prEN IEC 60335-2-38:2026/prAA:2026 is a CENELEC draft amendment to the European standard for the safety of commercial electric griddles and griddle grills. It is aimed at electrically operated appliances used for commercial food processing in workplaces such as restaurant kitchens, canteens, hospitals, bakeries and butcheries, and it also covers the electrical part of appliances that use another form of energy.

What does prEN IEC 60335-2-38:2026/prAA:2026 specify?

prEN IEC 60335-2-38:2026/prAA:2026 adds European modifications to Part 2-38 of the household-and-similar-appliances safety series. The amendment is written to be read with prEN IEC 60335-2-38:2026 and prEN IEC 60335-2-38:2026/prA1:2026, and it modifies the introduction, scope, normative references, terms and definitions, marking and instructions, heating, construction, clearances and creepage distances, annexes, and bibliography.

The scope covers commercial electric griddles and griddle grills, including appliances up to the stated voltage limits for single-phase and other supplies. It also includes appliances with radio function, remote communication, and remote operation, and it treats appliances combined with a fuel-burning function as a mixed case where the electrical safety aspects are covered here together with the fuel-burning product standard for the gas or other fuel side.

AnnexWhat it covers
Annex ZANormative references to international publications and their European publications
Annex ZESpecific additional requirements for appliances with power driven moving parts
Annex ZAAHygiene
Annex ZZARelationship with Directive 2014/35/EU
Annex ZZBRelationship with Regulation (EU) 2023/1230
Annex ZZCRelationship with Directive 2014/53/EU

What are the key requirements of prEN IEC 60335-2-38:2026/prAA:2026?

The amendment strengthens the safety case for commercial use by adding requirements for foreseeable hazards, user instructions, ergonomics, hygiene, and certain combined functions. In practice, it tells manufacturers what must be considered in design, what must be stated in the instructions, and how compliance is checked.

Scope, foreseeable use, and noise

Clause 1 replaces the scope wording so that the document addresses reasonably foreseeable hazards for people in and around the installation place or workplace. That matters because the appliance is not treated as a household product, so the safety review has to fit commercial kitchens and similar work areas.

The amendment also says that appliances with a fuel-burning function are only partly covered here: the electrical safety and some related aspects are in this standard, while fuel-burning gas safety is left to the relevant product standard. It also treats airborne noise as not a relevant hazard and fixes the product-information statement for the A-weighted emission sound pressure level at the stated limit.

Marking and instructions

Clause 7 requires the instructions to cover the main user groups and foreseeable use conditions. The instructions have to explain restrictions on use by persons with reduced physical, sensory or mental capabilities unless they are supervised or instructed, and any narrower intended use has to be stated clearly.

The front cover of the instructions has to carry a caution to read the instructions before use, with the approved symbol options. The instructions must also explain the meaning of any listed symbols if they are used on the product or in the instructions, and they must state the intended use, user maintenance and operation, safe adjustment and maintenance, stability conditions during use and dismantling, what to do in accidents or breakdowns, personal protective equipment for spreading hot foodstuff, the risk of a slippery floor, and the maximum weight of the empty appliance.

For table-top appliances, the instructions have to say that a support is needed to keep the working height within the specified range. That matters for installation planning, because the appliance is not just a countertop unit - the support height becomes part of safe use.

Construction, ergonomics, and cleaning system classification

Clause 22 adds a fluid-category rule linked to EN 61770. Appliances without a cleaning system are classified as Fluid Category 2, and appliances with a cleaning system are classified as Fluid Category 3. This affects the way cleaning-water risks are assessed.

The same clause adds ergonomic requirements. The hob working height has to fall within a defined range, the rear hob elements may not protrude too far from the front edge, and the operator controls have to be at a minimum height, clearly visible, easy to reach, and protected against accidental actuation if that could create a hazard. Compliance is checked by inspection, so the design has to be visibly correct rather than only described in documentation.

The clause also adds a hygiene check: the appliance has to meet hygiene requirements, with compliance checked by inspection and by Annex ZAA. In practice, this links the mechanical design directly to cleanability and food-safety considerations.

Hygiene details in Annex ZAA

Annex ZAA is the main hygiene annex. It introduces food area, splash area, and non-food area categorization, and it uses a figure to show the general breakdown of these areas. That matters because the cleanability and corrosion rules differ by area.

The annex relaxes some material and construction requirements when the instructions give suitable corrosion-prevention or hygiene measures, and it sets conditions under which some joint, overlap, fastener, and hinge requirements are not applied. It also requires ventilation openings to be in the non-food area unless they are directly necessary for food processing, and it limits air flow so it does not point at the food area.

Annex ZAA also requires the instructions to cover special utensils and accessories for mechanical cleaning, to warn against unsuitable accessories that could damage surfaces, and to give hygienic maintenance, inspection, lubricant-handling, cleaning, and disinfection information. For users, this means maintenance instructions are part of hygienic design, not an afterthought.

What terms does prEN IEC 60335-2-38:2026/prAA:2026 define?

Appliance - In this document, appliance is used with the same meaning as equipment, and where applicable it also includes machine.

Radio appliance - The document uses radio appliance with the same meaning as radio equipment, so products with radio functions fall under the same safety framework.

Food area - The food area is the part of the appliance where food is handled or processed, and it is treated more strictly for cleanability and corrosion control.

Splash area - The splash area is the zone exposed to splashes from food processing, so its surfaces must also support cleaning and hygiene.

Non-food area - The non-food area is the part not intended for food contact or splash exposure, and it is where ventilation openings should be located where possible.

Fluid Category - Fluid Category is the classification from EN 61770 used to describe the cleaning-system water risk for the appliance.

Who uses prEN IEC 60335-2-38:2026/prAA:2026?

Manufacturers and product designers use this amendment when developing commercial griddles and griddle grills for restaurants, canteens, hospitals, bakeries, butcheries, and similar enterprises. It is also relevant to safety engineers, compliance teams, and test laboratories that check electrical safety, ergonomics, hygiene, marking, and instructions.

Buyers and quality managers in food-service equipment procurement use it to compare products and ask whether a design fits commercial kitchen use, including cleaning, installation height, and user instructions. Installation and maintenance teams also use the instruction requirements because the document places clear duties on safe setup, cleaning, and hygienic upkeep.

What changed in prEN IEC 60335-2-38:2026/prAA:2026 from the previous edition?

The amendment states that it supersedes EN 60335-2-38:2003 + corrigendum Aug:2007 + A1:2008 + A2:2024 + A11:2024. It introduces requirements and instructions for children, people with disabilities, and domestic animals, adds requirements for power driven moving parts, clarifies mechanical test set-ups, and adds hygienic and ergonomic requirements.

Which standards are used with prEN IEC 60335-2-38:2026/prAA:2026?

EN IEC 60335-1:2023 - The general Part 1 requirements that this Part 2-38 is used with for overall appliance safety.

EN 1672-2:2020 - The hygiene and cleanability standard used in Annex ZAA for food-processing machinery.

EN 61770:2009 - The fluid-category reference used to classify appliances with and without cleaning systems.

EN 614-1 and EN 614-2 - Ergonomic guidance named in a note for the ergonomic design provisions.

EN IEC 60335-2-102 - The companion standard named for appliances that combine the commercial griddle or griddle grill with a fuel-burning function.

IEC 60584-1 and ISO 898-1 / ISO 3506-1 / ISO 3506-2 / ISO 3506-3 / ISO 3506-4 - Reference publications listed in Annex ZA for thermocouples and fasteners.

What does the prEN IEC 60335-2-38:2026/prAA:2026 document contain?

The document is an amendment, so its content is organized as modifications rather than a full reprint of the base standard. It shows edits to the introduction and to Clauses 1, 2, 3, 7, 11, 22, and 29, then it adds or replaces annex material and updates the bibliography.

It contains the European correspondence tables in Annexes ZZA, ZZB, and ZZC, which link the standard to the Low Voltage Directive, the Machinery Regulation, and the Radio Equipment Directive. It also contains Annex ZE for appliances with power driven moving parts and Annex ZAA for hygiene, including the figure that separates food, splash, and non-food areas.

The practical content is concentrated in the wording changes for marking and instructions, the construction rules for ergonomics and hygiene, and the annexes that explain how the requirements map to EU legislation and to cleaning and food-area design.
