prEN IEC 60335-2-48:2026 is a draft European Standard from the European Committee for Electrotechnical Standardization (CENELEC) for the safety of commercial electric grillers and toasters. It covers electrically operated appliances not intended for household use, including rotary and continuous grillers and radiant-heat appliances such as rotisseries and salamanders. The draft is based on IEC 60335-2-48:2021 and is intended to be used with IEC 60335-1.

What does prEN IEC 60335-2-48:2026 specify?

prEN IEC 60335-2-48:2026 specifies particular safety requirements for commercial grillers and toasters with rated voltages up to 250 V for single-phase appliances connected between phase and neutral and 480 V for other appliances. It also covers similar radiant-heat appliances, and the electrical part of appliances that use other forms of energy.

The document follows the Part 1 structure and supplements or modifies the general safety clauses for classification, marking and instructions, access to live parts, heating, moisture resistance, construction, wiring, earthing, insulation, and resistance to heat and fire. It also includes annexes that support battery-related products and tropical-climate use.

AnnexWhat it covers
BBattery-operated appliances, separable batteries and detachable batteries for battery-operated appliances; this annex is marked not applicable in this part
PGuidance for applying the standard to appliances used in tropical climates, with different leakage-current limits

What are the key requirements of prEN IEC 60335-2-48:2026?

Safety basis, classification and test conditions

prEN IEC 60335-2-48:2026 places these appliances in class I for protection against electric shock, and it requires at least IPX3 for appliances normally used on a table and IPX4 for other appliances. In practice, that means the design has to provide earthing and a defined level of water protection before the appliance can be considered to meet the standard.

The standard also defines how the appliance is to be loaded for testing. Depending on the function, it is tested as a heating appliance or, when no heaters are energized, as a motor-operated appliance. When several combinations of heating units are possible, the most unfavorable combination is used.

Marking, instructions and installation information

prEN IEC 60335-2-48:2026 requires clear marking for hot external surfaces, with the warning symbol or the wording “Caution: Hot surfaces.” It also requires instructions that identify whether the appliance is suitable for use in an area open to the public, and if it is not, the instructions must warn against installation where the public has access.

The instructions must tell the user that the appliance is for commercial applications such as restaurants, canteens, hospitals, bakeries and butcheries, and not for continuous mass production of food. They also must include cleaning precautions, including that the appliance is not to be cleaned with a water jet or steam cleaner. For fixed or heavy appliances, the instructions cover installation details, movement for cleaning, flexible connections, and recommendations for protective devices such as residual current devices (RCD) where leakage current can be significant.

Heating, surface temperatures and abnormal operation

prEN IEC 60335-2-48:2026 controls temperature rise on accessible surfaces under normal operation, using specific measurement methods and separate limits for ordinary appliances and for appliances intended for areas open to the public. It excludes functional surfaces and adjacent surfaces from the normal accessible-surface measurement points, because those parts are meant to be hot in service.

The temperature-rise checks are linked to the appliance’s rated input and to steady operating conditions. For stationary appliances, if surrounding walls or the floor can get too hot, the installation instructions and a permanent label must advise the use of non-combustible materials or heat-insulating cladding. The standard also tightens abnormal-operation checks so that controls are set to the most unfavorable positions and doors, lids, reflectors and drip trays are treated in the most severe way during the test.

Electric shock protection, moisture and live parts

prEN IEC 60335-2-48:2026 requires accessible heating elements that could be touched accidentally by a fork or similar pointed object to be protected so that live parts cannot be reached in that way. Fan motors used to maintain safe temperatures must start reliably under the voltage conditions that can occur in use.

Moisture protection is verified by splash testing, unless the appliance is already marked for higher water protection. If the appliance has a tap for filling or cleaning, it must be arranged so that water cannot reach live parts, and it must still pass the electric strength test after water exposure. These requirements matter because many appliances are cleaned and serviced in busy kitchens where splashing and wet handling are normal.

Construction, wiring, earthing and materials

prEN IEC 60335-2-48:2026 requires thermal cut-outs for heating circuits and for motors whose unexpected starting could be hazardous to be non-self-resetting and trip-free, with the required pole disconnection depending on whether the appliance is single-phase or multi-phase. It also requires portable appliances to be designed so that small objects cannot reach live parts through underside openings.

The document sets rules for supply cords, fixed wiring connection, external equipotential bonding, screws and connections, clearances, creepage distances and solid insulation. For materials, it includes pollution degree 3 requirements with a minimum comparative tracking index (CTI) of 250 unless the insulation is adequately protected, plus glow-wire and burning tests for non-metallic parts and grease filters. In practice, these requirements target the parts most likely to loosen, heat up, absorb grease or fail under cleaning and electrical stress.

What terms does prEN IEC 60335-2-48:2026 define?

  • Griller - An appliance in which food is cooked mainly by radiant heat.
  • Toaster - An appliance intended only for browning bread and similar products by radiant heat.
  • Rotary or continuous griller or toaster - An appliance where the product moves while it is being grilled or toasted.
  • Functional surface - A surface intentionally heated by an internal heat source and required to be hot for the appliance’s function.
  • Adjacent surface - A surface next to a functional surface that can become hot by conduction.
  • Installation wall - A special fixed construction that contains supply facilities for appliances installed with it.
  • Area open to the public - An area that the general public, including children, can access, such as a canteen or self-service restaurant.

Who uses prEN IEC 60335-2-48:2026?

prEN IEC 60335-2-48:2026 is used by manufacturers, product engineers and safety specialists who design commercial grillers and toasters. It is also used by test laboratories and conformity assessment bodies that check temperature rise, leakage current, splash resistance, earthing, mechanical strength and construction details.

INTRODUCTION
It has been assumed in the drafting of this International Standard that the execution of its
provisions is entrusted to appropriately qualified and experienced persons.
Guidance documents concerning the application of the safety requirements for appliances can
be accessed via TC 61 supporting documents on the IEC website:
https://www.iec.ch/tc61/supportingdocuments
This information is given for the convenience of users of this International Standard and does
not constitute a replacement for the normative text in this standard.
This standard recognizes the internationally accepted level of protection against hazards such
as electrical, mechanical, thermal, fire and radiation of appliances when operated as in normal
use taking into account the manufacturer's instructions. It also covers abnormal situations that
can be expected in practice and takes into account the way in which electromagnetic
phenomena can affect the safe operation of appliances.
This standard takes into account the requirements of IEC 60364 as far as possible so that there
is compatibility with the wiring rules when the appliance is connected to the supply mains.
However, national wiring rules may differ.
If an appliance within the scope of this standard also incorporates functions that are covered
by another Part 2 of IEC 60335, the relevant Part 2 is applied to each function separately, as
far as is reasonable. If applicable, the influence of one function on the other is taken into
account.
When a Part 2 standard does not include additional requirements to cover hazards dealt with
in Part 1, Part 1 applies.
NOTE 1 This means that the technical committees responsible for the Part 2 standards have determined that it is
not necessary to specify particular requirements for the appliance in question over and above the general
requirements.
This standard is a product family standard dealing with the safety of appliances and takes
precedence over horizontal and generic standards covering the same subject.
NOTE 2 Horizontal publications, basic safety publications and group safety publications covering a hazard are not
applicable since they have been taken into consideration when developing the general and particular requirements
for the IEC 60335 series of standards.
An appliance that complies with the text of this standard will not necessarily be considered to
comply with the safety principles of the standard if, when examined and tested, it is found to
have other features that impair the level of safety covered by these requirements.
An appliance employing materials or having forms of construction differing from those detailed
in the requirements of this standard may be examined and tested according to the intent of the
requirements and, if found to be substantially equivalent, may be considered to comply with the
standard.
NOTE 3 Standards dealing with non-safety aspects of household appliances are:
– IEC standards published by TC 59 concerning methods for measuring performance;
– CISPR 11, CISPR 14-1 and relevant IEC 61000-3 series standards concerning electromagnetic emissions;
– CISPR 14-2 concerning electromagnetic immunity;
– IEC standards published by TC 111 concerning environmental matters.

HOUSEHOLD AND SIMILAR ELECTRICAL APPLIANCES –
SAFETY –
Part 2-48: Particular requirements for commercial
electric grillers and toasters

1 Scope
This clause of Part 1 is replaced by the following.
This part of IEC 60335 deals with the safety of electrically operated commercial grillers and
toasters , their rated voltage being not more than 250 V for single-phase appliances connected
between one phase and neutral, and 480 V for other appliances.
Rotary or continuous grillers or toasters and similar appliances intended for grilling by
radiant heat such as rotisseries, salamanders, etc., are within the scope of this standard.
These appliances are not intended for household and similar purposes. They are used for
commercial processing of food, also in areas open to the public, for example in kitchens of
restaurants, canteens, hospitals and in commercial enterprises such as bakeries and
butcheries. The electrical part of appliances making use of other forms of energy is also within
the scope of this standard.
As far as is practicable, this standard deals with the common hazards presented by these types
of appliances.
Attention is drawn to the fact that:
– for appliances intended to be used in vehicles or on board ships or aircraft, additional
requirements can be necessary;
– in many countries additional requirements are specified by the national health authorities,
the national authorities responsible for the protection of labour, the national water supply
authorities and similar authorities;
– for appliances intended to be used outdoors, additional requirements can be necessary.
This standard does not apply to:
– appliances designed exclusively for industrial purposes;
– appliances intended to be used in locations where special conditions prevail, such as the
presence of a corrosive or explosive atmosphere (dust, vapour or gas);
– appliances for continuous mass production of food;
– commercial electric griddles and griddle grills (IEC 60335-2-38);
– battery-operated appliances;
– grills, toasters and similar portable cooking appliances for household use covered by
IEC 60335-2-9 and used in the following environments by laymen;
• staff kitchen areas in shops, offices and other working environments;
• farm houses;
• hotels, motels and other residential type environments;
• bed and breakfast type environments.
