Household and similar electrical appliances - Safety - Part 2-58: Particular requirements for commercial electric dishwashing machines

IEC 60335-2-58:2017 is available as IEC 60335-2-58:2017 RLV which contains the International Standard and its Redline version, showing all changes of the technical content compared to the previous edition.
IEC 60335-2-58:2017 deals with the safety of electrically operated dishwashing machines for washing plates, dishes, glassware, cutlery and similar articles, with or without means for water heating or drying, not intended for household use, their rated voltage being not more than 250 V for single-phase appliances connected between one phase and neutral and 480 V for other appliances.
These appliances are used for example in restaurants, canteens, hospitals, and commercial enterprises such as bakeries, butcheries, etc.
Examples of such appliances are
- conveyor dishwashers;
- batch dishwashers;
- brush machines.
Requirements to avoid backsiphonage of non-potable water into the water mains are specified in Annex BB.
The electrical part of appliances making use of other forms of energy is also within the scope of this standard.
As far as is practicable, this standard deals with the common hazards presented by these types of appliances.
Attention is drawn to the fact that:
- for appliances intended to be used in vehicles or on board ships or aircraft, additional requirements may be necessary;
- in many countries, additional requirements are specified by the national health authorities, the national authorities responsible for the protection of labour, the national water supply authorities and similar authorities;
- in many countries, additional requirements are specified for pressure appliances.
This standard does not apply to:
- appliances designed exclusively for industrial purposes, for example machines used in the food industry for cleaning receptacles that serve as packaging for final products (e.g. bottle-cleaning machines), and machines used in manufacturing processes;
- sterilizers and washer-disinfectors used to treat medical materials (IEC 61010-2-040);
- dishwashers that do not form one functional unit, for example where a trans¬portation device transfers the load from one separate unit to another;
- separately driven transport devices not confined in the appliance;
- appliances intended to be used in locations where special conditions prevail, such as the presence of a corrosive or explosive atmosphere (dust, vapour or gas).
This fourth edition cancels and replaces the third edition published in 2002 including its Amendment 1 (2008) and its Amendment 2 (2015). This edition constitutes a technical revision.
This edition includes the following significant technical changes with respect to the previous edition:
- The text has been aligned with Edition 5.2 of Part 1;
- Requirements and tests for vertical-lift doors with and without a counterbalance system are clarified (20.103, 20.104);
- Some notes have been converted to normative text or deleted (7.15, 9, 10.1, 11.7, 15.3, 19.4, 20.1, 20.102, 22.106, 22.107, 23.3).
This part 2 is to be used in conjunction with the latest edition of IEC 60335-1 and its amendments. It was established on the basis of the fifth edition (2010) of that standard.
This part 2 supplements or modifies the corresponding clauses in IEC 60335-1, so as to convert that publication into the IEC standard: Safety requirements for commercial electric dishwashing machines.
When a particular subclause of Part 1 is not mentioned in this part 2, that subclause applies as far as is reasonable. When this standard states "addition", "modification" or "replacement", the relevant text in Part 1 is to be adapted accordingly.

L'IEC 60335-2-58:2017 traite de la sécurité des lave-vaisselle électriques destinés à laver les assiettes, plats, verres, couverts et articles similaires, avec ou sans dispositif de chauffage de l’eau ou de séchage, et qui ne sont pas destinés à un usage domestique, dont la tension assignée ne dépasse pas 250 V pour les appareils monophasés alimentés entre phase et neutre, et 480 V pour les autres appareils.
Ces appareils sont utilisés par exemple dans les restaurants, les cantines, les hôpitaux et les entreprises artisanales, telles que les boulangeries, les boucheries, etc.
À titre d’exemple, il est possible de citer:
- les lave-vaisselle à convoyeur;
- les lave-vaisselle à panier fixe;
- les machines à brosses.
Les exigences pour éviter le retour d’eau non potable par siphonnage dans le réseau de distribution d'eau sont spécifiées à l’Annexe BB.
La partie électrique des appareils utilisant d’autres formes d’énergie entre également dans le domaine d’application de la présente norme.
Dans la mesure du possible, la présente norme traite des risques ordinaires présentés par ces types d'appareils.
L’attention est attirée sur le fait que:
- pour les appareils destinés à être utilisés dans des véhicules ou à bord de navires ou d'avions, des exigences supplémentaires peuvent être nécessaires;
- dans de nombreux pays, des exigences supplémentaires sont spécifiées par les organismes nationaux de la santé, par les organismes nationaux responsables de la protection des travailleurs, par les organismes nationaux responsables de l'alimentation en eau et par des organismes similaires;

La présente norme ne s’applique pas:
- aux appareils conçus exclusivement pour des usages industriels, par exemple les machines utilisées dans l’industrie alimentaire pour le nettoyage des récipients servant à l’emballage des produits finis (par exemple, les machines à nettoyer les bouteilles), et les machines utilisées dans les processus de fabrication;
- aux stérilisateurs et laveurs désinfecteurs utilisés pour traiter le matériel médical (IEC 61010-2-040);
- aux lave-vaisselle qui ne forment pas une seule unité fonctionnelle, par exemple lorsqu'un dispositif de transport transfère la charge d'une unité à une autre;
- aux dispositifs de transport actionnés séparément non contenus dans l’appareil;

Part 2-58: Particular requirements for commercial

FOREWORD
1) The International Electrotechnical Commission (IEC) is a worldwide organization for standardization comprising
all national electrotechnical committees (IEC National Committees). The object of IEC is to promote
international co-operation on all questions concerning standardization in the electrical and electronic fields. To
this end and in addition to other activities, IEC publishes International Standards, Technical Specifications,
Technical Reports, Publicly Available Specifications (PAS) and Guides (hereafter referred to as “IEC
Publication(s)”). Their preparation is entrusted to technical committees; any IEC National Committee interested
in the subject dealt with may participate in this preparatory work. International, governmental and non-
governmental organizations liaising with the IEC also participate in this preparation. IEC collaborates closely
with the International Organization for Standardization (ISO) in accordance with conditions determined by
agreement between the two organizations.
2) The formal decisions or agreements of IEC on technical matters express, as nearly as possible, an international
consensus of opinion on the relevant subjects since each technical committee has representation from all
interested IEC National Committees.
3) IEC Publications have the form of recommendations for international use and are accepted by IEC National
Committees in that sense. While all reasonable efforts are made to ensure that the technical content of IEC
Publications is accurate, IEC cannot be held responsible for the way in which they are used or for any
misinterpretation by any end user.
4) In order to promote international uniformity, IEC National Committees undertake to apply IEC Publications
transparently to the maximum extent possible in their national and regional publications. Any divergence
between any IEC Publication and the corresponding national or regional publication shall be clearly indicated in
the latter.
5) IEC itself does not provide any attestation of conformity. Independent certification bodies provide conformity
