Food processing machinery - Intermediate provers - Safety and hygiene requirements

This standard specifies safety and hygiene requirements for the design and manufacture of intermediate provers with moving pocket carriers !as described in Clause 3" used in the food industry, pastry-making, bakeries, etc. for giving a resting time to dough between dividing and moulding processes.
!This European Standard specifies all significant hazards, hazardous situations and events relevant to the installation, adjustment, operation, cleaning, maintenance, dismantling, disabling and scrapping of intermediate provers with moving pocket carriers when they are used as intended and under conditions of misuse which are reasonably foreseeable by the manufacturer (see Clause 4)."
The significant hazards covered by the standard are mechanical (shearing, trapping, cutting, loss of stability), electrical, ergonomic and also those resulting from inhalation of flour dust and lack of hygiene.
Noise is not considered to be a significant hazard from intermediate provers. This does not mean that the manufacturer of the machine is absolved from reducing noise and making a noise declaration. Therefore a noise test code is proposed in Annex B.

-   rack provers;
-   experimental and testing machines under development by the manufacturer.

Diese Norm legt die Sicherheits- und Hygieneforderungen an die Gestaltung und den Bau von Bärunterbrechern mit sich bewegenden Taschenträgern fest, die in der Nahrungsmittelindustrie, in Bäckereien, Konditoreien etc. zum Einsatz kommen, um dem Teig eine Ruhezeit zwischen den Teil- und Formvorgängen zu geben. Diese Norm umfaßt die in Abschnitt 3.12 von EN 292-1 und in der Betriebsanleitung des Herstellers definierten technischen Sicherheitsanforderungen für die Installation, das Einrichten, die Bedienung, Reinigung und Wartung dieser Maschinen.

Machines pour les produits alimentaires - Chambres de repos -Prescriptions relatives à la sécurité et à l'hygiène

La présente norme spécifie les prescriptions de sécurité et d'hygiène relatives à la conception et à la fabrication des chambres de repos à balancelles mobiles utilisées dans les industries alimentaires, boulangeries, pâtisseries, etc. afin de donner à la pâte un temps de détente entre la division et le façonnage. La norme couvre les prescriptions techniques de sécurité relatives à l'installation, au réglage, au fonctionnement, au nettoyage et à la maintenance de ces machines telles que les définissent le paragraphe 3.12 de la norme EN 292-1 et la notice d'instructions du constructeur.

Stroji za predelavo hrane - Komore za vmesno počivanje testa - Varnostne in higienske zahteve (vključno z dopolnilom A1)

Ta standard določa varnostne in higienske zahteve za načrtovanje in proizvodnjo komor za vmesno počivanje testa s premikajočimi se nosilci s košaricami, kot opisano v klavzuli 3, ki se uporabljajo v prehrambeni industriji, pri izdelavi peciva, v pekarnah itd., ter zagotavljajo počivanje testa med postopkom deljenja in gnetenja. Ta evropski standard določa vse velike nevarnosti, nevarne situacije in dogodke, pomembne za postavitev, prilagoditev, delovanje, čiščenje, vzdrževanje, razstavljanje, izklapljanje in uničenje komor za vmesno počivanje testa s premikajočimi se nosilci kotlov, kadar se uporabljajo, kot je predvideno in pod pogoji napačne uporabe, ki jih razumno predvidi proizvajalec. Velike nevarnosti, zajete s tem standardom, so mehanske (striženje, priščipnjenje, rezanje in izguba stabilnosti), električne, ergonomske in prav tako tiste, ki so posledica vdihavanja prahu moke in pomanjkanja higiene. Hrup ne šteje kot velika nevarnost iz komor za vmesno počivanje testa. To ne pomeni, da je proizvajalec stroja oproščen zmanjševanja hrupa in priprave označbe hrupa. Zato je preskusna koda hrupa predlagana v Dodatku B. Izvzeti so naslednji stroji: - komore za počivanje testa s košaricami in preskusni stroji, ki jih razvija proizvajalec. Ta standard ne velja za komore za vmesno počivanje testa s premikajočimi se nosilci s košaricami, ki so izdelane pred datumom njegove objave v obliki EN.
