Foreword
ISO (the International Organization for Standardization) is a worldwide federation of national standards bodies
(ISO member bodies). The work of preparing International Standards is normally carried out through ISO
technical committees. Each member body interested in a subject for which a technical committee has been
established has the right to be represented on that committee. International organizations, governmental and
non-governmental, in liaison with ISO, also take part in the work. ISO collaborates closely with the
International Electrotechnical Commission (IEC) on all matters of electrotechnical standardization.
International Standards are drafted in accordance with the rules given in the ISO/IEC Directives, Part 2.
The main task of technical committees is to prepare International Standards. Draft International Standards
adopted by the technical committees are circulated to the member bodies for voting. Publication as an
International Standard requires approval by at least 75 % of the member bodies casting a vote.
Attention is drawn to the possibility that some of the elements of this document may be the subject of patent

Foreword
ISO (the International Organization for Standardization) is a worldwide federation of national standards bodies
(ISO member bodies). The work of preparing International Standards is normally carried out through ISO
technical committees. Each member body interested in a subject for which a technical committee has been
established has the right to be represented on that committee. International organizations, governmental and
non-governmental, in liaison with ISO, also take part in the work. ISO collaborates closely with the
International Electrotechnical Commission (IEC) on all matters of electrotechnical standardization.
International Standards are drafted in accordance with the rules given in the ISO/IEC Directives, Part 2.

NACIONALNI UVOD

Standard SIST ISO 3509 (sl), Kava in proizvodi iz kave – Slovar, 2011, ima status slovenskega
standarda in je istoveten mednarodnemu standardu ISO 3509 (en), Coffee and coffee products –
Vocabulary, 2005.

Ta standard nadomešča SIST ISO 3509:1995.

NACIONALNI PREDGOVOR

Mednarodni standard ISO 3509:2011 je pripravil tehnični odbor ISO/TC 34 Živila. Slovenski standard
SIST ISO 3509:2011 je prevod mednarodnega standarda ISO 3509:2005. V primeru spora glede
besedila slovenskega prevoda v tem standardu je odločilen izvirni mednarodni standard v angleškem
jeziku. Slovenski prevod SIST ISO 3509:2011 je pripravil tehnični odbor SIST TC/KŽP Kmetijski
pridelki in živilski proizvodi.

Odločitev za izdajo tega standarda je 1. februarja 2011 sprejel SIST/TC KŽP Kmetijski pridelki in
živilski proizvodi.

Predgovor
ISO (Mednarodna organizacija za standardizacijo) je svetovna zveza nacionalnih organov za
standarde (članov ISO). Mednarodne standarde ponavadi pripravljajo tehnični odbori ISO. Vsak član,
ki želi sodelovati na določenem področju, za katero je bil ustanovljen tehnični odbor, ima pravico biti
zastopan v tem odboru. Pri delu sodelujejo tudi mednarodne vladne in nevladne organizacije,
povezane z ISO. V vseh zadevah, ki so povezane s standardizacijo na področju elektrotehnike, ISO
tesno sodeluje z Mednarodno elektrotehniško komisijo (IEC).
Mednarodni standardi so pripravljeni v skladu s pravili, podanimi v 2. delu Direktiv ISO/IEC.
Glavna naloga tehničnih odborov je priprava mednarodnih standardov. Osnutki mednarodnih
standardov, ki jih sprejmejo tehnični odbori, se pošljejo vsem članom v glasovanje. Za objavo
mednarodnega standarda je treba pridobiti soglasje najmanj 75 odstotkov članov, ki se udeležijo
glasovanja.
Opozoriti je treba na možnost, da je lahko nekaj elementov tega dokumenta predmet patentnih pravic.
ISO ne prevzema odgovornost za identifikacijo katerih koli ali vseh takih patentnih pravic.
ISO 3509 je pripravil tehnični odbor ISO/TC 43 Živila, pododbor SC 15 Kava.
Ta četrta izdaja razveljavlja in nadomešča tretjo izdajo (ISO 3509:1989), ki je bila tehnično revidirana.

Področje uporabe
Ta mednarodni standard definira splošno uveljavljene izraze v zvezi s kavo in s proizvodi iz kave.
1 Splošni izrazi za kavo

plodovi in semena rastlin iz rodu Coffea, večinoma gojenih vrst, ter tudi proizvodi iz teh plodov in semen na
različnih stopnjah predelave in uporabe, ki so namenjeni za široko porabo
OPOMBA: Ta izraz se uporablja za proizvode, kot so kavini plodovi, suhi kavini plodovi, kava v pergamentni luskini, surova
kava, polirana kava, dekofeinizirana kava, pražena kava v zrnju ali mleta, kavin ekstrakt, instant kava in kavin
napitek.

homogen lot kavnih semen, razen petih kategorij primesi, definiranih kot »napake«, ki so:
– tuje primesi, ki ne izvirajo iz kavinega ploda,
– tuje primesi, ki ne izvirajo iz kavinega zrna,

– kava z napako v okusu
OPOMBA 1: Ta definicija za izraz kava je bila razvita s končnim ciljem pridobiti tako skodelico kave, da bo z njo potrošnik
zadovoljen in bo v skladu z dobro trgovsko prakso.
OPOMBA 2: ISO 10470 podaja podroben opis napak, prisotnih v surovi kavi.

– Typica: kava botanične vrste Coffea arabica L., selekcionirane sorte v Indoneziji in večinoma gojene sorte v
Srednji in Južni Ameriki (poimenovana tudi Arabica (Brazilija), Blue Mountain (Jamajka));
– Mundo Novo: kava botanične vrste Coffea arabica L., pridobljena s križanjem med sortama Bourbon in
Typica;
– Mokka: kava botanične vrste Coffea arabica L., ki se ne goji več;
– Caturra: kava botanične vrste Coffea arabica L. iz sorte Bourbon, pridobljena z mutagenezo;
– Timor Hybrid: kava botanične vrste Coffea arabica L., pridobljena z naravno interspecifično hibridizacijo
med C. canephora in C. arabica, najdena v Vzhodnem Timorju;
– Catimor: kava botanične vrste Coffea arabica L., pridobljena s križanjem med sortama Caturra in Timor
Hybrid;
– Catuai: kava botanične vrste Coffea arabica L., pridobljena s križanjem med Mundo Novo in Cattura,
selekcionirana v Braziliji;
– Icatu: kava botanične vrste Coffea arabica L., pridobljena s hibridizacijo med C. canephora in povratnim
križanjem v C. arabica;
– Colombia: kava botanične vrste Coffea arabica L., sorta Catimor, selekcionirana v Kolumbiji;
– CR95: kava botanične vrste Coffea arabica L., sorta Catimor, selekcionirana v Kostariki;
– Ruiru II: kava botanične vrste Coffea arabica L., pridobljena s križanjem med C. arabica in Catimor (kava,
odporna proti bolezni kavinih češenj).

postopek obdelave, ki sestoji iz mehanskega odstranjevanja eksokarpa (pulpa) s pomočjo vode,
kateremu sledi:
– odstranjevanje pulpe (mezokarp) s fermentacijo ali drugimi postopki, katerim sledi pranje, da se
dobi kava v pergamentni luskini, ali
– neposredno sušenje zrn, ki so prešla postopek pulpiranja ter imajo pulpo in pergamentno luskino,
kateremu sledi odstranjevanje pergamentne luskine, da se dobi »polprana« surova kava

OPOMBA: Odstranjevanju pulpe ponavadi sledita sušenje in odstranjevanje pergamentne luskine, da se dobi "prana"
surova kava (glej 2.6).

pulpiranje
tehnološki postopek, uporabljen pri mokrem postopku za odstranitev pulpe (eksokarp) in čim več
mezokarpa z mehanskim postopkom

OPOMBA: Del lepljivega mezokarpa navadno ostane prilepljen na pergamentno luskino (endokarp).

7.3.2
fermentacija
postopek, med katerim razpade lepljivi mezokarp, prilepljen na pergamentno luskino pulpirane kave,
da ga je nato mogoče odstraniti s pranjem

OPOMBA: Postopek fermentacije je lahko nadomeščen z mehanskim postopkom odstranitve mezokarpa s trenjem.

tehnološki postopek, pri katerem se z vodo odstrani ves lepljivi mezokarp s površine pergamentne
luskine

sušenje kave v pergamentni luskini
tehnološki postopek, s katerim se zmanjša vsebnost vode v kavi v pergamentni luskini do take mere,
da se dosežejo zadovoljivi pogoji za odstranjevanje pergamentne luskine in preprečijo škodljivi vplivi
med nadaljnjim skladiščenjem kave
