oSIST prEN IEC 60335-2-48:2026/oprAA:2026 is a CENELEC draft amendment to the European standard for the safety of commercial electric grillers and toasters. It applies to electrically operated appliances not intended for household use, including rotary or continuous grillers and other radiant-heat appliances such as rotisseries and salamanders. The amendment adds and modifies requirements for design, marking, instructions, testing, hygiene, ergonomics and power-driven moving parts for manufacturers, test labs and conformity teams.

What does oSIST prEN IEC 60335-2-48:2026/oprAA:2026 specify?

oSIST prEN IEC 60335-2-48:2026/oprAA:2026 specifies additional safety requirements for commercial electric grillers and toasters. It is a draft amendment to the Part 2 standard and is read together with prEN IEC 60335-2-48:2026 and prEN IEC 60335-2-48:2026/prA1:2026.

The scope covers appliances with a rated voltage of up to 250 V for single-phase appliances connected between one phase and neutral, and up to 480 V for other appliances. It also covers similar radiant-heat appliances used for grilling, and it is aimed at equipment used in places such as restaurants, canteens, hospitals, bakeries and butcheries.

A key exclusion added in the scope is gas, oil or solid fuel burning appliances. The document also treats appliances with radio function, remote communication and remote operation, and it uses the terms “radio appliance” and “appliance” with the meanings given in the text.

The amendment is organized as modifications to the Introduction and Clauses 1, 2, 3, 5, 7, 8, 11, 15, 18, 19, 20, 22, 25 and 29, followed by updated annexes and bibliography.

AnnexWhat it covers
ZANormative references to international publications and their European publications
ZEAdditional requirements for appliances with power driven moving parts
ZAAHygiene requirements

What are the key requirements of oSIST prEN IEC 60335-2-48:2026/oprAA:2026?

oSIST prEN IEC 60335-2-48:2026/oprAA:2026 focuses on safe use, clear instructions, mechanical hazards, hygiene and ergonomic layout. In practice, it tells manufacturers what to design, what to declare in the instructions, and which checks apply during conformity assessment.

Test conditions and operating assumptions

Clause 5.5 sets the basic test condition for many checks: the appliance is operated with no load, user controls are set to maximum, timers are made inoperative, and any doors, lids, reflectors or drip trays are positioned as instructed. If the appliance cannot run without a load, the user instructions are followed instead. Motors are tested in the intended manner under the most severe normal-use conditions. This matters because safety testing has to reflect the worst credible operating state, not a convenient one.

Marking and instructions

Clause 7 strengthens the instructions for appliances intended for use in the area open to the public and for other appliances. The instructions must address use by persons with reduced physical, sensory or mental capabilities, supervision of children from 8 years old, supervision to keep children and domestic animals away from the appliance, and checks that no domestic animals are inside the cavity before use. It also requires advice on maintenance, training where needed, safe adjustment and servicing, stability during use and dismantling, response to accidents or breakdowns, personal protective equipment for spreading hot food, slippery floors and the maximum weight of the empty appliance.

Clause 7.12.1 adds a repair rule and a height requirement for table-top appliances: they need a support so the working height is between 695 mm and 980 mm. For practical use, this ties the appliance to a usable working posture and reduces handling risk.

Access, heating and stability

Clauses 8 and 20 both add the same condition for test probe 18: it is not applicable unless the appliance is intended to be installed in an area open to the public. Clause 15 and Clause 20 also update wording on stability and mechanical hazards, so the instructions or appliance marking must carry the relevant information.

Clause 18 of Part 1 is not applicable here. That means the amendment removes the generic Part 1 endurance clause and relies on the specific provisions in this Part 2 and its annexes.

Construction, hygiene and ergonomics

Clause 22 adds several practical construction rules. Lids must have at least one handle. The fluid category depends on whether the appliance has a cleaning system: category 2 without one and category 3 with one. The new ergonomic requirements call for controls that are clearly visible, easy to identify, within easy reach and protected against accidental actuation if that could create a hazard.

Clause 22.Z.102 and Annex ZAA add hygiene requirements. Compliance is checked by inspection and by Annex ZAA. In practice, this means the appliance design and the cleaning instructions must support hygienic use, cleaning and maintenance.

Power-driven moving parts

Annex ZE adds specific requirements for appliances and machines with power-driven moving parts. It includes instructions on noise, with an A-weighted emission sound pressure level stated as 70 dB(A) or less, and a guard endurance test that operates the guard for 5 000 cycles at 5 cycles per minute. This is important for moving guards and similar parts that can wear during repeated use.

What terms does oSIST prEN IEC 60335-2-48:2026/oprAA:2026 define?

  • appliance - In this document, “appliance” is used with the same meaning as “equipment”, and where relevant it also includes “machine”.
  • radio appliance - In the scope, “radio appliance” is used with the same meaning as “radio equipment”.
  • installation wall - A fixed construction that contains supply facilities for wall-mounted appliances on one or both sides.
  • food area - The part of the appliance used for food handling and processing, shown in Annex ZAA.
  • splash area - The area around the food area that may be exposed to splashes and therefore needs cleanable surfaces.
  • non-food area - The part of the appliance outside the food area and splash area, where food contact is not intended.

Who uses oSIST prEN IEC 60335-2-48:2026/oprAA:2026?

oSIST prEN IEC 60335-2-48:2026/oprAA:2026 is used by manufacturers, design engineers, test laboratories, certification bodies, quality managers and buyers of commercial kitchen equipment. It is relevant when specifying, designing, testing or buying commercial grillers, toasters, rotisseries, salamanders and similar appliances.

It also matters to installers and service personnel because the instructions include support height, repair competence, safe adjustment, hygiene maintenance and user information. The intended application areas named in the scope are restaurants, canteens, hospitals, bakeries, butcheries and similar commercial enterprises.

What changed in oSIST prEN IEC 60335-2-48:2026/oprAA:2026 from the previous edition?

oSIST prEN IEC 60335-2-48:2026/oprAA:2026 is a draft amendment that modifies prEN IEC 60335-2-48:2026 and prEN IEC 60335-2-48:2026/prA1:2026. The foreword lists these significant technical changes:
