(Amendment)Safety of household and similar electrical appliances - Part 2-64: Particular requirements for commercial electric kitchen machines
- Abstract
This standard deals with the safety of electrically operated commercial kitchen machines, their rated voltage being not more than 250 V for single phase appliances connected between one phase and neutral, and 480 V for other appliances including direct current (DC) supplied appliances and battery operated appliances. These appliances are not intended for household and similar purposes. They are used for commercial processing of food in areas not open to the public, for example in kitchens of restaurants, canteens, hospitals and in commercial enterprises such as bakeries and butcheries.

oSIST prEN IEC 60335-2-64:2026/oprAA:2026 is the SIST draft amendment corresponding to prEN IEC 60335-2-64:2026/prAA:2026. It updates the safety standard for electrically operated commercial kitchen machines used for food processing in non-public commercial areas, such as restaurant kitchens, canteens, hospitals, bakeries and butcheries. For engineers, quality managers and buyers, it shows the added marking, instructions, heating, stability, construction and hazard-control requirements that apply to these machines.
What does oSIST prEN IEC 60335-2-64:2026/oprAA:2026 specify?
oSIST prEN IEC 60335-2-64:2026/oprAA:2026 specifies draft European amendments to the safety requirements for commercial electric kitchen machines. It is an amendment to prEN IEC 60335-2-64:2026 and is read together with prEN IEC 60335-2-64:2026/prA1:2026 and Part 1.
The document applies to electrically operated commercial kitchen machines within the voltage limits stated in the scope. It is written for commercial food processing equipment used in areas not open to the public, so the reader should treat it as a machine-safety document for professional food-service and food-processing environments.
The amendment is organized as changes to the Introduction and Clauses 1, 2, 3, 7, 11, 19, 20, 21, 22, 25 and 29, plus annex changes. European additions to IEC text are marked with the prefix “Z”, which helps readers separate the European modifications from the base standard.
| Annex | What it covers |
|---|---|
| Annex ZA | Normative references to international publications with corresponding European publications |
| Annex ZE | Specific additional requirements for appliances with power driven moving parts |
| Annex ZAA | Food processing machinery standards used for stability, mechanical hazards, hygiene and acoustical noise |
| Annex ZZB | Relationship with Regulation (EU) 2023/1230 |
| Annex ZZC | Relationship with Directive 2014/53/EU |
What are the key requirements of oSIST prEN IEC 60335-2-64:2026/oprAA:2026?
The amendment focuses on safer use, clearer information, and better control of mechanical, thermal and operational hazards. In practice, it tightens what manufacturers must state, how appliances must behave under fault and interruption conditions, and how safety is checked.
Scope and hazard coverage
Clause 1 broadens the scope to include hygiene and acoustical noise, and it frames the hazards as reasonably foreseeable risks for all persons in and around the installation place or workplace. That matters because the standard is not only about the operator at the machine - it also addresses people nearby.
Clause 1 also adds exclusions for certain machines, including those that generate pressure above the stated limit, kitchen machines designed for induction heating, machinery for heating up solids, and machinery for processing cosmetics, chemicals and pharmaceutical products. This tells the reader when this Part 2-64 amendment is the wrong standard to use.
Marking and instructions
Clause 7 strengthens marking and instruction content. The appliance marking must identify the manufacturer, the model or type, the serial number if any, the production year, and the designation of the appliance.
The instructions must support safe use and include the substance of warnings for persons with reduced physical, sensory or mental capabilities unless supervised or instructed by a responsible person. They must also explain symbols used on the product, give precautions for installation, operation, cleaning and repair, and include warnings about slippery floors, foreseeable misuse, maintenance intervals and maximum empty weight.
Clause 7 also adds practical information for stability, transport, assembly, dismantling, servicing and accidents. For many users, this is the part that affects manuals, operator training and service procedures.
Heating and surface temperature rise
Clause 11 changes the heating test approach so temperature rises are monitored continuously and compared with the applicable limits. The amendment adds Table Z101, which sets limits for exposed surfaces by material and states where measurements are not taken.
For a user or test lab, this means the thermal design must be checked on the surfaces that people can touch in real use, and the test method must follow the amended measurement rules. The clause also allows the power input of appliances with more than one heating unit to be determined separately for each unit.
Abnormal operation and restart behaviour
Clause 19 tightens abnormal-operation checks on the heating contactor and on voltage fluctuation behaviour. The appliance must not create a hazard when supply conditions change, and it must either continue from the same operating point safely or require a manual restart.
This is important for commercial kitchens where interruptions or supply dips can happen during service. The appliance must not resume in a way that unexpectedly starts a dangerous function.
Stability, mechanical hazards and guards
Clause 20 links stability and mechanical hazards to the standards listed in Annex ZAA. If an appliance is not listed there, the text of Clause 20 of IEC 60335-2-64 applies together with a risk assessment for mechanical hazards.
Clause 22 adds construction rules for incorrect mounting, lifting arrangements, safe movement, fixed guards, movable guards, guard locking and energy isolation. In practice, this affects how the machine is assembled, cleaned, maintained and protected from access to dangerous moving parts.
Serviceability and safe isolation
Clause 7 and Clause 22 require repair and service information, including disconnection from the power source during service and part replacement. Where a plug is removed, the document requires a clear way for the operator to verify that it remains removed, or another locking isolation method.
That matters for maintenance teams because the standard expects a controlled isolation method, not just an assumption that a plug has been pulled.
What terms does oSIST prEN IEC 60335-2-64:2026/oprAA:2026 define?
Guard - a part of the appliance designed to protect by creating a physical barrier.
Operator - a person who installs, operates, adjusts, maintains, cleans, repairs or moves the appliance.
Workstation - the place where the operator attends the appliance to operate, adjust or control it.
Appliance - in this scope, the term is used with the same meaning as equipment, and it also includes machine where applicable.
Radio appliance - in this scope, the term has the same meaning as radio equipment.
Who uses oSIST prEN IEC 60335-2-64:2026/oprAA:2026?
This amendment is used by manufacturers of commercial electric kitchen machines, their design and safety engineers, and conformity assessment teams. It is also relevant to test laboratories, quality managers, importers, and buyers who specify safety, marking and instruction content for commercial kitchen equipment.
The likely end-use environments are kitchens and food-processing workplaces in restaurants, canteens, hospitals, bakeries and butcheries. Service personnel and maintenance contractors also use it because the document sets expectations for servicing, isolation, repairs, guards and safe handling.
What changed in oSIST prEN IEC 60335-2-64:2026/oprAA:2026 from the previous edition?
The foreword says this amendment introduces requirements and instructions for children, vulnerable people and domestic animals, requirements for power driven moving parts, mechanical test set-up clarifications, hygienic requirements and ergonomic requirements. It also modifies the Introduction and Clauses 1, 2, 3, 7, 11, 19, 20, 21, 22, 25 and 29, and updates the annexes.
