Food processing machinery - Automatic back splitting machines of butchery carcasses - Safety and hygiene requirements
This European standard applies to automatic back splitting machines and specifies safety and health requirements for machines used in slaughterhouses in order to fully automatically split meat animal (beef and pork) along the back-bone axis, splitting the carcass into two parts (see Figure 1).
This document deals with all significant hazards, hazardous situations and events relevant to automatic back splitting machines, when they are used as intended and under conditions of misuse which are reasonably foreseeable by the manufacturer (see Clause 4).
This document deals with the significant hazards, hazardous situations and events during transport, assembly and installation, commissioning and use as defined in EN ISO 12100-1, Clause 5.3.
This document is not applicable to automatic back splitting machines, which are manufactured before the date of its publication as EN.
The machines concerned by this standard are those used in slaughterhouses. They are fitted with a cutting device and are driven by electric, hydraulic and/or pneumatic energy.
The utilized cutting tools are:
- circular saws,
- splitting tools.
Three types of machines are considered (see Figures 1 to 5):
- Splitting machines for pork carcasses, type A (splitter),
- Splitting machines for pork carcasses, type B (circular saw),
- Splitting machines for beef carcasses, type C (circular saw).
There are two different operation cycles:
- carcasses can be splitted when they are at standstill.(In general they are hanging on a sequence conveyed transport system.);
- carcasses can also be splitted during their continuous movement by conveyor. In this case the movement of the tool is synchronized with that of the carcass.
When the split is finished, the cutting tool returns automatically to its initial position.
The machines run automatically. Under normal operating conditions there is no manual intervention.
Nahrungsmittelmaschinen - Automatische Rückenspaltmaschinen für Schlachttierkörper - Sicherheits- und Hygieneanforderungen
1.1 Allgemeines
- Kreissägen;
- Spalter.
Drei Maschinentypen müssen betrachtet werden (siehe Bild 1 bis 11):
- Maschinen zum Spalten von Schweinekörpern, Typ A (Spalter);
- Maschinen zum Spalten von Schweinekörpern, Typ B (Kreissäge);
- Maschinen zum Spalten von Rinderkörpern, Typ C (Kreissäge).
Es werden zwei Funktionsabläufe unterschieden:
- Die Tierkörper können in Ruhestellung gespaltet werden. (Im Allgemeinen hängen sie an einem takt-geförderten Transportsystem);
- Die Tierkörper können auch gespalten werden, während sie kontinuierlich mit einem Förderer bewegt werden; in diesem Falle bewegt sich das Spaltwerkzeug synchron mit dem Tierkörper.

Overview - EN 15166:2008 (Food processing machinery)
EN 15166:2008 is a CEN European standard specifying safety and hygiene requirements for automatic back splitting machines used in slaughterhouses to split pork and beef carcasses along the backbone. It covers machines driven by electric, hydraulic and/or pneumatic power and using circular saws or splitting tools. The standard addresses the full machine lifecycle phases defined in EN ISO 12100-1 (transport, assembly, installation, commissioning and use) and applies to machines manufactured after its publication date.
Key topics and technical requirements
- Scope and machine types: three machine types are defined - pork splitter (type A), pork circular saw (type B) and beef circular saw (type C). Operation modes include splitting at standstill or during continuous conveyor movement with tool synchronization.
- Hazard identification: mechanical hazards (cutting, ejection, moving parts), electrical and control-system hazards, hydraulic/pneumatic risks, loss of stability, noise, ergonomic and hygiene-related hazards (microbial, chemical, physical).
- Zoned protection approach:
- Zone 1 - Effective range of the splitting tool (primary cutting risk)
- Zone 2 - Driving and guiding mechanisms
- Zone 3 - Ejection zone for tools or bone particles The standard specifies protective measures, guards, interlocking devices and safe tool containment for each zone.
- Control and electrical safety: requirements for stopping functions, emergency stop devices, IP ratings for water ingress, safety-related parts of control systems and electromagnetic considerations.
- Hygiene and cleanability: materials, surface finishes, food/splash/non-food area design principles, and cleaning requirements (see Annex B for cleanability design principles).
- Noise: measurement and declaration procedure (Annex A) and noise mitigation requirements.
- Verification and documentation: testing methods, verification of safety/hygiene measures, operator instructions, marking and training requirements.

EN 15166:2008 is a European standard that applies to automatic back splitting machines used in slaughterhouses. The standard specifies safety and health requirements for these machines, which are used to split meat animal carcasses along the back-bone axis. The standard covers significant hazards and hazardous situations related to the transport, assembly, installation, commissioning, and use of these machines. It does not apply to machines manufactured before its publication as EN. The machines considered under this standard are fitted with cutting devices and driven by electric, hydraulic, or pneumatic energy. The cutting tools used are circular saws and splitting tools. There are three types of machines for different carcasses - type A for pig carcasses (splitter), type B for pig carcasses (circular saw), and type C for beef carcasses (circular saw). The machines can split carcasses when they are at standstill or during continuous movement on a conveyor, with the movement of the tool synchronized with that of the carcass. The machines operate automatically, without manual intervention under normal operating conditions.
