EN IEC 60335-2-13 is a CENELEC European Standard for the safety of electric deep fat fryers, frying pans, woks and similar appliances that use oil for cooking. It specifies particular safety requirements for household and similar use appliances with a rated voltage not above 250 V and a recommended maximum oil quantity not exceeding 5 l. The document is aimed at manufacturers, test laboratories, certification teams and buyers who need to check the design, marking and test methods for these appliances.

What does EN IEC 60335-2-13 specify?

EN IEC 60335-2-13 specifies safety requirements for electric cooking appliances that heat oil, including deep fat fryers, frying pans, woks and similar products for household and similar use. It supplements and modifies the general safety requirements of IEC 60335-1 for this appliance family.

The scope also covers appliances used by laymen in shops, light industry and on farms, as long as they are still intended for household and similar use. The document excludes commercial deep fat fryers, commercial multi-purpose cooking pans, appliances for special atmospheres such as corrosive or explosive dust, vapour or gas, and battery-operated appliances.

The structure follows the Part 1/Part 2 format used in the IEC 60335 series. It includes clauses on scope, references, terms, general conditions for tests, marking and instructions, heating, moisture resistance, abnormal operation, construction, components, cords, clearances and fire resistance, plus Annex B and a bibliography.

AnnexWhat it covers
Annex BBattery-operated appliances, separable batteries and detachable batteries for battery-operated appliances - not applicable to this part

What are the key requirements of EN IEC 60335-2-13?

EN IEC 60335-2-13 sets out how these appliances are to be marked, tested and constructed so that the main hazards from hot oil, hot surfaces, moisture and abnormal use are addressed. The most important requirements are spread across Clauses 5, 7, 11, 15, 19, 22, 24, 25, 29 and 30.

Scope and test conditions

Clause 1 limits the standard to oil-cooking appliances with rated voltage not above 250 V and a recommended maximum oil quantity not exceeding 5 l. Clause 5 adds specific test conditions: if the test in 15.101 is carried out, three additional samples are needed, and certain deep fat fryers can also be tested as frying pans when that is the more severe case. In practice, this means the appliance must be checked in the way that gives the least favourable safety result.

Marking and instructions

Clause 7 requires visible marking for hot surfaces when the appliance has external accessible surfaces covered by Table 101. Deep fat fryers must be marked with the maximum oil level, and with the minimum oil level unless they can also be used as frying pans. Where cleaning by immersion is allowed, the appliance must show the maximum immersion level and carry a do-not-immerse-beyond-this-level warning. The instructions must warn about hot surfaces, young children, correct cleaning, removal of the connector before cleaning when the appliance inlet is involved, and the fact that the appliance is not intended to be run by an external timer or separate remote-control system. This matters because safe use depends heavily on clear marking and user instructions.

Heating and surface temperature limits

Clause 11 includes a dedicated probe in Figure 101 for measuring external accessible surface temperatures and uses Table 101 for the permitted temperature rises of those surfaces. It also sets oil temperature limits for deep fat fryers and requires repeated testing after cooling to room temperature. In practice, the design must control heat so that users do not touch surfaces that become dangerously hot and so that oil temperatures stay within the specified limits during normal operation.

Moisture resistance

Clause 15.101 requires appliances intended for partial or complete immersion in water for cleaning to withstand immersion tests carried out on three additional appliances. The procedure includes operation at 1.15 times rated power input, immersion in saline water, drying, leakage current testing and electric strength testing, followed by inspection for liquid on insulation that could reduce clearances or creepage distances. This is important because cleaning is a realistic source of moisture ingress and insulation failure.

Abnormal operation

Clause 19 adds special tests for deep fat fryers with capillary thermal cut-outs and for appliances with detachable heating elements. Frying pans are tested without oil in the container, and deep fat fryers are filled according to the clause conditions. Temperature limits are set for oil and for the heated surface, and additional tests cover ruptured capillary tubes and unfavourable placement of detachable heating elements. These tests check what happens if a control or heating part fails in use.

Construction and components

Clause 22 covers handle strength on deep fat fryers, using a force related to the weight of the appliance filled to the maximum marked oil level. It also says thermal controls shall not be built into connectors complying with IEC 60320-3 standard sheets. Clause 24 requires that thermal cut-outs used for the abnormal-operation protection test shall not be self-resetting, and it gives special rules for appliance couplers that incorporate thermostats, thermal cut-outs or fuses. In practice, the construction has to stay safe when lifted, disconnected, or when protective parts are used in the supply connector.

Cords, insulation and fire resistance

Clause 25 requires rubber sheathed cords at least equivalent to ordinary polychloroprene sheathed cords code designation 60245 IEC 57. Clause 29 sets pollution degree 3 for the microenvironment unless the insulation is enclosed or otherwise protected. Clause 30 assigns different fire test subclauses to frying pans and deep fat fryers. These requirements matter because hot-oil appliances place extra stress on cables, insulation and fire resistance.

What terms does EN IEC 60335-2-13 define?

EN IEC 60335-2-13 defines a small set of key terms in Clause 3 and uses several important abbreviations and symbol references throughout the document.

  • Functional surface - a surface that is intentionally heated by an internal heat source and must be hot for the appliance to perform its intended function.
  • Deep fat fryer operating condition - the appliance is run with sunflower oil filled to the minimum oil level marked on the appliance.
  • Frying pan operating condition - the pan is run with frying oil to 10 mm above the highest point of the heated surface, then controlled to the specified temperature condition.
  • Wok operating condition - the wok is filled with frying oil to a depth of 10 mm and run in the same way as a frying pan.
  • IEC 60417-5041 - the symbol for caution, hot surface, used where external accessible surfaces can become hot.
  • IEC 60320-1 - the appliance coupler standard referenced for connectors used with thermostats, thermal cut-outs or fuses.
  • TC 61 - IEC technical committee 61, the committee named in the foreword as responsible for household and similar electrical appliances.

Who uses EN IEC 60335-2-13?

EN IEC 60335-2-13 is used by appliance manufacturers, safety engineers, test laboratories, conformity assessment bodies and quality managers working on deep fat fryers, frying pans, woks and related oil-cooking appliances. It is also relevant to buyers and product-specification teams who need to compare designs or confirm that a product family is intended for household and similar use.

In practice, users apply it when designing temperature control, marking, immersion protection, handles, cords, connectors and abnormal-operation protection. It is also used during type testing, product verification and technical file preparation.

What changed in EN IEC 60335-2-13 from the previous edition?

The document states that it supersedes EN 60335-2-13:2010, EN 60335-2-13:2010/A11:2012 and EN 60335-2-13:2010/A1:2019. It also states that the text is based on IEC 60335-2-13:2021 and that the edition is a technical revision.

The stated significant technical changes are:

  • alignment with IEC 60335-1:2020
  • conversion of some notes into normative text
  • exclusion of battery-operated appliances
  • an additional test to limit the temperature rise of external accessible surfaces, including marking of hot surfaces

Which standards are used with EN IEC 60335-2-13?

EN IEC 60335-2-13 is used with the latest edition of IEC 60335-1, which provides the general safety requirements that this part supplements and modifies. Clause 2 also replaces the Part 1 reference to IEC 60320-1:2021 and adds IEC 60584-1 for the thermocouple specification used in temperature measurements.

The bibliography also names IEC 60335-2-37 for commercial electric doughnut fryers and deep fat fryers, and IEC 60335-2-39 for commercial electric multi-purpose cooking pans. These references help readers separate the household-and-similar-use scope of this part from related commercial appliance standards.

What does the EN IEC 60335-2-13 document contain?

EN IEC 60335-2-13 contains the complete Part 2 requirements for this appliance family, including clause-by-clause modifications to Part 1, special marking rules, and the test methods for heating, immersion, abnormal operation and construction checks. It includes Table 101 for maximum temperature rises, Figure 101 for the surface-temperature probe, and Annex B on battery-operated appliances, which is not applicable here.

The document also gives the specific test set-ups used for oil temperature measurement, immersion resistance, capillary thermal cut-outs, detachable heating elements and handle strength. For engineers and test labs, these are the parts that turn the safety requirements into repeatable laboratory procedures.

INTRODUCTION
It has been assumed in the drafting of this International Standard that the execution of its
provisions is entrusted to appropriately qualified and experienced persons.
Guidance documents concerning the application of the safety requirements for appliances can
be accessed via TC 61 supporting documents on the IEC website
https://www.iec.ch/tc61/supportingdocuments
This information is given for the convenience of users of this International Standard and does
not constitute a replacement for the normative text in this standard.
This standard recognizes the internationally accepted level of protection against hazards such
as electrical, mechanical, thermal, fire and radiation of appliances when operated as in normal
use taking into account the manufacturer's instructions. It also covers abnormal situations that
can be expected in practice and takes into account the way in which electromagnetic
phenomena can affect the safe operation of appliances.
This standard takes into account the requirements of IEC 60364 as far as possible so that there
is compatibility with the wiring rules when the appliance is connected to the supply mains.
However, national wiring rules may differ.
