oSIST prEN IEC 60335-2-36:2026/oprAA:2026 is a Slovene draft amendment to the European standard for the safety of commercial electric cooking ranges, ovens, hobs and hob elements. It is prepared by CENELEC and distributed by SIST for equipment used in commercial food-processing areas such as restaurant kitchens, canteens, hospitals, bakeries and butcheries. The amendment updates safety, marking, instruction, construction, hygiene and ergonomics provisions for manufacturers, test labs and compliance teams.

What does oSIST prEN IEC 60335-2-36:2026/oprAA:2026 specify?

oSIST prEN IEC 60335-2-36:2026/oprAA:2026 is an amendment to the Part 2-36 safety standard for commercial electric cooking ranges, ovens, hobs and hob elements. The underlying standard covers appliances up to the stated voltage limits, including the electrical part of appliances that also use other forms of energy, and it is not for household and similar use.

The amendment is organized as modifications to the introduction, Clause 1, Clause 2, Clause 3, Clause 7, Clause 10, Clause 11, Clause 22, Clause 29, the annexes and the bibliography. European additions are identified with the prefix Z.

AnnexWhat it covers
ZANormative references to international publications and their European equivalents
ZEAdditional requirements for appliances with power driven moving parts
ZAAHygiene
ZZARelationship with Directive 2014/35/EU
ZZBRelationship with Regulation (EU) 2023/1230
ZZCRelationship with Directive 2014/53/EU

What are the key requirements of oSIST prEN IEC 60335-2-36:2026/oprAA:2026?

This amendment mainly tightens how the appliances are described, instructed, built and checked. The practical focus is on foreseeable hazards, user information, hygiene, ergonomic layout, moving-part protection and the way key tests are framed.

Scope, hazards and operating context

Clause 1 refines the scope to cover reasonably foreseeable hazards for people in and around the installation place or workplace. It also makes clear that the document can apply when the appliance is combined with a fuel-burning function, with electrical safety and some other safety aspects covered here and the fuel-burning gas aspects left to the relevant product standard.

Clause 1 also states that additional requirements for appliances with power driven moving parts are given in Annex ZE. For product teams, that means the safety case is not only electrical - it also has to address the machine-like parts that move during use.

Marking, instructions and user information

Clause 7 expands the instruction content. The instructions must cover intended use, user maintenance and operation, safe adjustment and maintenance, stability conditions during use and dismantling, actions after accidents or breakdowns, personal protection equipment where hot food may spread, slippery floors near the appliance, and the empty weight of the appliance.

Clause 7 also strengthens the wording for users with reduced physical, sensory or mental capabilities, and it requires repairs to be carried out by competent persons. For table-top appliances, the instructions must state that a support is needed so the appliance works at the correct height. In practice, this affects manuals, installation instructions and operator training.

Construction, hygiene and ergonomics

Clause 22 introduces ergonomic requirements for hob layout and operator controls, with compliance checked by inspection. It also adds hygiene requirements and a rule for filling and draining taps so they cannot be opened inadvertently. For manufacturers, this means ergonomics and hygiene are now part of the construction review, not only a matter of user advice.

Annex ZAA gives the hygiene framework. It distinguishes food area, splash area and non-food area, then sets cleanability and maintenance expectations for surfaces, joints, fasteners, bases, feet, castors, hinges, cables, pipes and ventilation openings. It also requires maintenance instructions to cover hygienic cleaning, disinfection where needed, suitable utensils and accessories, and the handling of food-grade lubricants or ancillary substances.

Clause 22 also links some requirements to EN 61770:2009 by using its fluid category classification for appliances with and without cleaning systems. That matters because the appliance design and cleaning system affect the fluid safety assumptions that apply.

Power input, heating and test conditions

Clauses 10 and 11 are adjusted so that measurements and heating checks rely on the user’s instruction rather than manufacturer-recommended settings. In practice, this makes the declared operating instructions more important during type testing and conformity assessment.

Moving parts, noise and mechanical checks

Annex ZE adds requirements for appliances with power driven moving parts. It also requires the instructions to state the airborne-noise information in terms of the A-weighted emission sound pressure level (LpA), and it includes a repeated guard-opening and interlocking test. For test labs, this annex defines the extra checks that apply when the appliance behaves partly like powered machinery.

Clearances, creepage and insulation

Clause 29 tightens the wording for clearances, creepage distances and solid insulation. The change is small in wording but important in interpretation, because it makes the insulation requirement more direct for electrical safety evaluation.

What terms does oSIST prEN IEC 60335-2-36:2026/oprAA:2026 define?

  • Appliance - The document uses this term for the commercial cooking equipment in scope, and says it includes the term "machine" where applicable.
  • Radio appliance - Used with the same meaning as radio equipment for products that include radio function, remote communication or remote operation.
  • Food area - The part of the appliance treated as food-contact related in Annex ZAA and subject to the strictest hygiene treatment.
  • Splash area - Areas exposed to splashing, with cleanability and disinfection-related requirements in Annex ZAA.
  • Non-food area - Parts outside food and splash areas, used to keep ventilation and other design features away from food contact.
  • Fluid category - The EN 61770 classification used to distinguish appliances with and without cleaning systems.
  • A-weighted emission sound pressure level (LpA) - The noise measure used in the instructions for appliances with power driven moving parts.

Who uses oSIST prEN IEC 60335-2-36:2026/oprAA:2026?

This standard is used by manufacturers and design teams for commercial cooking ranges, ovens, hobs and hob elements. It is also used by test laboratories, certification bodies, regulatory and quality staff, and technical writers who prepare instructions and markings.

It is especially relevant in restaurant kitchens, canteens, hospitals, bakeries and butcheries, where appliances are used in commercial food processing areas rather than in homes. Buyers and specification teams use it to check whether a product’s safety, hygiene, ergonomics and documentation match the intended commercial use.
