EN IEC 60335-2-36:2026/prAA:2026 is a CENELEC draft amendment prepared by CLC/TC 61 for the safety of commercial electric cooking ranges, ovens, hobs and hob elements. It modifies the European Part 2-36 for appliances used in commercial food processing, including kitchens in restaurants, canteens and hospitals and businesses such as bakeries and butcheries. For designers, manufacturers, test labs and compliance teams, it adds requirements for instructions, construction, hygiene, ergonomics and power-driven parts, and it is read together with Part 1.

What does EN IEC 60335-2-36:2026/prAA:2026 specify?

EN IEC 60335-2-36:2026/prAA:2026 specifies draft European modifications to the safety requirements for electrically operated commercial cooking and baking ranges, ovens, hobs and hob elements. The scope covers appliances up to 250 V for single-phase appliances connected between one phase and neutral, and up to 480 V for other appliances.

The standard is for commercial use, not household use. It also covers the electrical part of appliances that use other forms of energy, and it includes products with radio function, remote communication and remote operation.

The amendment is organized as changes to the Introduction, Clauses 1, 2, 3, 7, 10, 11, 22 and 29, plus annexes and the bibliography. The annexes give the extra European hygiene and moving-parts requirements and the links to EU legislation.

AnnexWhat it covers
ZANormative references to international publications with corresponding European publications
ZESpecific additional requirements for appliances with power driven moving parts

What are the key requirements of EN IEC 60335-2-36:2026/prAA:2026?

EN IEC 60335-2-36:2026/prAA:2026 strengthens the way the appliance is described, installed, used and checked. The most important points are in the scope, instructions, construction, hygiene and annexes.

Safety information and intended use

Clause 1 narrows the safety view to reasonably foreseeable hazards for all persons in and around the installation place or workplace. In practice, this means the appliance has to be assessed for the people who will meet it during installation, operation, cleaning and maintenance, not only for a trained operator.

Clause 7 expands the instruction content. The instructions have to cover use by persons with reduced physical, sensory or mental capabilities only under supervision or with instruction, and they have to state the intended use, user maintenance, operator training where needed, safe adjustment and maintenance, stability conditions, actions in accidents or breakdowns, personal protection equipment for spreading hot food stuff, the risk of slippery floors, and the maximum weight of the empty appliance. For table-top appliances, the instructions must state that a support is needed to keep the working height between 695 mm and 980 mm.

Clause 7.12.1 also requires the instructions to say that repairs are to be carried out by competent persons. That matters because maintenance and repair are treated as controlled safety tasks, not routine user activities.

Clauses 3, 10 and 11 replace several references to the manufacturer with references to the user’s instruction or the instruction. In practice, this shifts some technical settings and measurements away from manufacturer preference and toward the documented instructions supplied with the appliance.

Construction, ergonomics and hygiene

Clause 22 adds ergonomic requirements. The working height of the hob has to be between 695 mm and 980 mm, the centre of the rear hob elements may be no more than 640 mm from the front edge if they protrude the surface, and operator controls have to be mounted at a minimum height of 350 mm, clearly visible, easy to reach and protected against accidental actuation where that could create a hazard. That is important for safe reach, control use and reducing unintended operation.

Clause 22.48 assigns Fluid Category 2 to appliances without a cleaning system and Fluid Category 3 to appliances with a cleaning system, according to EN 61770:2009. This matters when the appliance is connected to water systems and the installer needs the right backflow protection approach.

Annex ZAA introduces hygiene requirements. It classifies the appliance into food area, splash area and non-food area, and it sets rules for surfaces, joints, fasteners, ventilation openings, bases, feet, castors, cleaning accessories and hygienic maintenance information. Several requirements stop applying when the appliance runs above 82 °C during normal operation, or when the instruction for use provides a hygiene procedure or limits the low-temperature mode to one working shift. In practice, the hygienic design and the user instructions have to match the way the appliance is actually cleaned and maintained.

Clause 22.Z.103 requires filling and draining taps, if any, to be designed so that they cannot be opened inadvertently. That reduces the risk of accidental release of hot liquid.

Annex ZE adds requirements for appliances with power driven moving parts. It includes a guard-interlock test of 5 000 cycles at 5 cycles per minute, and it requires the instructions to state that the A-weighted emission sound pressure level is equal to or less than 70 dB(A). This matters for moving-part safety and for the information that users receive about noise.

Clause 29.2 tightens the wording for clearances, creepage distances and solid insulation by replacing “unlikely to be” with “not”. That is a small text change, but it affects how the insulation-related condition is read in safety checks.

What terms does EN IEC 60335-2-36:2026/prAA:2026 define?

  • Appliance - In this document, the term appliance also includes the term machine where applicable.
  • Radio appliance - For this scope, radio appliance has the same meaning as radio equipment.
  • Food area - The part of the appliance that is treated as a food-contact or food-facing area in Annex ZAA.
  • Splash area - The area exposed to splashing, separated from the food area and non-food area in Annex ZAA.
  • Non-food area - The part of the appliance that is not classified as food area or splash area.
  • Fluid Category - The water connection category used in Clause 22.48 and defined by EN 61770:2009.
  • Competent persons - Persons qualified to carry out repairs called for in the instructions.

Who uses EN IEC 60335-2-36:2026/prAA:2026?

Manufacturers and designers of commercial electric cooking ranges, ovens, hobs and hob elements use this amendment when they define the product, its instructions and its safety features. Test laboratories and conformity assessment teams use it for electrical safety checks, heating checks, construction review, hygiene inspection and the moving-parts test.

Quality, regulatory and technical documentation teams use it when they write user instructions, maintenance information and warnings about stability, cleaning and repair. It is also relevant to buyers, specifiers and operators in restaurants, canteens, hospitals, bakeries and butcheries who need to confirm that the appliance is intended for commercial food processing and that the installation and use conditions fit the workplace.

What changed in EN IEC 60335-2-36:2026/prAA:2026 from the previous edition?

EN IEC 60335-2-36:2026/prAA:2026 states that, with European Amendment A11, EN IEC 60335-2-36:2024+A11:2024 is superseded. It also says that the amendment modifies prEN IEC 60335-2-36:2026 and its amendment/corrigenda set.

The document lists these significant technical changes:

  • requirements and instructions for children, vulnerable people and domestic animals
  • requirements for power driven moving parts
  • mechanical test set-up clarifications
  • hygienic requirements
  • ergonomic requirements

Which standards are used with EN IEC 60335-2-36:2026/prAA:2026?

EN IEC 60335-2-36:2026/prAA:2026 is used together with EN IEC 60335-1:2023, which supplies the general safety requirements for household and similar electrical appliances. It is also read with prEN IEC 60335-2-36:2026 and prEN IEC 60335-2-36:2026/prA1:2026, which are the related Part 2 documents named in the amendment.

Other standards named in the document contribute specific topics:

  • EN 1672-2:2020 - hygiene and cleanability requirements for food processing machinery
  • EN 61770:2009 - fluid category assignment for appliances with and without cleaning systems
  • EN 614-1 and EN 614-2 - ergonomic design guidance referenced in the notes
  • EN IEC 60335-2-102 - safety for gas, oil and solid-fuel burning appliances having electrical connections
  • IEC 60584-1, ISO 185, ISO 898-1 and ISO 3506-1 to -4 - referenced in Annex ZA for thermocouples, cast iron and fasteners

What does the EN IEC 60335-2-36:2026/prAA:2026 document contain?

This draft amendment contains clause-by-clause modifications to the Introduction, the scope, normative references, terms and definitions, marking and instructions, power input and current, heating, construction, and clearances, creepage distances and solid insulation. It also contains amendments to the annexes and bibliography.

The annexes are a major part of the document. Annex ZE gives extra requirements and a 5 000-cycle guard test for appliances with power driven moving parts, Annex ZAA gives the hygiene framework and Figure ZAA.1 for food-area categorization, and Annexes ZZA, ZZB and ZZC map the standard to Directive 2014/35/EU, Regulation (EU) 2023/1230 and Directive 2014/53/EU.

The document also includes correspondence tables showing which clauses support which EU legal objectives. For a reader, that means the amendment is not only about product safety text - it also ties the technical clauses to the legal conformity route used in Europe.
