Sensory analysis - Vocabulary (ISO 5492:2008)

ISO 5492:2008 defines terms relating to sensory analysis.
ISO 5492:2008 applies to all industries concerned with the evaluation of products by the sense organs.
The terms are given under the following headings: 1) general terminology; 2) terminology relating to the senses; 3) terminology relating to organoleptic attributes; and 4) terminology relating to methods.
In addition to terms used in the three official ISO languages (English, French and Russian), this document gives the equivalent terms in German and Spanish; these are published under the responsibilities of the member bodies for Germany (DIN) and for Argentina (IRAM), respectively, and are given for information only. Only the terms and definitions given in the official languages can be considered as ISO terms and definitions.

L'ISO 5492:2008 définit les termes relatifs à l'analyse sensorielle. Elle s'applique à toutes les industries concernées par l'évaluation des produits par les organes des sens.
Les termes sont répartis selon les rubriques suivantes: 1) terminologie générale; 2) terminologie relative à la physiologie; 3) terminologie relative aux propriétés organoleptiques; 4) terminologie relative aux méthodes.
En complément des termes utilisés dans les trois langues officielles de l'ISO (anglais, français et russe), le présent document donne les termes équivalents en allemand et en espagnol; ces termes sont publiés sous la responsabilité des comités membres allemand (DIN) et argentin (IRAM) respectivement, et sont donnés uniquement pour information. Seuls les termes et définitions dans les langues officielles peuvent être considérés comme étant des termes et définitions de l'ISO.

Ta mednarodni standard določa izraze v povezavi s senzorično analizo. Uporablja se v vseh panogah, ki se ukvarjajo z oceno proizvodov s čutili. Terminologija je podana pod naslednjimi naslovi: 1) splošna terminologija; 2) terminologija, ki se nanaša na čutila; 3) terminologija, ki se nanaša na organoleptične lastnosti; 4) terminologija, ki se nanaša na metode.

The text of ISO 5492:2008 has been prepared by Technical Committee ISO/TC 34 “Food products” of the
International Organization for Standardization (ISO) and has been taken over as EN ISO 5492:2009 by
Technical Committee CEN/SS C01 “Food Products” the secretariat of which is held by CMC.
This European Standard shall be given the status of a national standard, either by publication of an identical
text or by endorsement, at the latest by January 2010, and conflicting national standards shall be withdrawn at
the latest by January 2010.
Attention is drawn to the possibility that some of the elements of this document may be the subject of patent
rights. CEN [and/or CENELEC] shall not be held responsible for identifying any or all such patent rights.
According to the CEN/CENELEC Internal Regulations, the national standards organizations of the following
