO 7000-0434A or ISO 7000-0790 symbols used on the product or in the instructions.

Clause 7 also adds practical user information: intended use, user maintenance, safe adjustment and maintenance, stability conditions, actions after accident or breakdown, personal protection equipment if hot food may spread, a warning about slippery floors nearby, and the maximum weight of the empty appliance. For table-top appliances, the instructions must state that a support is needed so the working height is between 695 mm and 980 mm.

Heating and test-related clarifications

Clause 11 updates wording around heating-related checks and refers more explicitly to information in the instructions. For testing and documentation, this means the conditions used for assessment are tied closely to the stated user information and the appliance configuration.

Construction, ergonomics and hygiene

Clause 22 adds ergonomic requirements: the working height of the hob must be between 695 mm and 980 mm, rear hob elements may not protrude too far from the front edge, and operator controls must be visible, identifiable, within easy reach and protected against accidental actuation when that could create a hazard. Compliance is checked by inspection.

Clause 22 also links the appliance to hygiene expectations. For appliances without a cleaning system, Fluid Category is 2 according to EN 61770:2009; for appliances with a cleaning system, Fluid Category is 3. That matters for design decisions around water, cleaning and contamination control.

Clearances, creepage distances and insulation

Clause 29 changes the wording on solid insulation. This is a small textual change, but it affects how electrical separation is described and assessed in the safety rules.

Annex ZE and Annex ZAA

Annex ZE adds requirements for appliances with power driven moving parts. It also ties the declared intended use to the product information and requires a noise statement saying the A-weighted emission sound pressure level is 70 dB(A) or less.

Annex ZAA adds detailed hygiene provisions, including food area, splash area and non-food area categorisation, cleanability, disinfectability where required, routing of cables and pipes, ventilation openings in the non-food area, and hygiene-related maintenance instructions. It also gives exceptions for some requirements when the appliance operates at temperatures above 82 °C or when the instructions provide a hygiene procedure.

What terms does oSIST prEN IEC 60335-2-38:2026/oprAA:2026 use?

oSIST prEN IEC 60335-2-38:2026/oprAA:2026 uses a small set of working terms that matter for design and testing.

  • Appliance - in this document, the term also includes machine where applicable.
  • Radio appliance - used with the same meaning as radio equipment in the scope of this amendment.
  • Food area - the part of the appliance associated with food contact and food processing.
  • Splash area - the area exposed to splashing from food or liquids.
  • Non-food area - the parts outside the food and splash areas.
  • Working height of the hob - the installation height used for ergonomic checks and for table-top support instructions.
  • A-weighted emission sound pressure level - the noise measure stated in Annex ZE and limited to 70 dB(A).
  • Fluid Category - the classification used in Clause 22 with EN 61770:2009 to distinguish appliance cleaning-related conditions.
